This is really good! I've made this a few times now and mixed it up with a combo of passion fruit puree, meyer lemon juice,or regular lemon juice in addition to straight up lemon juice. I've also made it in a souffle dish rather than individual ramekins and it comes out fine. The water bath is worth doing, I think it keep the cake moist. One of my favorite recipes and you can cut back on the sugar a bit too.

She made these lemon pudding cakes in the winter and we all loved them so I thought I would try today and used your recipe, following it to the letter. When I was growing up, my mom would make this but she bought the Betty Crocker Lemon Pudding Cake Mix and also the Chocolate Pudding Cake Mix. That was my introduction to this wonderful tasting dessert. Now I will be making this from scratch. Takes me back to childhood days.
I made this today for tea and everyone loved it! It was indeed a surprise but it was a yummy surprise. I dont have ramekins so i used a large dish instead and i was nervous to see the results as i couldnt test one first before serving to my guests. I reduced the lemon juice to half of what you used because i prefer it less tart. Im definitely making this again this week!

This lemon sponge pudding looks so delicious, I just have to try this. I'll have to experiment with a couple ramekins because I want to use my Instant Pot electric pressure cooker. Anything requiring a water bath can be made much quicker in the Instant Pot, so I'll find a similar recipe for the timing. I'm guessing, for now, the same time I used to make your pineapple upside down cake in my Instant Pot. I can always use my torch to add a little color to the top of the cake altho I know it won't be visible under the whipped cream. I love having another reason to make fresh homemade whipped cream. Made this when i was 17, many years ago. No mixer, learned how to whip egg whites for the first time (did it by hand, took like 10 minutes) and how to bake with a water bath. Good times

Too much for me, but if I were just starting out in life, I think it would be a valuable and exceedingly useful investment if one enjoys cooking a lot. I think you are a perfectionist. talentlover2 this is an old family favorite in our house, known as the "Lemon Thing" . My mother made it regularly. I often mix the cake part in the food processor or blender and the egg whites using a hand mixer. I have 2 sets of beaters for my hand mixer so sometimes I use it for both parts. You don't need anything fancy to make this. If you don't have ramekins, put it in a deep souffle dish or a 9 x 12 casserole pan. Be sure you have a second pan which will hold the casserole though, for the water bath part.
My mom used to double the recipe, place it in a large round glass Pyrex pan, and then placed the Pyrex pan in a water bath. Turned out beautifully, but I don't know what temperature or time.
You removed it too soon from the mold. After greasing the ramekins with butter, I sprinkle sugar and coat the ramekins with it. This makes the unmoulding easier and cleaner.

If I make these the day before and leave it in the refrigerator will it be the same like when it is warm?
These are at their best when freshly made. But I find if I store them in the refrigerator and then reheat in the microwave, they're pretty good.

I am asking these questions because I have a bigger quantity to make for around 35 ramekins.. so I want to make it the day before
I would probably make a test batch and refrigerate them overnight to see if you like the taste the texture the next day.
