- Lemon Sauce Pudding Cake Recipe
Welcome Friends! Welcome back to the kitchen; today I'm going make a recipe that julie and I call a sauce 'n' cake recipe. Most people would probably call it a pudding cake recipe... No matter what it's called, this one is a Lemon Sauce Pudding Cake Recipe.
Ingredients:
60 mL (¼ cup) butter
250 mL (1 cup) sugar
3 eggs separated
Zest and juice of 1 lemon
85 mL (1/3 cup) all purpose flour
2 mL (½ tsp) salt
250 mL (1 cup) milk
Method:
Preheat oven to 180ºC (350ºF).
Grease an 8x8 baking dish, and a bain marie for baking.
Cream together the butter and ¾ of the sugar until light and fluffy.
Beat in the egg yolks, and the lemon zest.
Mix in the flour, salt, milk and lemon juice.
Whip the reserved egg whites, slowly adding the reserved sugar, until smooth and glossy.
Vigorously stir 1/3 of the whipped egg whites into the butter flour batter.
Slowly fold in the remaining egg whites.
Transfer the batter to the baking dish and fill the bain marie with hot water.
Bake for 30 -35 minutes.

Thanks for watching Everyone! Recipe is in the ^^^Description Box^^^. *Yes we are joking about molten cakes... Though they are still ridiculously priced.*
Reminded me of a recipe I found in the Star many years ago. It was called Chocolate Pudding Cake worked well. I haven't seen the the mix in years, Monarch I think. All I have at my end is a GIF file so I don't know how to get it to you.
I bet this would be incredible paired with fresh raspberries, whipped cream or maybe a cream cheese icing or glaze on top. Maybe throw in a drizzle of raspberry sauce on the side. Or poke small holes in the top and pour in some raspberry gelatin, chill it so the gelatin sets up. Mmmmm.
Mary from #TheFreyLife sent me here !!
@@georgemoore5307 web@legourmet.tv is his email. Just send the .gif as an attachment! It sounds delicious!
Can u substitute milk for coconut milk or non dairy milk? It looks good but I can't have dairy?
I made with a orange. ( Didn't have a lemon Handy) my wife said it is amazing
Mmmmm 🍊🍊🍊😋😋😋
I have oranges on hand. Thanks for the idea.
I am gonna try it with oranges too. Sounds wonderful
Sounds yummy!!!!
Wow, thank you. I made this at school when I was 12 (I am nearly 56 now). My mum was amazed when I brought it home. Long forgotten, but will attempt it soon.
We call it lemon delicious in New Zealand, at work we stew Rhubarb and serve the lemon delicious with the rhubarb and pouring cream... its fantastic.
That sounds so good! 😋
Yep, I know of it as Lemon Delicious, too. Another shared Aus/NZ thing.
This is kinda similar to a family cake we have in some old hand written recipe books. Ours is more of a sauce bottomed cake rather than anything else. and the method is slightly different, but the intended more or less outcome is the same. Sauce on the bottom and slightly mixed into the cake above.
We make an orange sauce and pour it into the bottom of the dish, then pour the batter over the hot sauce and straight into an oven. As it bakes the sauce stays about maybe 50% at the bottom and the rest bakes into the cake. But the cake itself doesn't become super wet or anything.
It is a recipe from my grandmother who adapted it from something similar her mother made (I don't know if I have that recipe but I believe it is an old Afrikaaner or Dutch recipe. )
EDIT: Recipe now included below.
Main cake recipe:
Ingredients:
3/4 cup self raising flour (250ml cup not packed. Sifted. I will try and convert this to grams the next time I make this)
1/2 cup sugar
1/2 cup milk (full cream milk is best)
1/4 cup melted butter
1 egg
1/2 teaspoon Bicarbonate of soda
1 Tablespoon Orange zest
1/2 teaspoon salt
Batter instructions:
Beat eggs and sugar together and add in melted butter. Add the rest of the ingredients except milk and Bicarbonate of soda. Add those last. No need to mix a lot. Mix till it is combined nicely.
Sauce recipe:
Ingredients:
1 cup water
1/2 cup Orange juice
1/2 cup sugar
1 teaspoon butter
pinch or two of salt
Final Instructions:
Add all sauce ingredients to a small pot. Cook till the sugar is dissolved and then for one more minute on simmer.
Remove sauce from heat and pour into an appropriate sized dish. (There is no recommended size but something around 25cm square and 8cm deep is more than enough for this batch size. )
While the sauce is still warm (although it can be cold), pour the batter over the top of the sauce gently.
Some sauce will be on-top of the cake batter and that's perfectly fine.
Bake in an oven at 175 Celsius (around 345F) for 20-25 minutes.
Serve warm or cool.
Personal notes. We like to double the sauce amount but only 1.5x the sugar amount in the sauce. For an extra saucy underside that isn't so sweet. But this recipe is very much up to your discretion and you can change oranges out with lemons or something else citrus.
This is the re-written version of the recipe from my mother who write it down in 1990. My grandmother wrote her version (updated to make use of temperature controlled ovens funnily enough) in Afrikaans between 1950 and 1960.
That sounds good. Love orange.
@@anitapaulsen3282 Updated the post to include the recipe since I had to steal the book back from my aunt this Christmas.
Thank you SO much for this--I love handed-down recipes. ♡
This is exactly what I have been looking for!!! Thank you so much for taking the time to write all of this out. 🙏I am definitely going to try this! 😁
Martin, very kind of you to share! I am copying to make this one also!!! Thanks!!!
I'm going to make this for Thanksgiving. My MIL passed away recently, and she loved lemon desserts. This will be an delicious way to remember her.
My mother made this as a treat while I was growing up. By the way, it’s wonderful with fresh blueberries on the side.
After the box from my childhood, I bought a cookbook for my children that was written with a Mary Poppins theme. There was the recipe!
over here in australia we call this lemon delicious pudding cheers.
dennis binyon no it's not it is self saucing pudding.
@@PetroicaRodinogaster264 In Victoria it's called Lemon Delicious.
@Cory O'Connor That's the packet version, in several variations (I eat a whole one on my own if allowed, with icecream).
I would love to see a butterscotch version of this!
I’m thinking it could work with
Dulce de leche! #Yum
Australian here, delicious recipe thanks.
We call them self saucing puddings because they essentially make their own layer of sauce.
Tried this a few weeks ago in a pinch to return a neighbor’s plate non-empty, and I couldn’t be happier to have found out they were on holiday. For the time and effort that goes into making it the end result is unbelievable. It’s certainly one of the best desserts I’ve had. I can’t wait to try out other ingredients like sour cherries and plums!
This was in the Soufflé recipe book my father gave me as a 'leaving home' present, 50 years ago. It was called 'Lemon Pudding Souffle' although the book acknowledged that it wasn't a true soufflé.
Glen separates his eggs over the whites bowl like a boss
Holy cow this is amazing. I made it twice in two weeks. The second time my lemon was pretty small so I used a lemon and a lime and added a dash of vanilla! Tasted like a lemon-lime creamsicle. This recipe goes on rotation for sure.
My favorite dessert from my childhood.
A cake with lemon goo under the crumb? Oh, I am so with that idea! 👍
I’ve been looking for this recipe for years! My mom used to make the “sauce n cake” from the box when I was a kid. I could never remember what it’s called and no one ever knows what I’m talking about when I try to describe it. Thanks!
Those boxed pudding cakes were great back in the day .
We made a double batch and used an orange and a lime. It turned out amazing. We can't wait to eat it all so we can make another!
Made this exact recipe today. The heading is correct! I almost ate the whole pan. Absolutely delicious 🤤. It my top dessert now! Thank you very much for sharing.
In UK I’ve always known it as “Canadian Lemon”. I thought a Canadian cook would have called it thus. It’s a fabulous pudding.
It's kinda like "French fries", they don't call it that in France.
Or “English muffins,” I’m imagine, or “Dutch ovens.”
soon as I saw the milk in a bag, I knew this was a Canadian show. Cheers from California!
I too grew up with the boxed version. It also came in apple and caramel flavours. I love the lemon.
My mother-in-law makes a version of this, I think she calls it lemon delicious. We're in Australia btw 😁
Greens' self-saucing puddings are a staple down under. Probably the first thing most kids learn to bake. And yes, the lemon one is the most popular.
Was coming to point out our self saucing puddings. Seems I was beaten. From a packet, or from scratch, always dead simple, always hit a good spot.
they’re great! i think they’re a bit different to this version since there’s no extra sugar and hot water added into the cake pan after the batter.
Love Greens.
Love 'em
I was seeing if someone mentioned our good ole self-saucing pudding. A lemon self-saucing pudding was one of the first things I learned to cook, from scratch, as a lad in the early 80s. Now it's heading into winter, it's time to make them again, and serve with freshly whipped cream.
Jules is a trooper, shes always down to try anything in the kitchen.
I love this lemon pudding. My mother discovered it in an American cookbook when she lived in the USA back in the 60s. Thoroughly recommend it.
PS I'd use a deeper bowl and put cold water in the Bain Marie. If it cooks too thoroughly you don’t get the sauce at the bottom.
@Gaudia Certainis Sorry to sound so cooking dumb, but can you explain further? My wife and I had a fantastic lemon Cake with a sauce on the bottom 18 years ago on our honeymoon. I'm going to be brave and ATTEMPT to make it for her for our anniversary next week.
I really want the sauce.
@@JamesWSmith-sj2zg i think the original poster is saying that the whole purpose of the water bath for the cake is to slow the rate at which it absorbs heat because that's what ensures that you get good separation and sauciness at the bottom so using cold water instead of hot to start is probably better.
Ok i just made this, it definitely came out more custard-y than sauce, even starting in cool water.. it's delicious but it might just be the recipe, i've seen others posting about their recipes for sauce bottom cakes include pouring water and sugar over the batter before it goes in.. maybe a recipe like that would result in a saucier consistency
James W. Smith You’re a gem.
I made this and it's excellent! I had a nice-sized lemon that provided a lot of zest and juice. It came out tasting like a fresh lemon.
I can't wait to try this. Never heard of it. You're a keeper. Married 45 yrs and hubby can't find his ass with both hands in the kitchen. Many men cook but few bake. Mine can do neither but I can and that's why we've been married 45 yrs lol :o)
Outstanding and so simple to make. Instead of lemon, used an orange and some rhubarb to give the needed tartness. Used half Stevia, half sugar with good results. Thank you for great recipe and clear instructions.
You are so blessed, Glen's wife, he is cute and can cook/bake. May you both have many happy years together.
Saw this by chance and made it immediately.....delicious and so easy to make. Thanks for the recipe.
I love lemon anything. Thanks.
There was a recipe for this on an egg carton I saved from years ago . It is definitely saucy . I will have to check and see hat is different .
I made this today with brown sugar because it was all I had. It came out great. Thank you.
Love this. Based on the old fashioned "Half-hour Pudding". Mom made them often as they were quick and easy. I remember 'Sauce 'n Cake'. Great to hear you call the seeds "Pips". Thanks for sharing.
The title sure aint a lie, I can say that much!
Had my doubts tasting the batter, honestly. Added a couple small pinches of citric acid and hoped for success. Came out wonderful!
Flavor concentrated nicely after the bake, and 3 of us managed to demolish it
This was delicious, quick. Satisfying. Fixed my lemon craving. Thank you.
In NZ this is often known as Lemon Delicious. In tough times I did occasionally serve it up as the main course with the instruction to the kids 'If you don't eat your pudding (dessert) you can't have any dinner!' It always worked. And now I live alone i sometimes tell myself the same thing, Best served with lashings of cream, the pouring variety. Go easy on buttering the pan, the crusty bits on the edges are the cook's treat, And yes, I can still manage a whole pan, but it is also great for breakfast.
My sister lived in Longlac for many years, her husband worked at a pulp mill. My Grandmother made us these cakes/puddings she also made a brown sugar version and a chocolate version, brings back memories.
Glen, I remember my Mom making this when I was young. My parents were coming for supper so I made your recipe today... and it was delish !!!
This looks so delicious! Thank you for sharing the recipe, and for transcribing it out of the metric system for us Americans.
Looks delicious. I will make. Thanx.
Lemon self saucing pudding is one of my all time faves. The chocolate one is pretty good too. Come to think of it, the butterscotch is pretty darn good as well! I’ve never seen a recipe for it though, what a treat!
My mum use to make these as comfort food, havnt thought about it in years ty Glenn might have to try the recipe
Love the Canadian Air Force hat, great recipes and stories, thank you.
Just made this dessert and the wife and I are hooked! Such a wonderfully light after dinner treat! Thank you!
I am SO glad YT recommended this to me! I've never heard of this, but it looks and sounds wonderful! Subscribed.
Can’t wait to try!
How weird am I that watching you lick the spoon or beater and then nod your head at how good it tastes, makes me happy. It could be "A Canadian Heritage Moment" on the CBC.
I saw this recipie on RUclips here in Australia (A Canadian expat) and remembered those boxed pudding cakes from the 70s and thought we have a lemon tree out back and a friend who needs a pick-me-up. The cake turned out perfectly and we delivered it to our friend's door and the report was it was a success. This will now be a go-to for a simple homey cake. Thanks!
Today God’s willing. 👋🏻🥰
Thank you for sharing your recipe.
I just made this. Its incredible. My mom used to make this but the recipe was from a jamie oliver cookbook. Not gonna lie this is 10x times better.
Made this today with lemon and lime, and I used a cold water bath. Quick, easy to put together and delicious. Husband did eat most of the pan. I remember getting those boxes of sauce and cake back when I was a kid in the 80’s too and thought it was the best thing ever. Mine was still more of a custard on the bottom, but that’s okay.
My mum used to cook this and it was one of my favourite puddings growing up. She used to call it a lemon upside down cake. Thank you for taking me back to my childhood!
I saw this recipe this morning, and I just HAD to make it. It's in the oven right now :) Glen thank you so much for introducing me to my new hobby (cooking)!
Looks great!!
Make sure you clean the beaters after the butter creaming. I left them with butter on them and my egg whites didn't stiffen. Still worked really well though, definitely making again. Cheers Glen!
Looks delicious! Hello from North Bay area!
The Frey Life sent me. Looking forward to this.
Just made it today (joys of working from home) and utterly delicious. Used over-ripe limes instead, because our tree is currently going crazy and they're quite mellow. As Dennis Binyon mentioned below, appears to be called Lemon Delicious in Australia. You'd think I would know that, but as a child of European parents, I have missed some of the more common Australian treats. Really simple recipe, took me 35 minutes from scratch and included some cleanup. Highly recommended.
This looks awesome
Love Sauce and Cake it was first thing i thought of and hoped this recipe was. They were soo easy to make and soo tasty. The Cinnamon one was great also
trev N there was a caramel one too... yum
Yet another new viewer sent by The Frey Life! 😁👍🏻
Looks like there are quite a few of us here.🥰
I made this for my family on Christmas morning. We all loved it. Thanks, Glen! Merry Christmas! 🌲
Just made this. I messed up the egg whites by getting some yolk into them but I frothed them up as much as I could and incorporated them and baked it. It came out just fine and probably was slightly less airy then you got it! Great recipe. So simple with great results!
Hi Glen! We have a similar thing here (slightly different technique) in Tasmania we call Chocolate Self-saucing Pudding. Most school kids from the 1950s - 90s would've learned to make it at school from the Central Cookery Book - a book that dates back to the 1930s and served as a cooking and Home Economics text book for Tasmanian schools for ~50 years and has had 17+ revisions. It's fascinating to see how the contents has evolved over time. Thanks again for the wonderful videos.
I have eaten this dessert all my life in our house its called a lemon delicious pudding and is a family go to every time
I will make this for my husband, thank you for the recipe.
Eating the entire pan.... how true! I make this with Stevia and rhubarb (add lots of finely grated orange rind) and it is an amazingly satisfying dish, easy to prepare. LOVE IT. Thx
Back in the day there was a recipe on the box of Grape-nuts cereal for lemon pudding cake and it was delicious. Oddly the Grape-nuts cereal worked in it despite their hard crunchy texture.
Known over here in Australia as a self saucing pudding. I do versions of chocolate with boiled water hot cocoa sauce in a large coffee or soup cup in the microwave. Basically mix a cake batter in a cup with a sweet sauce. Cook for 45 sec to 90 sec dependent on power of microwave. Indervidual puddings...... easy and great for kids. Just be careful cups hot.
Oh man..apple cinnamon sauce n cake..I can still remember the smell and taste from my childhood. My mom would buy those when they were on sale for $1 as a quick easy weeknight dessert..I’m 39 and that is also over 30yrs ago 😅
I absolutely need to make this! Looks amazing.
I made this to take away for Easter. Except I substituted Swerve sweetener for the sugar and almond flour for the wheat flour. Kept to my low-carb diet. It turned out fantastically. I loved it, and apparently so did everyone else as there was none left at the end of the day.
Just made this today. My husband and I love it! Thanks for the recipe.
This sounds amazing! I can't wait to make this. "The Fry Life" sent us over to watch n learn how to make this. Mary is cooking up a storm in her kitchen and singing praises over your recipes.
There Is Always Pouding Chomeur. It Is Very Popular...

Mary Frey sent me !! So glad to be here.
Just made this recipe today - so simple but so good. It is made up of ingredients that most people will already have in their pantry. I served it with a scoop of vanilla ice cream and some raspberries. Many thanks!
Wow, just, wow! I made this today. I had my doubts while making this as I have never made anything like this before. Cakes, cookies, pies yes but not this. It is really, really good! Thanks Glen for sharing this one!!
This is the Best Dessert Ever. Pure ambrosia. In my family, we call it lemon cups, because it is baked in custard cups. The second best is Cottage Pudding, which is a pretty firm cake with hot lemon sauce poured all over it. I think you’d like it.
I’ve also made a chocolate version of pudding cake. Good, but doesn’t hold a candle to lemon cups.
Ahhhhhh memories of the drive: Geraldton-Long Lac/Long Lac-Geraldton😎👍👍NOW, any cake that holds a place in your heart is to be made. For the New Year's table!🥇🏅 Thanks Glen, you are the dynamic duo!😉😉 Merry Christmas!
Found you today via Frey Life! Looking forward to looking around your channel!
Love lemon pudfing cake. My mom also used the package mix but I've done it by scratch for years. I also have a chocolate version that's to die for!
I so like her judgement appears honest . And I luv how he makes stuff that's yuky too I try making the good stuff 😉
Hi Glen, Hi Julie. My mother used to make this dessert. She said that my grandmother said that the amount of butter should be the size of an egg! Mom also said if you needed to make it for more people, just add more milk. She also made a chocolate version. It used an orange instead of the lemon plus cocoa.
I got the shout out for your site from the Frey Life. I made this today for our Easter Dinner tonight. It looks and smells so good. Thank you.
Looks mouthwatering! Merry Christmas, have a great 2020!🎄🎉
My goodness. That looks incredible!
Sometimes my favorite part of watching is seeing Glen taste the spoon before putting it into the dirty dish bin.

Just made this, added juice and zest from an extra lemon. This is perfect. Thank you.
Excellent ! ❤❤❤😊
i love myself a lemon sauce n; cake ... glad you showed us how to make it yourself ... kuz i have been trying to cut out a lot of pre-processed things ... like desserts, cheese, margarine, and other preprocessed 'boxed' things
