    I've smoked and filleted my share of fish...I am amazed! The way he lays the fish down on the grate and makes sure there is enough space for the fish to smoke properly. At 18:53... brown sugar on the fire to smoke the fish? That I have NEVER seen before in my life! SALUTE! 🐟🐠

      There is a scientific word for burnt sugar, its called caramel and done right it enhances the flavor of preserved meats of all kinds in wonderous fashion.

      @@johnkern43 Caramelized sugar happens, and then the Caramel turns dark and bitter, and then it turns black and starts smoking lightly, and then it bursts into flames and stinks up the house(science, lol).

    Я понимаю что у них речная рыба не особо популярна и ее там пруд пруди, но всё же, так небрежно разделывать рыбу...с таким количеством отходов((( Видели бы они как это делают японцы! Культурно, изящно.

    This has got to be a dying art. Stunning is a great way to describe the whole process. I'm originally from Minnesota, never had a use for carp...I believe I missed out. Keep up the great work and be safe my cheesehead friends.

    I grew up on smoked salmon and never knew there was any other smoked fish. Until I was stationed at Great Lakes Naval Training Center in Waukegan Illinois. All of the local foods were amazing in this area around the Great Lakes States.
    I'm also an avid outdoors man & a cook. So I can really appreciate the skill of the Man that can catch, clean, season & smoke this much fish at a time. This is most definitely a labor of love to watch this Guy both outdoors & in the kitchen. Made my mouth water & I can taste all of the flavor in just watching this video

      Starting in the 80s- Not much caught commercially in Illinois/Southern Wisconsin any longer. Bit further north along the lake shore though.

    This is like the greatest food video ever. Loved this. The work. The care. The technique. From the water to the counter - so delicious looking! So labor intensive, but so worth it in the beautiful end product worth every penny of that $13.89 per pound! Did his parents, grandparents, and ancestors catch, brine, and smoke fish before him? This is a great Midwestern American fishing/food tradition. Need to come to Wisconsin and try some!

      net fishing is evil..but most of what he gets is hopefully the invasive Asian carp...but u see his signs...Gator and turtle..hopefully he gets those imported. killing turtles is brutal. partly illegal. they don't die easily, and scream and stuff.😭
      also, I thought carp could breathe air, so I don't know how his died when he pulled them from the net.🤔

      That's sad that business is falling off.
      Use to be tons of coal fired pig bbq places around here in NC but everyone has gone to gas cooking and that's not the same.

      God bless you for sticking to your craft. In America it is the bland leading the blind. Yes, we have refrigeration and yes we can buy everything fresh but what wonderful unique flavors we give up when we shed traditional preserved foods. I'm a 70 year old chemistry teacher and in my classes I freely incorporate how our recent ancestors out of necessity preserved foods with flavors which have no equal on this side of the world to come.       Actually I was the solution to "wasted meat". Running a smokehouse in a grocery store is a fantastic way of upcycling old product. Chicken and pork can be brined and smoked at recommended expiration date. Beef can be made into jerky, wieners, summer sausage, bologna and snack sticks. Carcasses from poultry and fish can be smoked and used as phenomenal bases for soups, stews and broths. The difficulty is being able to present the various products to a willing market for consumption. So no, I did not waste meat.

    Out here in California I've smoked catfish, crappies, store bought seafood, but smoked carp is one of my favorites........smoked Texas style but i used Olive wood mostly, some apple, cherry.....but that Olive wood is even better than Mesquite wood, although they mimic each other, but there's still something about the Olive wood though.....all time favorite wood smoke

      Dude - I really doubt that you can buy that smoker. They probably made it - probably been using it for years and years. I could be wrong, but I’ll bet I’m not. That smoker was made by the people of that business/family.

    Great video. He did it all from start to finish. I like how he re-branded his carp fresh smoked perch. I would eat it either way. Nicely done.

      Buffalo fish...a member of the sucker family. Carp are non native to U S and are part of the minnow family:]

      I think the perch was indeed perch. On the signage outside it states smoked carp. Perhaps he smokes more than one type of fish.

      Mike offers a variety of smoked fish and meat. The smoked perch is actually perch. And smoked carp is every bit as good as smoked salmon.

      @@damondiehl5637 Someday I'll try. Fish the Niagara - lots of sheepshead and carp. I'm about perch / crappie and walleye for eating, Smallmouth for fun and occasional lunch. Salmon and whitefish are all I've ever had smoked and haddock and cod are my mainstays.
      Carp???? Drum ???? - I don't know, but maybe --- I'd have to try.
      His fillet technique to avoid bones n such was fast ------ be nice if the Asian carp smoked good.
      I was always like if your gonna have an invasive fish why can't it be something like crappie?
      Hear snakehead eats okay also.
      Well Sir - perch looked great and someday I'll try me some carp.

    I am in my mid 60's. My Dad always made smoked carp when I was a kid. I loved it, I ate it like beef jerky. His parents were Czech immigrants to the Midwest. I wonder if these owners are of Czech heritage.

      True, but pay attention, he wastes a good size of it by simply skipping the fin on the side. Theres a lot of meat left on that fish, i hope they dont throw it out and it gets reused as stock for soup or something.

      Waste? Plenty to waste in this case. I'm sure the not use parts are use for fertilizer. Plenty of fish in the river I don't think waste is any concern.

    in Russia smocked carp's price is $2,5 kg and few people buy it because it's a tasteless food. Actually, it's hard to find it because people don't waste time on preparation of an undemanded and profitless product. Smocked sturgeon and salmon are the products which people buy

      Не 80%,а ~50%.голову я не считаю.
      Но задумайся. Лучшая рыба...... В названии.... Поэтому он и вырезает лучшую часть у рыбы.
