黄金马友鱼 Deep-Fried Golden Threadfin

  • 不要油浸,煎鱼也是可以的。把鱼炸/煎至金黄色,炸点姜丝小辣椒,再用酱油和糖简单的调个酱,金黄亮丽的黄金马友鱼就可以上卓了!
    分量: 4-5人份
    准备时间:15分钟
    煮时:30分钟
    材料 A:
    500克 马油鱼
    1 汤匙 玉米粉
    适量/1公斤 油
    材料 B:
    150克 幼姜(去皮切丝)
    3条 小辣椒(切粒)
    材料C:
    2汤匙 酱油
    2汤匙 热水
    1茶匙 糖
    准备功夫:
    1. 把玉米粉均匀的抹在鱼上,进油锅炸至金黄色,沥油出锅待用
    做法:
    1. 同样的锅,去掉多余的油/ 留下大概3汤匙的油
    2. 加入姜丝,文火爆炒片刻
    3. 加入小辣椒,拌炒至姜丝变金黄色
    4. 姜丝和小辣椒出锅
    5. 加入材料C,炒匀煮至糖溶化
    6. 出锅淋在鱼身上
    7. 洒上爆过的姜丝和小辣椒
    8. 趁热享用
    Fish is a traditional staple during Chinese New Year feasts. This year, we suggest adding Deep-Fried Golden Threadfin to your celebration menu. Fry the threadfin until it turns golden brown, apply sauce made from soy sauce and sugar, then dress it with fried slices of ginger and a bit of cili padi. Simple, isn't it?
    Portion: 4-5 pax
    Prep Time: 15 minutes
    Cook Time: 30 minutes
    Ingredients A:
    500 g threadfin
    1 tbsp cornstarch
    Adequate/1 kg cooking oil
    Ingredients B:
    150 g young ginger (peel & slice)
    3 pc cili padi (cut)
    Ingredients C:
    2 tbsp soy sauce
    2 tbsp hot water
    1 tsp sugar
    Preparations:
    1. Apply cornstarch on the fish, deep fry until golden brown, drain & set aside
    Steps:
    1. Reuse the same wok, discard excessive cooking oil and retain roughly 3 tbsp of cooking oil
    2. Add ginger slice, saute with medium heat
    3. Add cili padi, fry until ginger slice turns golden brown
    4. Retrieve fried ginger slice & cili padi
    5. Add Ingredients C, fry until sugar dissolves
    6. Retrieve & apply sauce to the fish
    7. Dress it with fried ginger slice & cili padi
    8. Serve hot!

      煎也可以。大日子才油浸,炸油可以顺便炸虾炸肉,就不浪费油了
