This also takes me back to my school days. Is this recipe suitable to be cooked in a boiler - I inherited a metal pudding bowl with clamp down lid that I still use now and then.
Hello john. Wondering if you could help, because I'm quite adept with cooking, but I had a problem with this pudding. Now I has the exact correct size pudding bowl. But it over flowed and spilled in the oven. Also went brown to quick. I followed your temp of 150 in a fan oven and placed it in the middle. Here's what I think it 'may' be. The oven is running even hotter than yours on fan assist. So maybe it's rising too fast like a Yorkshire pudding does when you put it in hot oil and put it to 220c Or is it on broil not fan assisted? It's a fan with a line above and below it. The baking powder is German. Is it more potent than British? Thanks for your help
I made a treacle sponge last week and have just made the jam sponge. On both occasions after 50 minutes it wasn't fully baked, as there was still batter visible towards the bottom. I thought my oven ran about 20 degrees higher like yours, but maybe not. Tried 150 the first time and 160 this time. Back in it goes for a 20 minute rescue attempt!

Vanilla pudding in the UK is more like Blancmange than custard. Also similar to confectioners /bakers custard,. You can usually find cans of Devonshire custard or Birds Custard Powder in a supermarket with a decent international food section.

John there are two versions of pudding here in the USA, instant and cooked versions, the cooked one is better suited to warm deserts. Fan assisted stoves are commonly called convection ovens.I My mum made jam puddings, my fave was rolly polly there was something about that stodgy steamed pastry that I loved after eating my tea 😍 unless she made it with raspberry jam 😫 as I don't enjoy large pips in my jam at all. I just made Lisa's from Sutton daze, winter jam recipe. OMG it's wonderful sweet and tangy just fab on my home made crumpets (I can't buy them here locally). Take care looking forward to the next school pudding (semolina or rice pudding in a bowl with a blob of jam in the middle comes to mind😄😄)

We don't have pudding bowls in the USA. This reminds me of a quick bread. So could we use maybe a silicon baking pan as that is nonstick. I know the British hubby would love it. I'm still promising him homemade custard.

I find the sponge is moist when covered and cooked in a bain-mare. I not questioning your culinary skill. I like the substituting oil instead of butter, I look forward to making it 'my way'.

Yes Dave, my oven is fan assisted. All ovens have a slight difference in temperature, some running hotter than others.

Hi John, quick question: Can you replace the oil with butter for more flavor? Or do half and half even? Would this result in a dryer sponge?
Using butter is different procedure all together, watch my Victoria sponge recipe for a example of what I mean.

I find the sponge is moist when covered and cooked in a bain-mare. I not questioning your culinary skill. I like the substituting oil instead of butter, I look forward to making it 'my way'.

I’d love to see a spotted dick recipe. I loved that cake when I was at school but have never eaten it since. I bet you could do it justice and would love to follow that recipe. By the way I’m on about my ninth banana and walnut cake, it’s such a great recipe, my only difficulty is softening the butter! No microwave you see... Thx again you’re making a baker out of me!
