How to Cook Turnip and Mustard Greens Seasoned with Smoked Turkey Tails!

  • Hey Guys! Welcome back to my channel. In todays video I’m going to show you how to cook Turnip and Mustard Greens Seasoned with Smoked Turkey Tails.
    I grew up eating these two greens cooked together by my Mother. Everyone else always seemed to either have one or the other but not mixed together. The Mustard Greens are milder and it cuts some of the strong taste from the Turnip Greens. If you can find both of them when the leaves are tender you are in for a real treat. My Mother used to cook her greens with some type of ham or pork to flavor them. I used to love to cook mine with country ham until I discovered Smoked Turkey Tails. Wow is really all I can say about this smoked meat. They are so meaty and smoky and that’s really what I’m looking for when I use country ham or ham hocks to season my greens, flavor.
    I have found that while cooking my smoked meats in the crockpot is very convenient I prefer using the stovetop to cook these. They aren’t over cooked and all of the flavor remains in the meat.
    When you are trying to eat healthier eliminating pork helps especially if you have high blood pressure.
    Using this smoked meat as a replacement for the pork will truly surprise you when you try it for the first time. After that you won’t want them any other way.

    Turnip and Mustard Greens Seasoned with Smoked Turkey Tails:
    2 Packages Smoked Turkey Tails
    2, 32 Ounce Boxes of Chicken Broth
    6 Bunches Tender Turnip Greens
    4 Bunches Tender Mustard Greens
    Enough Water to Cover Meat
    2 Tablespoon Dried Minced Onion
    2 Tablespoons Avocado Oil or EVOO
    1 Teaspoon Granulated Garlic
    1 Teaspoon Granulated Onion
    1 Teaspoon Garlic Salt
    1 Teaspoon Sazon Seasoning
    1 Teaspoon Slap Ya Mama Seasoning
    1/2 Teaspoon Black Pepper

    Ms. Jackie, I pick through every leaf to look for bugs and hole in the leafs. I’ve found that greens especially turnips and mustards have insects on the leaves. I also sprinkle some baking soda and salt on them when washing. 🤷🏾‍♂️

    You cooked my favorite two greens! I sometimes also use turkey tails! I’ve learned to cleaned the tails by watching for long feathers in the tails!

    I wash my green-using vinegar cook them with a little olive oil drain excess water off season them with sautéed onions sweet onions at the end after they’re finished.😊

    This recipe produced fantastic Turnips and Greens. Thanks so much... The only substitution I had to make was smoked pig tails in place of the smoked turkey tails because that's what I had on hand when I made these...

    It’s me again I also roll the leaves to cut them so they will be smaller in size portion then I check each leave carefully for bugs before I start to wash them and I use warm water sometimes I wash with baking soda or vinegar. I like them sweet.😊

    YOU ARE THE SECOND PERSON I've HEARD SAYING THEY ARE WASHING THEIR GREENS IN HOT WATER I've ALWAYS BEEN TOLD TO WASH THEM IN COLD WATER i WILL HAVE TO TRY THE HOT WATER NEXT TIME !

      As long as the water isn’t too hot either warm or cold water works.

      Yes all Apple Watches are waterproof but you do have to activate the feature each time you are in or near water. Then when you are in water it’ll even tell you how deep you are. If any water gets in the watch it will blow it out once you turn the waterproof feature off😉

    Ms. Jackie loved your video and appreciated how you honored those who came before. My question is how do you feel about bitter greens? Tennessee people love them bitter but some of my cousins from up north think we are crazy 😂

      I don’t like them. I try to flavor my greens so they aren’t bitter.

    Nice video but I've been cooking beans greens cabbage and whatever else needs that smoke flavor with smoke turkey tails and I also use smoke pigtails... The turkey tears and pigtails bring good flavor to anything you cook.... You should try some turkey tails that's not smoke season up and bake them in the oven with some rice you talking about something delicious.. my mom taught this old country boy how to cook...     Smoked Turkey tails are unheard of here unfortunately. 🇦🇺 It looks delicious though.

      You can use smoked turkey wings, legs or necks too. If you can’t find anything, Better Than Bouillon has a ham flavored bouillon too. Just watch the sodium if you’re sensitive to salt🤗

      I find all these food very yummy!
      But i just have to say that be careful because
      Turkey tails are not health foods,
      Its extremely full of fats and cholesterol
      Other than that,
      These food taste awesome !!!
      Like what my Mom and Dad always say
      "Moderation is the key"

      Thank you Latisha! My goto for seasoning greens and beans used to be good ole ham hocks but if you are trying to avoid pork smoked Turkey tails is the next best thing. They are full of meat and flavor and you’ll never miss the taste from not using pork. Thanks for watching and God bless!

    Adding baking soda to the wash water really really makes the dirt fall off to the bottom of the sink. Try it and see.

    I tried to make a pot of Gold like yours but it was very bitter, I also used turnip bottoms like my mother did but in my opinion I thought because I had equal bunches of Mustard and Turnips it was BITTER so bitter a friend suggested I used a bit of sugar which I never heard of, I guess I’m asking if it matters about the ratio of the bunch’s

      Hey Mark! What are turnip bottoms?
      I always try to use more mustard greens than turnip greens. Mustard green are more tender just make sure that either green is not real big and tough. That’s a good sigh that they might be bitter especially turnip greens. I’ve never added sugar to those kinds of greens but sometimes I will add a touch of sugar to my collard greens and cabbage to cut any bitterness.
      I’m sorry that you were disappointed with your greens but don’t give up on cooking them. Try and try again until they are just like you like them.
      This past Mother’s Day my Mother cooked a pot of turnip greens but she didn’t add and mustard greens or flavor. I don’t know what happened but can I tell you that those were the most bitter pot of greens that I have ever tasted in my whole life. Luckily I made a pot of my mixed greens too and when I tell you that there was nothing left in that pot thats exactly what I mean. I was disappointed because I wanted some and all I got was half of a turkey tail. Go figure!

      I always add a tablespoon of real honey and it works great for the bitterness.

      @@JackiesSouthernSoul Gurl you don’t know what turnip bottoms are?! I always use them on top of my greens, like my Mom does….so they’re turnips but the round white and purple ones that look like onions, you peel one, cut in slices horizontally, and just lay them on top of the greens the last 10 - 15 mins of cooking until they’re cut w a fork tender. Delicious!! You have to try it with your next pot…you won’t be disappointed 😍 that’s how we make them in Chicago / Midwest

      They are the turnips greens roots and put sugar in those greens as well to cut the bitterness.

      The mustard greens to me have a bitter taste but I also put a lil sugar in my greens when I cooked them but use collards turnip and kale and the turkey tails also and the chicken broth just made a pot yesterday happy Thanksgiving everyone thanks for sharing your recipe

    I cant find turkey tails nowhere and i live in the south so i just stick w smoked neckbones , hocks, or the smoked turkey legs

      Those will work the same. Here in Spartanburg I can find them at the Dorman Center Walmart but not at the Hillcrest Walmart. They definitely don’t sell them at all grocery stores.

    Please advise. I bought turnip greens and I do not have turkey tails but I do have chorizo sausage and I have bacon. What would be best? Do I have to have meat?

      Hey. I hope that I caught this question before you cooked your turnip greens. I’d use the bacon. If you don’t want to use meat you could use chicken broth to cook them instead of plain water. Be sure to still season them with salt and pepper too.

      @@JackiesSouthernSoul your timing is perfect. So far I have washed them thoroughly and chopped them up. Advice I got from one friend was to boil the turnip greens in salted water until they are tender and then drain them and fry them together with bacon and onion. To me that sounded like a better option than to start with bacon and then add greens that would release a lot of liquid. What's your expert opinion?

      With certain added ingredients like onions, garlic, and peppers it will be ok. Plus various fibers added to combat colon stagnation should be enough.
