I made this because I wanted to have my own family recipe because my grandmothers recipe was lost. I added beef shank, oxtail and some pork belly to the beef stock. Anyway it came out soooo delicious. My Russian mother liked it and she said she hated borscht as a child. Apparently there’s some bad super sour borscht out there. But to each their own. lol Thank you for this recipe! I hope to pass it down to my own family one day!

My son LOVES borsch and we grew beets this year specifically to make it. This might be my favourite recipe yet and will be my go to from now on. Both kids (10 &8) had THIRD helpings 🤩. I made a double batch which filled my big stock pot and used chicken stock (from a concentrated paste) and kidney beans this time but I look forward to trying the different variations in the future. Now I have a happy full family and a freezer full of healthy meals. Thank you!

I looked up your recipe a couple of weeks ago and made this last week! I have never had anything like this so I thought that I wouldn't like it or that I would make it incorrectly. It is beautifully delicious and I truly love it! My family is picky, except for one of my children who tried it, so I ate most of it myself and for many days! That looks delicious! I make mine very similarly, with the dill and plenty of garlic after the pot is turned off to give it that Ukrainian taste. I like mine with pork and beans too :) i cant wait to try nibbling on a garlic clove next time i make borsch

I'm going to try this recipe but without the cabbage. My mom never used cabbage but she added frozen peas to it and when it was done she stirred in sour cream to make it pink and creamy.

I made this recipe and I felt transported back to Rivne and Kiev. This is really authentic. Add some garlic rosemary bread to enjoy alongside the borscht and you have a memorable meal. And if you can find some high quality salo with Dijon mustard, even better. Слава Україні

Beets , Onion , little garlic , That's it . And the Polish love their HAm . She diced /cubed ham ( not minced ) .Gotta see the ham and it must be slightly chewy . Voila
No, no. Borscht has been on Ukrainian lands since the 16th century before the Russian Empire. And the Russians took our recipe, their national soup "shchi".
@ I don’t know what history books you’re reading but “Ukrainian” historically is the Russian empire. The country of Ukraine did not come in to existence until 1991. You can go to your local Barnes and noble and get yourself a history book. It’s not hard.
I too personally like cabbage to be added the last, so that it remains crunchy. But some people like very soft cabbage in their borshch, and that's fine. Borshch has hundreds of variations, so there's no wrong borshch.
