    Hi Stephanie, I really love this recipe & have made it many times. It's super easy & great when you make the mergurine the day before, delicious!! I'II definitely make this again in summer, we are in the middle of winter in my part of the world, thank you so much for the reminder. I haven't made this in a long time.     I made meringue cookies several months ago when I had some leftover egg whites after making a pudding. They were delicious! I definitely need to make some again.

    In Venezuela we have something similar to this, it is called merengon de fresas (big meringue cookie with strawberries) and it's more structured then the eton mess because you layer the meringue cookies (without breaking them), then the fruit ( it can be any fruit : mangoes, berries) an then the whipped cream (repeat as in lasagna!) . This eton mess looks faster though since you don't have to layer all the components. I would say the mess for a informal occasion and the merengon for a special day! Thanks!

    Hey I made this for christmas and everybody loved it. But I did have a little problem with the meringue cookies. I used cream of tarter and I used a little bit of powdered sugar instead of super fine sugar. And I wasn't sure how long we were supposed to stir the meringue batter. They came out very flat when they were done baking. How long were we supposed to stir the meringue batter to make the cookies stiff?

      The time can depend on the mixer you are using. What you want to look for is how the meringue looks. Did you have stiff peaks like I showed in the video (about the 6:50 mark). Also, you could buy a free standing oven thermometer to double check your oven's calibration. If you're oven is running a little cool, that could be the problem.

      Joy of Baking The batter still kind of looked droopy. And we kept on stirring for a pretty long time. But it still looked droopy.

    Very interesting dessert , it looks delicious. Stephanie how long would this last in the refrigerator before it goes bad, also will the meringue go soft if you keep the leftovers in the fridge ?

      Meringue will break down, like a Pavlova, so I'd suggest if you're not going to eat it right away keep the meringue separate in an airtight container and mix it with the fruit and cream just before eating!

    +Joy of Baking ....I absolutely love your videos and the fact that you use grams is a plus a appreciate! Anyone one question. Sometimes my meringue sticks to the wax paper but I have no idea why? can I use something else?

    Hello! Your videos are so good and your recipes are even better. My hand mixer broke and so I am wondering what stand mixer I should get. I have made the decision between KitchenAid Artisan or the Kenwood KMM011 Chef Titanium Mixer. I was wondering what I should get. Thank you!

    I have a question for you that is not regarding this recipe.You had responded to my query about the chocolate u use by letting me know that you buy guittard couvecture chocolate from chocosphere...but there are so many kinds.Can you please let me know the kind of chocolates that you buy from there that you recommend. I plan to place an order soon.

      Thats just the prob...each type of chocolate has a zillion varieties on the site. I was hoping Stephanie would let me know a couple of types that she always keeps stocked in her pantry from there.

      +Joy of Baking can i bake the recipe of pound cake in 9 inch cake pan? the time of baking would be the same?

      +Sebastian martinez diaz I did mine on a 9inch and it also works but I suggest you do it for 30 or 35 min if it is not ready just add 5 min and check ALL THE TIME.

    Re the name. The cook or server at Eton dropped a strawberry pavlova and had to save it so they just stirred the bits together and created Elton Mess. So the story goes
