    ▬ Recipe for the Original Wachau Apricot Dumplings made from Quark Dough ▬
    For the apricot dumplings, you'll need:
    • 260 g quark (curd cheese)
    • 130 g flour
    • 2 eggs
    • 1 pinch of salt
    • 1 tbsp sour cream
    • 100 g room temperature butter
    • some ground cinnamon
    • 1 lemon
    • 140 g breadcrumbs
    • Butter
    • Sugar
    • 1 vanilla bean
    • 400 g small ripe apricots
    • 1 piece of sugar cube per apricot
    • Straw rum
    • Powdered sugar
    Preparation:
    Let the quark drain in a sieve overnight. The next day, mix it with flour, eggs, salt, sour cream, butter, and some ground cinnamon. Refine with the grated zest of 1 lemon and knead into a smooth dough.
    Roast breadcrumbs in butter. Add some sugar. Halve 1 vanilla bean lengthwise and scrape out the seeds. Mix with the breadcrumbs and set aside.
    Wash apricots and remove the pits with a small incision, then fill the cavity with 1 piece of sugar cube soaked in straw rum.
    Shape the dough into small dumplings, flatten them slightly from the center, insert a prepared apricot, enclose with dough, and shape into dumplings.
    Place the apricot dumplings in boiling salted water (with little salt). Reduce the temperature and simmer for about 20 minutes.
    The dough must be cooked before gently lifting the dumplings from the water with a slotted spoon. Drain well and roll in the roasted breadcrumbs.
    Dust generously with powdered sugar and serve hot.

    Es muss köstlich schmecken, nur über diesen filigranen, weichen teig traue ich mich nicht heran, obwohl ich eine erfahrene köchin bin.👍👍
