I made meringue cookies several months ago when I had some leftover egg whites after making a pudding. They were delicious! I definitely need to make some again.
In Venezuela we have something similar to this, it is called merengon de fresas (big meringue cookie with strawberries) and it's more structured then the eton mess because you layer the meringue cookies (without breaking them), then the fruit ( it can be any fruit : mangoes, berries) an then the whipped cream (repeat as in lasagna!) . This eton mess looks faster though since you don't have to layer all the components. I would say the mess for a informal occasion and the merengon for a special day! Thanks!

Hey I made this for christmas and everybody loved it. But I did have a little problem with the meringue cookies. I used cream of tarter and I used a little bit of powdered sugar instead of super fine sugar. And I wasn't sure how long we were supposed to stir the meringue batter. They came out very flat when they were done baking. How long were we supposed to stir the meringue batter to make the cookies stiff?
The time can depend on the mixer you are using. What you want to look for is how the meringue looks. Did you have stiff peaks like I showed in the video (about the 6:50 mark). Also, you could buy a free standing oven thermometer to double check your oven's calibration. If you're oven is running a little cool, that could be the problem.
Very interesting dessert , it looks delicious. Stephanie how long would this last in the refrigerator before it goes bad, also will the meringue go soft if you keep the leftovers in the fridge ?
