Since Conoe did ask. It’s traditional to boil the pre-baked bagels in a lye bath. It creates a glossy finish and actually hardens the outside of the bagel. It’s slightly dangerous to do but generally makes for a superior texture and flavored bagel 🥯
Baked baking soda approximates the effects of lye, but is less dangerous on the skin. It's still caustic, of course. (Baking soda for a couple of hours in a 350 degrees F oven, on a baking sheet lined with foil. Cool, then set aside. Lasts as long as kept dry in a container.)

Black and white cookies were introduced to NY at a place called Glaser's Bake Shop in Manhattan, which was started by immigrants from Bavaria in the early 1900s. The reason you find them at a lot of bagel places is because they almost immediately became extremely popular at Jewish delis. Bagels as we know them today were brought to NY by Jewish immigrants and made famous at Jewish delis, so the connection remains to this day, even at "bagel places" (vs. delis with a fuller spectrum of Jewish fare).
Before New York was a colony of England it was a duesch providence New Amsterdam. From New York, New Jersey, Delaware and Pennsylvania were one providence of Duesch basically German/Barvaria.

Bacon egg and cheese on a poppy, everything or sesame bagel is one of the things I miss most about NYC. You can get bagels in Chicago but not on what feels like every street corner. 3:41 in Germany those things are called „amerikaner" (funny enough that apparently those things aren't even known in America 😄) And it's not a cookie. It's a fluffy pie with a sugar- and chocolate glaze. It really depends on the bakery but if baked well, it's absolutely delicious. I love them! As far as I'm concerned you put vanilla pudding powder in the dough and that gives the cake an interesting but really enjoyable flavour of vanilla and consistency. It's kinda fluffy but also really dense. Also you form the dough into a ball and place it on a baking tray, that's why it's so flat on the one side but so round on the other.
I was well into my 20s before I found out that black and white cookies are only an east coast thing in the states. We do call them cookies even though, as you describe, they are cake-like in texture. It really freaked me out to go to a bakery in California and not see these cookies.

Care for sharing your story about that horrible summer? A couple of years back, I think I had a similar experience. On the back of a terrible breakup, working a boring and unfulfilling job, I spent the majority of an exhaustingly hot summer in the city, mainly because I couldn't afford going on holiday. I was stressed out, depressed, couldn't sleep properly, and the only things that sustained me were going out for sunbathing in the local park after work, getting pho in the neighborhood, and eating frozen fruit juice pops out of the fridge (sometimes at night, as it was so hot in that flat, without air conditioning).
This is a testament to why people should make stuff at home. You messed up several steps and had to restart. Even still, you probably paid 1/3 of what the bakery would charge for those ingredients and got to enjoy fresh, delicious bagels. Nice job

Homemade looks the best, however a small amount of barley malt is suppose to go into the boiling water. The second one I was drooling for though. Hot bagels! Yum! The last one you visited looks amazing too. I’ll have to check these out next time I’m in the city. Bagels are not suppose to be thick and doughy like some of the bad bagel shops out there 😮. Best

And it's not a cookie. It's a fluffy pie with a sugar- and chocolate glaze. It really depends on the bakery but if baked well, it's absolutely delicious. I love them!
As far as I'm concerned you put vanilla pudding powder in the dough and that gives the cake an interesting but really enjoyable flavour of vanilla and consistency. It's kinda fluffy but also really dense. Also you form the dough into a ball and place it on a baking tray, that's why it's so flat on the one side but so round on the other.
I was well into my 20s before I found out that black and white cookies are only an east coast thing in the states. We do call them cookies even though, as you describe, they are cake-like in texture. It really freaked me out to go to a bakery in California and not see these cookies.

Care for sharing your story about that horrible summer? A couple of years back, I think I had a similar experience. On the back of a terrible breakup, working a boring and unfulfilling job, I spent the majority of an exhaustingly hot summer in the city, mainly because I couldn't afford going on holiday. I was stressed out, depressed, couldn't sleep properly, and the only things that sustained me were going out for sunbathing in the local park after work, getting pho in the neighborhood, and eating frozen fruit juice pops out of the fridge (sometimes at night, as it was so hot in that flat, without air conditioning).
I have trust issues with bagels, last time I ate a one I had an allergic reaction 😔
