    Hi ruthann ...for years I was a pastry chef..my pastry was always excellent up until my stroke then everything went south. No matter how much I tried it wasn't good anymore...it always was so hard or would slip into the pie plate. But....watching you step by step...ltoday I made 2 pies and thks soooo much not only for your recipe but for step by step Making
    Pastry. HURRAY! today was a success and have my mojo back. Love you and your precious family

    That is the best explanation for measuring flour that I've ever seen before. You actually created the visual. I absolutely love watching you and listening to your tips.     I'm so glad that you used lard and NOT butter.
    Then rolled out and did not say refrigerate!!!!
    My mom made 4 pies every week😊. (mom was 40 when I was born).
    I loved loved when you used a knife to trim the crust.
    Made me nostalgic of when I was child and watched my mom make pies.

      I was shocked when she didn’t chill the dough and the rolled out pie crusts! I’ve been making my dough too dry - looking forward to trying it this way.

    My wife and I live your videos. Your life reminds me of my childhood; the youngest of 11 children on an Arkansas farm. You are very good at explaining what you're doing.
    I live the milk cows and all you do with the dairy. My mom was milking when she began having labor pains with me. Called my sister to finish

    I love pecan pie, it’s my favorite. You are a expert pie crust maker, they look better then anyone’s I’ve ever seen. You make it look so easy.

    Thank you Ruthann for all that you do to help others.
    I used to use shortening for years then changed to lard and now butter. In 2021 is when my daughter and I started a pie company together. She never ever made a pie. I taught her. I have left the business for health reasons. She is doing very well. She even made a grape pie.

    I've been wanting a pecan pie recipe that doesn't include con syrup. This sounds absolutely delicious.

      I only use real maple 🍁 syrup when i make butter tarts or certain pies. You just need to cook the maple syrup slowly, keep stirring until it thickens like corn syrup. Makes a much nicer tart or pie. I also use a fist full of brown sugar in my pie crust. Mix the brown sugar with the flour then sift to blend it nicely.

      It won't be as sticky gooy as corn syrup. It has a dryer texture.

    My mother always used lard. Lard brings so much more flavor to the crust than vegetable shortening.

      Both lard and shortening are flavorless.

      I use half lard and half cold butter. I love vintage cook books.

      I find lard was hard to work with, made the crust hard to handle. Maybe it is just me.

    I found this so relaxing to watch you make and roll out your pie crusts. It's obvious you've done this a time or two. The end result looked so delicious.

    Another alternative is a southern chess pie which is a Scottish pie simular to the English pecan pie. The southern chess calls for brown sugar instead of corn syrup and walnuts instead of pecans. The taste and texture are almost identical to the pecan pie.

    This is so cool to see because a couple weeks ago I used a similar idea to make an apple pecan pie by using apple syrup which I made by boiling down apple juice. I imagine this maple syrup based pie has a maple flavor to it, which my niece would absolutely love.

    Hi, I just stumbled across your website and I have only watched a couple so far. But it's refreshing to see that people still cook and bake from scratch. My grandma made everything from scratch , right down to her noodles. And my mom made some things from scratch. Unfortunately they were the kind of women that didn't want children under foot. So we didn't get to learn any of those recipes. So thank you for creating your channel. I subscribed and look forward to trying your recipes.

    Thanks for the step by step on making pie dough. My mother always had a pie making day and would make upwards to 15 pies and then freeze them. For some reason I never got the knack for making the crust. I'm going to try again. Thanks Ruth Ann! ❤️

    It's so nice to see someone else, like me, who does not put their pie dough in the fridge I don't know where that silly idea ever came from. I've been baking pies and other wonderful things for decades, just teaching myself. Your pecan pie looks delicious. I think the use of maple syrup is ideal for this type of pie.

      If ppl use butter for their crust it’s best to keep it cold so that the butter doesn’t melt and allow air into the doe Ppl tend to prefer flaky crust and refrigeration tends to insure that.

      A silly idea? For the bakers who prefer butter...the butter has to stay could during the process, chilling the dough for a few minutes before filling is great for flaky and tender crust.

    I remember as a child my mother making pie crusts. I would love to take the scraps and dunk them in the pumpkin pie filling. So yummy.

    I have always used maple syrup in my pecan pies but until I watched you I had never bought the pure maple syrup. Wow What a difference. My family even noticed the difference.

    I made a pecan pie with maple syrup last year and it was a hit! I used a vanilla infused syrup and sprinkled the top of the pie with flakey salt. It was to die for! Yours look delicious!

      Yes we have to buy pecans here too. Only black walnuts grow here. And we use English walnuts sometimes for pies too busing the same recipe just different nuts

    You make the pie crust look so easy to put together! i am going to try it. I have only ever made one pie with a homemade crust and those was many years ago. Thank you for demonstrating the measuring of the flour, makes sense, and, the cut off crust doesn't get added into the other crust dough since it has extra flour worked into it. Thank you for this video!

    thank you for this. And: I am older, and many in my age group may not have all their teeth. I began a few years ago fine-chopping my pecans - or whatever nuts - so that those who need it are better able to enjoy a taste of pecan pie. many have said thankyou, and no one else has mentioned it.

    My mom always dusted the pecans lightly with flour before adding to the liquid. It assured that the pecans would rise😁

    Here’s the recipe I use for Pecan pie.
    1 box - Light brown sugar
    4 Eggs - beat with a spoon to mix white & yellow of eggs
    2 Tbsp. - Water
    2 Tbsp. - Corn meal
    1 Tsp. - Vanilla
    2-1/2 cups - Chopped pecans
    1 stick - Butter
    Mix all together in pot on top of the stove.
    Cook until it gets thick - not to thick to pour!
    Pour into two 9” pie shells
    Bake at 325 - 350 degrees for 30 - 35 minutes

    My partner has tried to make pie crust from videos before, but they all stress very tiny amounts of water and barely working the mixture at all. He ends up with a pile of dry crumbs when he follows the instructions on the others, but I'm going to have him watch you make this pie crust, which is so much like my stepmom used to make. She was, like you, a master at pie crust making, and I know he would get the process if he watched you. Thank you, RuthAnn.

    My sister in law made a walnut pie for Thanksgiving that was so delicious!!! I never had it before. I definitely favor pie over cake. Your recipe would adapt nicely using walnuts 😋
