    Many decades ago I was hired to work at the legendary Pontchartain Hotel in New Orleans. At a luncheon I asked on uptown dowager , "May I bring you a slice of our Peecan Pie?" She montioned me over with her finger and whispered. "Young man, a peecan is what we put under our bed. Peacan is the lovely pie you are offering."

    Being originally from Texas (my grandma planted a pecan tree for each of us grandkids) pecan pie showed up at every holiday dinner. This recipe sounds delicious, I can’t wait to try it. Thank you!

      I made this for my mom and dad, both of whom grew up in SA and had pecan trees in their yards. They both loved this pie and have asked me to make it again for Christmas! This is a great recipe!!

    This is the best pecan pie recipe i have ever tried! It is amazing! I honestly think using corn syrup makes it too sweet and using maple and honey is the best option.
    I have made this around 5 times now, it's i have gotten very good feedback (i didn't wanna use the word amazing again, ha 😅)

    I made this for Thanksgiving and it was hands-down one of the best desserts I've ever had for the holidays. It's soooooo much better than any pecan pie made with corn syrup. I'm making it again for Christmas!

    I always chop the pecans or use pieces bought from the store. That greatly increases the actual amount of nuts you can fit in the shell. Also, in this day of reduced family gatherings, I tend to do a combination pecan-pumpkin for just two of us.

    That is a classy pie with all my favorite ingredients: butter, maple syrup, brown sugar, honey, pecans, bourbon, no cheap corn syrup. Last winter I ate honey. I toaster pecans in maple syrup, and I ordered in and ate bourbon pecans. And I eat butter all year round. Your pie looks and sounds delicious.

    I am pretty much a sugar addict, yet, I have always found pecan pie to be overly sweet for me as a pie. I have also found most sweet potato pies too bland. So I decided 35 years ago to mix the 2 together and for me it's perfection. This is my favourite Thanksgiving pie and many I serve it to agree.

      Yield:8 servings
      All-purpose flour, for rolling out the dough
      Dough for a 9-inch single crust pie
      ½cup/115 grams unsalted butter
      ¼cup/85 grams maple syrup
      ¼cup/85 grams honey
      ½cup/110 grams light brown sugar
      ½cup/75 grams maple sugar or use more light brown sugar
      3large eggs, at room temperature
      1tablespoon bourbon (optional)
      1teaspoon vanilla extract
      ¾teaspoon kosher salt
      1½cups/180 grams pecan halves
      Flaky sea salt, such as Maldon (optional)

    Been looking for the perfect pecan pie recipe for a while now. It's the kind of pie that I've been finding difficult to make from scratch as good as some store bought ones actually. Recipes with corn syrup have been underwhelming. I think that personally, I need maple syrup in my pecan pie and, this recipe is now the one to beat in my book.

    Delicious! But if you like lots of pecans then double or triple the pecans! Thin layer of pecans and large layer of gooo is what you get here - delicious either way

    Pecans are so expensive in my country. But it's one of my favorite nuts, 😂along with pistachios & hazelnuts. Although walnuts are quite affordable here. None of the nuts are grown here but are imported, but they are the best tasting nuts ever! I just love them in pies & cookies! 💙

    I made this pecan pie twice last year (mainly because I wanted to use up the expensive maple sugar). I, along with my family were not overly impressed. The pie was good, but not good enough to want to buy maple sugar again.

    If you want a hint of chocolate, borrow Rose Levy Berenbaum’s idea & paint the bottom of the pie crust with melted chocolate. A bitter chocolate would help cut the sweetness.

    Hello, I had to use my ceramic pit pan, and put it for the longer amount of time. My pie filling turned into a jelly consistency, what am I doing wrong? Should I have removed it 10 minutes earlier even though it still seemed super liquid in the middle?

      This NYT recipe had a tip for baking in a glass pie plate said to prebake for 15 minutes at 400 F (with foil and pie weights), then remove foil and pie weights and bake for 5 more minutes

      I cooked it in glass and my was well done in 20 mins after the 10 mins at 400F. Granted my oven is calibrated to the right temp.

      i don't have this recipe handy so i can't give you any specific advice, but when you're using a glass pan you bake it for longer at a lower temperature. the standard rule of thumb is to drop the temp by 25 degrees and check for doneness earlier, going off cues like appearance and smell.

      Ghee is pretty similar in taste, but I would say a bit more neutral and with brown butter the solids are not skimmed off

    Need Help - I followed this recipe and the 'goo' did not congeal. It was all liquidy even after cooling for 2 hours (1 at room temp, noticed it giggled a lot, then stuck in the fridge for another hour...no change. Maybe overnight will help, but that adds time to the prep time.
    Did anyone else's also not solidifying? What could have caused it to not become solid?

      Today I am furiously searching for my old pecan pie recipe....the filling was cooked before it went into the shell, and that filling had 1T of flour in it. That flour gave the filling structure and it was nice and firm. So far I haven't found that recipe, but if you can find one like this, that will solve the problem and make a GREAT pie. I think it was in an old Southern Living cookbook.

      it would work nicely - add about a tablespoon or to taste. i use maple sugar for my madeleines but it's proper expensive and if youre already adding maple syrup I cannot see that the maple sugar would accentuate the flavor - id just add light and dark sugar instead.

      Burnt butter is gross. Browned butter is delicious. They're two different things.
