This NYT recipe had a tip for baking in a glass pie plate said to prebake for 15 minutes at 400 F (with foil and pie weights), then remove foil and pie weights and bake for 5 more minutes
Pecans are so expensive in my country. But it's one of my favorite nuts, 😂along with pistachios & hazelnuts. Although walnuts are quite affordable here. None of the nuts are grown here but are imported, but they are the best tasting nuts ever! I just love them in pies & cookies! 💙

i don't have this recipe handy so i can't give you any specific advice, but when you're using a glass pan you bake it for longer at a lower temperature. the standard rule of thumb is to drop the temp by 25 degrees and check for doneness earlier, going off cues like appearance and smell.

If you want a hint of chocolate, borrow Rose Levy Berenbaum’s idea & paint the bottom of the pie crust with melted chocolate. A bitter chocolate would help cut the sweetness.
it would work nicely - add about a tablespoon or to taste. i use maple sugar for my madeleines but it's proper expensive and if youre already adding maple syrup I cannot see that the maple sugar would accentuate the flavor - id just add light and dark sugar instead.

Need Help - I followed this recipe and the 'goo' did not congeal. It was all liquidy even after cooling for 2 hours (1 at room temp, noticed it giggled a lot, then stuck in the fridge for another hour...no change. Maybe overnight will help, but that adds time to the prep time. Did anyone else's also not solidifying? What could have caused it to not become solid?
Today I am furiously searching for my old pecan pie recipe....the filling was cooked before it went into the shell, and that filling had 1T of flour in it. That flour gave the filling structure and it was nice and firm. So far I haven't found that recipe, but if you can find one like this, that will solve the problem and make a GREAT pie. I think it was in an old Southern Living cookbook.
So, I made this recipe, and the pies turned out great! But on Thanksgiving, I cut into one of the deep dish pie, and while cutting it, liquid came out. What did I do wrong? The thinner crust pies came out great, and the filled did not turn into liquid. I made the pies on Wednesday at midnight. I placed one of the pies in the refrigerator to see if the liquid turns back into jelly. Help!

idk how much longer u would have to bake it for but i do know the glass pan requires the longer cook time

Ghee is pretty similar in taste, but I would say a bit more neutral and with brown butter the solids are not skimmed off
