It's my first visit here at Todd's Kitchen and I really like to stay here. Making soy milk is pretty easy process indeed and cheaper as well. I'm so excited to give it a try. Thanks.
Thank you :) It is good in the fridge for three days. It does not last as long as the store brought because there are no preservatives. Also as i said in the video you can just throw it in your garden. Some people use it but i never have.
How about just boiling the soy beans after overnight soak and then blending it like a soy smoothie with fiber. Would that work too? Or maybe soak overnight, blend, heat to boil, simmer, and then drinking it as a thick smoothie?
Just tried this, it turned out quite good. First attempt was a failure though, as I don't have a cheesecloth, so I used a towel, and the soy milk tasted like laundry detergent, lol. Second attempt I only used a strainer, and it turned out quite well. I then mixed it with banan and chocolate. Now the tricky part is to buy organic dried soy beans, I'm not sure the brand I buy is organic, but it could be.
I tried blend > filter > cook, blend > cook > filter, and cook > blend > filter. They taste similar as long as you have a high quality blender like vitamix or blendtec (lower quality blender can't get the favor out as well). And I never bother removing the skin from the soaked bean. I find cook first (of course use pre-boiled water and sterilize the cheese cloth) is easier and I don't have to worry about the film forming issue.
Try a soy milk maker, it is much simpler. I use a SoyaJoy G4 and I just add soaked soybean and water, and push a button, it cooks -> grinds -> cooks ->grinds ->cooks->finish. It controls to exact temperatrue and heating or grinding durations for each step to produce perfect soy milk. Whole process takes about half hour..
My mom make soymilk but she only half done, she told me to finish it by telling to me to blend it, i was so confused and after i watched this video, it help me understand it a lot.
Thank You for this teaching Video, Both it and the Tofu one are great. The pulp you toss seems it would be high fiber so even lower "Keto" and could be used in its own way? Just cook it as you would any bean?
Correction; the term OKRA used here is mis-spelt. Okra is a green vegetable, right? The correct spelling of the soya residue after making soya milk is OKARA. Note the extra letter A in the middle. Google OKARA for its uses... it's bland but can be added into various dishes that have added flavour from their other ingredients. Think TVP (textured vegetable protein), a.k.a. "soya mince", that other soya product, and you'll be inspired. Meatballs, etc. can include okara. It has high food value - fibre, some protein, calcium, carbs. So no need to waste it, but put it with other foods that make up for its lack of flavour and get that extra fiber that meat, for example, does not have.
Thank you so much for posting this. Easy to understand and answered every question I had, including how long it would last in the fridge. God bless you for sharing your gifts. :)
Hello Todd, one question : have you ever tried to make soy yogurt from that soy milk ? If so, I really LOVE to see the full recipe ! By the way - soy yogurt vs cow yogurt is even more expensive than soy milk vs cow milk (but indeed more nutritious as well !)...
I just made this in my kitchen in Bali. Works perfectly, but as with all soy milk it is better with some sugar added. Now I am off to make tofu from the soy milk, and with the left over beans I am planning to give tempeh a go.
It's much better (like so many things) with sugar, salt, and m.s.g.! Also some gum or something to make a thicker mouth feel. I use cactus, because I have it growing in the yard. That is, cut up a small amount of cactus and soak it in water, it turns into something like a clear syrup. So, some seasonings and then a little of this gum liquid makes it pretty believable. Good hot or cold.
Hi Tod, Soy milk unsweetened is lovely as a soup base as well cooked with say chicken bones. some Japanese Restaurants serve up a Hot Pot this way. The residue can be used for cookies too - just for more fibre. we usually cook it with the residue for more taste - but its sure hell to squeese off the residue when its hot. (can wait for it to cool too then shift out the residue)
Todd have you tried to make it with fresh soy beans. Do you think the taste would turn out better/more enhanced in flavour? Thanks for the videos. Just found them recently, and already helping me so much.
It turned out GREAT ! Taste delicious... but I only got about 425ml of milk out of one cup of soy beans and about 850 ml water... next time I'll double the quantity. Thanks Todd !!!
***** Umm yes you can... When milk is bottled, it is pasteurized, which is a quick flash heating of the milk, which kills pathogenic bacteria. It takes less than a second and is immediately cooled down again so it *doesn't* cook. That's why Louis Pasteur was an international hero: he stopped diseases spread by milk, (and allowed it to be preserved if kept cold) without changing its properties. It tastes the same, it looks and behaves the same... except it's bacteria free.
jerachin The comment I was replying to was deleted. I honestly don't recall what it was though. Probably some confusion over how bottled milk is prepared.
Uses for Pulp After Making Soymilk thumbnail Use okara as a substitute for eggs in almost any recipe. Okara, or soy pulp, is the insoluble carbohydrate residue left after the production of soy milk or tofu. According to the Soy Info Center, okara is an inexpensive and excellent source of fiber. Three-quarters of a cup contains only 77 calories, but 9.8 grams of total dietary fiber, more than most high-fiber cereals. Okara, like tofu, has a bland flavor but complements and adds fiber and texture to dishes. You can add okara to soups, stir-fried vegetables, casseroles, sauces, bread or burgers and use it as a meat substitute in tempeh or polenta. I froze it and add into veggies stir fry or what ever im cooking it almost like adding chicken texture better than tofu. I hate waste I get so much pulp from juicing that I hate to just compost so I made some veggie stock from it and then made biscuits for my dog she loves them . But I have so much my freezer got full I might get some chickens or a pig. lmao..
Hello Tod! Should I boil in the simmer for 35mins? Is that the whole process time to boil? What should be the milk temperature for me to add lemon juice to turn into tofu?
After rubbing the soaked beans, do the husks float off, or do they get caught in the cheese cloth after blending? Is cooking necessary or can you drink the milk raw?
Great video! 1/2 cup of organic soybeans gave me a pint of soy milk and three veggie burgers made with the soy left in the strainer. Plus I used the skins to dig into my vegetable garden.
Just add 4 drops of “Stevia" as a sweetner and half a spoon of valilla extract , I just had a glass of soy which I bought from a Vietnamese Tofu shop opposite Hong Kong market on Ballaire in Houston Texas , I paid $3.50 .for a gallon. I am going to make my own . Thanks for the Video Buddy ! (I am a borderline diabetic)
I made the soya tofu by making soya milk as advised by you. The quality of tofu is very good. I used vinegar for making tofu. It was very very cheap as compared to tofu available in big stores. Tofu is not very popular in Delhi, India. But keeping in view its health benefits, it is worth eating. I have decided to stop using dairy products and instead from today I will use only soya products like soy milk, tofu and soya curd. Thanks for improving my health.
The same reason you boil beans that aren't turned to milk. You wouldn't eat raw pork just because it soaked over night in water and was blended, right?
Yes you can use it. The leftover pulp is called "okara" and is very nutritious. It is full of fiber and nutrients. Throwing it out is such a waste. It can be mixed into almost anything for added protein, fiber, etc. I mix mine into my homemade granola just before it goes into the oven to bake. It can be stirred into sauces, puddings, bread dough, cookie dough, you name it.
+Titan Coral oh so actual cow milk is more likely to increase your estrogen levels? that explains why I have a huge lump of breast tissue on my right nipple.
+Stefan Aleksic Better drink soymilk. Cow's milk contains animal estrogens, active ones that mess up your hormones. Soymilk contains plant estrogens, which are inactive and won't be used by your body. Also, soymilk is a cheaper source of protein than cow's milk ($0.25 per L soymilk compared to $1 per L dairy milk)
+Stefan Aleksic My cousin also has gyno, but his gyno become smaller once he stopped consuming fried chicken from fast food like KFC or McDonalds. I dunno if it's related though, hope it helps!
Pinwheel Nation You do realize that hormones are simply chemical compounds right? Phytoestrogens are call such because they act like estrogen in our bodies, even though they originate from plants. A comparison would be caffeine, which does not occur naturally in animals, but does in plants. It’s consumption replaces adenosine in the nervous system. Same as how Phytoestrogens act as a supplement for estrogen levels in the body. On the other hand, lots of things contain phytoestrogens like hops (or beer), ginseng (or most energy drinks), most unprocessed grains besides rye, coffee, apples, carrots, most beans, and surprisingly yams. That’s not even an exhaustive list, so unless you want to go without eating all that you might as well make do.

If I wanted to incorporate soy into my soap making project, which would be more potent in reducing hyperpigmentation between the milk and fibre? Thanks.
Go to your local paint/hardware store and pick up a paint straining bag. It's made of the same nylon mesh as what the nut milk bags are made from except that it is much cheaper. It is washable and reusable. There are usually 2 bags per package for around 3 dollars. This is a way faster and easier way to strain milk from soybeans, almonds, rice, whatever you're making.
Is there any difference in straining the milk before or after boiling, and second question, I heard something about roasting soy beans for the milk, do You have any experience with that?

In Korea they cook beans first and then blend. Cooking beans can be tricky at times, so I have to say two thumbs up for your method. I shall try this. A post on tofu in near future? Thanks.
hey todd thnx a lot i just made soy milk yesterday & it was outstanding whole family enjoyed! One question y v have 2 keep removing that film forms over the milk whn cooking it? Is it bad 4 health or..??
Your explanations are very clear and precise. I really enjoy watching this video and I hope you'll also show how to make vegetable and fruit juice without a juicer. Thanks
I like using LAURA BEANs soy beans from Iowa, USA. They are non GMO. I make soy milk every couple of day in a soymilk maker, but watching how to make it on the stove also.
How long would it be good in the fridge? Like, for storage. If I get 10 liters from this, then I'm not sure I'll be able to drink it all at once. Thank you for sharing the recipe, by the way!
I just saw that you can make tempeh with the leftover pulp. Doesn't look like you have a ton of pulp, but just wanted to throw out there that you could process it a little bit and it would be edible.
Whey soy milk is yummy, dont waste (3.58), its always is my fav!!! I use to drink soymilk with sugar but nowadays, i drink only soymilk, non add sugar. Some people might not like it first time but after that its really not bad, you can feel the real natural sweetness in soymilk
Hi Todd, nice video. Just a suggestion, you need to you hot water when you break down the soy bean in the blend. My mother says hot water will prevent certain enzime activated. so the soy milk wont produce unpleasant smell.
Thanks for this video. I am a renal patient, and we can't have a lot of dairy products. This may be something that I can use. I will have ask my doctor. Thanks you so much!
Its a really interesting video. Very useful. I have a question about the milk. How many days can i preserve this in the fridge? Usually Silk soy milk comes for 7 to 10 days after opening.
interesting to see how different soymilk recipies can be. whenever I make soymilk I boil the mixture without removing the pulp first. That way I can use the boiled pulp to make veggie burgers. I also add about 1/4 teaspoon of baking soda pr 1.5liters of soymilk in order to stop it from curdeling when I add it to hot drinks.

same
4-5 days in the fridge
you can also eat that "skin" that forms on top of the liquid while it simmers, the skin is call "yuba" and it's very nutritional (and expensive)
soymilk cream
It's my first visit here at Todd's Kitchen and I really like to stay here. Making soy milk is pretty easy process indeed and cheaper as well. I'm so excited to give it a try. Thanks.
You're welcome :)
Youre lactose intolerant
This is exactly the same way as my grandma made soymilk for me when I was little. You just remind me my precious childhood memories. Thank you.
Thank you :)
It is good in the fridge for three days. It does not last as long as the store brought because there are no preservatives. Also as i said in the video you can just throw it in your garden. Some people use it but i never have.
Then, heat up the milk to simmering, add lemon juice or nigari, which curdles the milk, and you've got tofu.
oh, okay thank you!!!! That was going to be my next search..

How do they give it vanilla flavor?....vanilla extract?
But you convinced me........going to the store to get started.....Thank You!
so much creamier than store bought too! (and really good with honey!)
You have outdone yourself again :D
Thanks for this video. Clear, simple and very useful. 😀
don't forget to add a pinch of baking soda then it won't curdle in your coffee
matchbox555 what do you mean curdle is it like crumble up? But if it works thanks for the tip :P
Im allergic to normal milk
omg this from 3 years ago and it helped me I'm a barista
Your explanation is so good and simple thanks.....What can I use for flavours?

Wendy Wang Don't why it crossed the cooks and grind and cooks etc. But that is the process it goes through automatically
This looks so tasty! I will definitely be making this with my wife and her boyfriend this weekend.
the skin of the bean contains a lot of uric acid. so it is better to dehusk the bean before grinding it.
depends on the rag. Just make sure its not the type that looses fibbers much.

Does your soy milk taste bitter?
autumn jasmyn you can add pandan leaf for the aroma and a little bit sugar to make it sweet. it wouldn't taste bitter anymore

okara burgers
You can bake with it like flour too. Cookies cakes etc.

Great video! 1/2 cup of organic soybeans gave me a pint of soy milk and three veggie burgers made with the soy left in the strainer. Plus I used the skins to dig into my vegetable garden.
Can you make any "edible" food with the left over pulp?
you can add it to breads or muffins... a great source of fibre
You can use in ur bread flour.. I use it while kneading roti/chapati dough!
You can stir fry or sautée the bean pulp just like couscous or fried rice. Or add to salad if they beans were cooked.
Scott Coleman add some egg, salt , pepper, some onions or scallions, soya sauce and sesame oil...form them into cakes and fry or bake. delicious.
Thanks all!!!
Its sold every where so its not to hard. but you can also use a coffee filter or even a clean pair of stockings :)
Finaly! Now I can die in peace!
Not yet, you need to devote your life to making the perfect cup of soymilk and sell it to others.
Great!!!!
I do have restaurant in Kathmandu so I am going to make my own soy milk from today!
Thanks for improving my health.
no one EVER explains WHY you have to boil it
+matchbox555 You boil it to remove soy's antinutrients. Any legume can't be eaten raw, because they contain high level of antinutrients.
Lawrence Zeng also I discovered if you want to put it in coffee without it curdling you just add a pinch of sodium bicarbonate per litre
Lawrence Zeng Phytic acid, an antinutrient that binds to calcium and other minerals, making it hard for us to absorb it.
Boiling has been known to kill some harmful bacteria that doesn't tolerate heat.
The same reason you boil beans that aren't turned to milk. You wouldn't eat raw pork just because it soaked over night in water and was blended, right?

ahhh thanks so much for your information! but can i just use water from bottle water drink?
You don't have water filters in your country?
Can I soak my almonds a week and keep them in the refrigerator or pantry before using? If so do they have to stay in water?
When you rub off the skins do you take the skins out and throw them away? Or leave them mixed in with the beans?
My 18 month old boy LOVES soy milk. I had to try it and see why and my goodness, it’s actually good! I’ll definitely try this at home. Thanks!
Todd can you make this ahead and freeze it for later consumption?
In Korea they cook beans first and then blend. Cooking beans can be tricky at times, so I have to say two thumbs up for your method. I shall try this. A post on tofu in near future? Thanks.
I strain it after cooking. Do you know what the difference might be?
I did it 3 days ago follow your measurement and its turned out very delicious.. Thank you
vithya rina where is the measurement? Can you share pls? Thank you
Hi Todd, is the ratio of soybeans to water (1:3) for dry or soaked beans? Thanks!
i cooked my soya beans after the overnight soak for 3 hours can i then add water and mince and skip the 20 m boiling time ?
Thanks
You can if you want to.
Plus when you boil it,thin film is called tofu skin or milk skin
hey todd thnx a lot i just made soy milk yesterday & it was outstanding whole family enjoyed! One question y v have 2 keep removing that film forms over the milk whn cooking it? Is it bad 4 health or..??

wow , your great and the way you simplify your steps make it easy for me to follow thanks
I just saw that you can make tempeh with the leftover pulp. Doesn't look like you have a ton of pulp, but just wanted to throw out there that you could process it a little bit and it would be edible.
I have ever did that when I was young is very delicious and healthy too

Hi Todd, nice video.
Just a suggestion, you need to you hot water when you break down the soy bean in the blend. My mother says hot water will prevent certain enzime activated. so the soy milk wont produce unpleasant smell.

Thanks..beautiful presentation
Its a really interesting video. Very useful. I have a question about the milk. How many days can i preserve this in the fridge? Usually Silk soy milk comes for 7 to 10 days after opening.
interesting to see how different soymilk recipies can be.
whenever I make soymilk I boil the mixture without removing the pulp first. That way I can use the boiled pulp to make veggie burgers. I also add about 1/4 teaspoon of baking soda pr 1.5liters of soymilk in order to stop it from curdeling when I add it to hot drinks.
you know, you amaze me with every fantastic idea you dream up!
You do need it. Other types of cloths are not to good as they may and will leave bits of them selfs in the milk. Just search online :)
I recommend boil the grain before to destroy a part of bean goitrogens compounds
