If you want more texture, my granny used to use the back of a cheese grader. Not the cheese grading part but like you know those fine holes that makes mush if you use it? Yeah the back of that. We used to call them hedgehogs and not gnocchi bc they looked spiky!

I'm totally doing this tonight. I watched this yesterday and got inspired. I had gnocchi once a long time ago and hated it because it was gummy. Maybe if I make it myself, I can controll that better and make something tasty!
You will know the dough is right if it's not sticky anymore. ;) Try rolling the dough pieces swiftly on the fork in the opposite direction (from down to up) applying a gentle pressure. It's fun because it's like letting each piece roll and jump cheerfully ;) This way you get stronger lines on each piece and a tiny dimple from the pressure of your finger. Guess where the sauce is going to go? ;)
