Holy shit, 2023 I got laid off from my dream job and went through a bunch of pet deaths; I sat in those exact same benches staring at the church for a good few months, shitty ass gray rainy weather, having an egg and cheese from time to time was the only thing keeping me grounded. It's actually so surreal to know in some different time-space you were in the same boat, hope all is well homie - your videos make life worth living, thank you as always.

Since Conoe did ask. It’s traditional to boil the pre-baked bagels in a lye bath. It creates a glossy finish and actually hardens the outside of the bagel. It’s slightly dangerous to do but generally makes for a superior texture and flavored bagel 🥯
Baked baking soda approximates the effects of lye, but is less dangerous on the skin. It's still caustic, of course.
(Baking soda for a couple of hours in a 350 degrees F oven, on a baking sheet lined with foil. Cool, then set aside. Lasts as long as kept dry in a container.)

Haha very interesting...the black & white "cookies" are made with a cake batter, so they're really soft and they're very popular here in Germany. Almost every bakery sells them here and i've also made them myself several times. The funny part about it is that we call them "Amerikaner" ("Americans") here. 🤣😋

I don't know where they came from, but in Germany the black and white cookies are called "Amerikaner" and you can get those in many bakeries. They're good but super sweet!

The boiling process makes them shiny and is required for a soft and chewy outside. It also keeps them from burning in the oven so they can bake longer and they will be fluffier on the inside :)

the black and white cookie is something we have in all German bakeries. Here it is called Amerikaner (american). But the dough is not at all comparable to a cookie dough. It is much softer and we often only have the icing version.

Lots of people are mentioning Amerikaner cookies in Germany. Their popularity in Germany doesn't explain why he's finding them at bagel places in Manhattan.
Black and white cookies were introduced to NY at a place called Glaser's Bake Shop in Manhattan, which was started by immigrants from Bavaria in the early 1900s. The reason you find them at a lot of bagel places is because they almost immediately became extremely popular at Jewish delis. Bagels as we know them today were brought to NY by Jewish immigrants and made famous at Jewish delis, so the connection remains to this day, even at "bagel places" (vs. delis with a fuller spectrum of Jewish fare).
Bavaria is a German state, hence the Germans chiming in, there are tons of Americans with German roots.

That rainbow bagel is one of those things you look at because it's popular, think "sure guess I'll try it", and then never touch it again.

Bacon egg and cheese on a poppy, everything or sesame bagel is one of the things I miss most about NYC. You can get bagels in Chicago but not on what feels like every street corner. So many other people covered all the other food stuff you mentioned that I'll leave those alone, but glad to hear you got through a dark time. And like, look at you now! Making bagels! Homemade looks the best, however a small amount of barley malt is suppose to go into the boiling water. The second one I was drooling for though. Hot bagels! Yum! The black and white (aka half-moon) cookies are traditional in Jewish bakeries. They're in the bagel shop to make you think that the bagels are also made in a traditional way. Seinfeld Shmeinfeld. I'm not sure that the cookies themselves are anything like the ones I grew up with. Bagels are supposed to be boiled, and I think some bakeries use steam in the oven like in a French bakery. Outside of New York city, people have to add baking soda to the boiling water to make it hard water like New York water.
