Tip: if you add a tablespoon or two of syrup to the bowl before you add the sponge mix, you end up with a syrup sponge.. you can also use jam. mmm lovely

Again this was the first sponge I ever made and was so insanely good I nearly ate more than I could handle.

Being a complete novice I wanted to try this pudding and it turned out just great. But, silly me, my first attempt was a disaster, I added far too much milk (my notes suggested 10 x more milk) but even a novice can cook that pudding (with your help), well done you
Thanks for this, mine is now in the microwave - I added cocoa powder to give it some colour, so fingers crossed! Merry Christmas! 🎄🎅 Edit: Just added hot custard, it's delicious! ☺
Hi jim you must blend butter and sugar till fluffy this is how you get a soft moist sponge, the longer you cream it together the lighter the sponge will be....just saying i might give this a try, i make the cake in a mug method the 1 minute cake, and i enjoy them so im def gonna give yrs a go, thankyou for sharing , mandy from the North East England x
Somebody please give old Jim a spatula for Christmas, and teach him how to use it to scrape out the mix as well as mix around the edge of the bowl when mixing!
