Borscht/Borsch/My Family Recipe! The best one you ever tried!

  • Borscht or Borsch is a staple dish in Russia, Ukraine and some Eastern European countries. Every family would have their secret recipe.
    So today, I am sharing my family recipe.
    For Beef stock will need: some bones: I am using beef bone marrow bones, some gelatin meat: I am using ox tails, and some lean meat: I am using top sirloin.
    To make your beef stock flavorful you will need:
    1 onion
    1 carrot,
    1 parsnip
    1 celery stalk
    some parsley and dry spices like: bay leaves, coriander seeds and black peppercorns.
    Also, some salt and pepper to taste and one dry chilly pepper.
    For Borscht you will need:
    3 medium size beets( with beet greens)
    4 medium size potatoes
    2 medium size carrots
    1 parsnip
    2 cloves of garlic
    1 head of green cabbage
    celery greens
    1 bunch of parsley
    1 bunch of dill
    2 tbsp white vinegar
    To serve you will need:
    2 cloves of garlic
    fresh dill
    sour cream
    Method:
    In a large stock pot add all your meat and vegetables for the stock( you don't need to peel them, since they are going to be discarded after the stock is done).
    Add spices.
    Add cold water to cover stock size ¾ of a way.
    Set to boil.
    Right before boiling process have started collect and discard the foam that appeared on the top.
    Leave to simmer for about an hour.
    Peel beats.
    After one hour simmering time, take out bone marrow bones and you can enjoy them with just a sprinkle of salt or spread it on toast.
    Add beets to simmering stock and cook until beets are fork tender.(about 30-35 minutes).
    Take out the meat and beets, set aside to cool.
    Strain beef stock and return to pot.
    Set on slow simmer.
    Add grated carrots and grated parsnip, cook for 10 minutes.
    Add chopped beet greens and chopped beet stalks.
    Add cubed potatoes and cook for 10 minutes.
    Add chopped cabbage and cubed meat. Cook until cabbage is just al dente.
    Grate beets, add chopped garlic and vinegar.
    Add to soup along with fresh herbs,
    Turn off the heat and close the lid.
    Let sit for 10 minutes.
    Enjoy Borscht with chopped garlic, fresh dill and sour cream.
    Serve it with Russian black bread.

      It happened the same with my mother and me, we had never tasted it before and boiled red beets were pretty despiced before. Thank to RUclips I could know this wonderful dish! I'm from Italy and it's much more better than an Italian ordinary soup (minestrone). Sour cream by the way here is unknown so we had to use a solid spreadable cheese. But the dish was anyway fantastic. Greetings.

    Thank you. I live in England and my new neighbours are Russian... They invited me for dinner and made this for me... I didn't ask for the recipe and have searched here on RUclips, so I can invite them for dinner and show them my appreciation for their kindness to me...Their English isn't very good, so I have learned the Cyrillic script and I am now learning to speak Russian...What a beautiful language...Greetings 🙋🏻‍♂

    The gloves are a great idea. Every time I make borscht my kitchen looks like a crime scene lol so anything to keep things neater the better

    When I was a kid my dad always gave me the bone marrow as a treat, I was lucky, he let me have all of it - I can taste it now 🤣 even though that’s been (many) decades ago. And we were in Canada, so not strictly a European thing. I just made borscht a couple of weeks ago - after watching this video I know next time it will be even better. TY

      Great story 👏 Thank you for sharing. When I was a kid, I didn't like it. Only now I can appreciate the taste. Back then, I preferred the core from the cabbage 😁 my grandmother would put a little salt on it and let me eat it.

    I roast the, meat , vegetables and bones coated with tomato paste for 30 min at 500 celsius, makes a nice rich stock.

    Omg my whole life I could never ever make borscht. I saw your recipe and thought I’d try again. Wasnt excited cause it never turns out for me. Followed instructions and oh mannnn was it good.     Thank you for this recipe! I am Polish and used to eat red borsch only during religious holidays (as a child). My mom would not make it regularly. These days, since I am pretty much vegan and love beets (and all vegatables) , this soup is like a paradise found :) I made it today and I can't wait to share with friends!

    Thank you for sharing this recipe! My family and I went to Russia a few years ago during the summer holidays and absolutely loved the Borscht there. Since we are unable to go on a family trip this summer because of coronavirus, I made this to celebrate my father's birthday and it took us back to Russia. The borscht reminded him so much of the ones we had in Moscow. Thanks again, everyone loved it!

    I've been winging my way through borsch for a couple of decades and this recipe was a real eye-opener. New to me were: the white vinegar, celery leaves, and the fresh dill. How did I not know about the fresh dill?! Also, is that pork belly on the brown bread? Excellent recipe and very well taught! Thank you!

    Ok, I have to say that I have fallen in love with your recipe!! I'm a type of person that loves, LOVES raw garlic, bone marrow,, spices, and beets! And let us not forget about pork. I'm from Argentina, of Italian/ Basque blood. I absolutely appreciate beets. When I use beets, I use leaves, steams, everything. When I moved to the USA and met an Ukrainian family I learned about Borscht. God, I went crazy about it! I grew up eating a salad that my grandma prepared: boiled beets, fresh leves and steams, fresh garlic, fresh and thinly sliced red onions, sliced boiled eggs, salt, olive oil, red wine vinegar, black pepper.     Now I know why my Wife from Kharkov Ukraine adds tomato paste! I never tried the cured pork fat, not exactly healthy, but when your are just surviving in life, any calories are needed. Nice video

    It might be delicious, the beef stock is good. Thank you for sharing your recipe and let me share how I cook Borsch. Normally you don't boil whole beets and don't just put carrots to boiling water, you should dice onions, grate carrots and grate or cut in to thing strips beetroots, saute them in frying pan with vegetable or sunflower oil with tablespoon of tomato paste. Separately chop cabbage and dice potatoes, add them to boiling stock and when potatoes are almost ready add sauteed onion, carrots and beets. When potatoes are ready, turn off the fire and add finally chopped herb (dill, parsley and spring onions). Now you are ready to serve.

    Several years ago I was given a Borscht Soup recipe from a friend who was from Kiev then a part of the USSR. I was told it was a family recipe not shared. The difference in this Borscht is the meat is only 1 or 2 pounds of pork sausage fried and drained of it's grease. The remaining ingredients are the basic root vegetables and slowly simmered all day, bringing in the kids after an evening of trick or treating I served everyone a warm bowl of homemade Borscht and let me tell you having the fireplace roaring a bowl of Borscht with a slice of black bread coated with butter ! Never in all my life have I ever had a pot of soup disappear in that fashion. It was the most incredible and warming soup I ever fed my system and it was like my entire family had their souls enriched. My teenage daughter just a day ago asked me when I was going to make that Soviet soup as she calls it again. Now my soul hungers for that Borscht.

    I got the beets & other ingredients; will fire up the Borsch in a few days. Can't wait! I already cooked Hungarian Goulash & it was amazing. Ready for us some Borsch with crackers of course, we are American.

    I’ve made borsch a couple of times, and she is right, it tastes much better the next day. I think everything has a chance to soak in the beef and beet broth. Everything in the soup is the marooning color of the beets. It’s just a great soup to eat year around.

    So "Borsch" comes from "buryak schi", "red beet soup" , interesting.
    By the way I made it today for first time, the recipe here in Italy is completely unknown and boiled red beets are pretty despiced in the supermarket ; they're very cheap, 1€ for 5 (medium size). Dill is not used in the Italian cuisine so I put fennel leaves. Also sour cream is unknown and I had to put a sort of spreadable solid cream. By the way my Borsch was fantastic and tastefull, much more better than our ordinary vegetable soup (minestrone).

      Vegetarian borscht is prepared in the same way, just without meat, on vegetable broth.
