There is a scientific word for burnt sugar, its called caramel and done right it enhances the flavor of preserved meats of all kinds in wonderous fashion.

I grew up on smoked salmon and never knew there was any other smoked fish. Until I was stationed at Great Lakes Naval Training Center in Waukegan Illinois. All of the local foods were amazing in this area around the Great Lakes States. I'm also an avid outdoors man & a cook. So I can really appreciate the skill of the Man that can catch, clean, season & smoke this much fish at a time. This is most definitely a labor of love to watch this Guy both outdoors & in the kitchen. Made my mouth water & I can taste all of the flavor in just watching this video

So labor intensive, but so worth it in the beautiful end product worth every penny of that $13.89 per pound! Did his parents, grandparents, and ancestors catch, brine, and smoke fish before him? net fishing is evil..but most of what he gets is hopefully the invasive Asian carp...but u see his signs...Gator and turtle..hopefully he gets those imported. killing turtles is brutal. partly illegal. they don't die easily, and scream and stuff.😭 also, I thought carp could breathe air, so I don't know how his died when he pulled them from the net.🤔

Yes, we have refrigeration and yes we can buy everything fresh but what wonderful unique flavors we give up when we shed traditional preserved foods. I'm a 70 year old chemistry teacher and in my classes I freely incorporate how our recent ancestors out of necessity preserved foods with flavors which have no equal on this side of the world to come. Actually I was the solution to "wasted meat". Running a smokehouse in a grocery store is a fantastic way of upcycling old product. Chicken and pork can be brined and smoked at recommended expiration date. Beef can be made into jerky, wieners, summer sausage, bologna and snack sticks. Carcasses from poultry and fish can be smoked and used as phenomenal bases for soups, stews and broths. The difficulty is being able to present the various products to a willing market for consumption. So no, I did not waste meat.
Out here in California I've smoked catfish, crappies, store bought seafood, but smoked carp is one of my favorites........smoked Texas style but i used Olive wood mostly, some apple, cherry.....but that Olive wood is even better than Mesquite wood, although they mimic each other, but there's still something about the Olive wood though.....all time favorite wood smoke

Starting in the 80s- Not much caught commercially in Illinois/Southern Wisconsin any longer. Bit further north along the lake shore though.
