I just left Kanagawa Japan after living there for 3 years. I am US military family. I spent a lot of time learning grocery store items, a little Japanese and cooking Japanese foods. I will always keep Japan with me in my heart. Thank you for sharing these videos. We now live in Italy. It brings me much joy to still watch and learn through your videos even around the world. Konbanwa from Italy. Arigato gozaimasu! 🍲🍣🍢🍡🍜🍱🍘🥟🍙🍶
When my daughter and I went to Japan, we found a little Yakitori place in Tokyo. They wrapped chicken skins around potstickers and then fried them. SO delicious!
i love how happy he is and that he jokes around because so many cooking channels are so serious and make it seem like they don't cook for fun. So its always nice to watch someone that loves to cook and have fun. And as always the food looks great.
Fantastical class on how to make this! We have made this 3 times now! Chicken breast sliced 1/2 inch thick against the grain. Then rinse all the meat in cold salt water, pat dry on paper, thread/weave onto wet bamboo skewers, salt pepper and garlic powder, then cook on a cool medium high griddle or shallow skillet. Little bit of vegetable oil. We're still working on the sauce...soy sauce, wortchishire, sriracha hot sauce, bit of brown sugar. Yum! Two chicken breast halves makes about 24 sticks.
It seems as if a lot of people are asking for a teriyaki sauce recipe and I can help you guys with it. Recipe : 1 cup soy sauc e(any kind), 1/2 cup rice wine vinegar, optional 1/2 cup mirin, 1 Tbsp ginger grated, 2 garlic cloves rough chopped, toasted sesame seed oil. Procedure: pour a small amount of sesame oil in pan and sauté the garlic but do not brown it, add in ginger after about 30 seconds then deglaze with the rice wine. Let it get to a simmer then add in your soy sauce + mirin if desired and sugar. Let it come to a simmer and it's ready like that if you'd like a thin sauce but for a thicker sauce let it reduce to your desired consistency but remember this sauce will thicken a little on its own once it's cooled down.
@@en2oh, the easy answer is "to taste"... Seriously, though, with recipes like this, it's best if you taste the sauce before adding the sugar, and start light... like just a pinch. Turn the heat to low, just to keep the sauce warm, because you don't really need to burn anything, just get the sugar to dissolve... It's my experience in these portions, probably a scale of around a teaspoon (ish) of sugar would be either right or really close... BUT when I give it a whack, I'm probably going to start at 1/4 tspn and taste first to see what "judgment" tells me... Ahalia Quintero, up there, claims it was good, so it's probably not too hard to "figure out" the sugar. ;o)
Thank you for showing the homestyle way of making yakitori. Not everyone has a grill, so using the pan is convenient. Another convenience is the ready made teriyaki sauce in stores....many years ago, we made it from scratch.
I’ve got a tip for the people that will grill this. Boil your bamboo skewers for 5 minutes. Let it cool down for about 10 minutes and soak in ice water for 20 min. So boil water before you prepare your ingredients. This way, your skewers won’t get burnt while you’re grilling. Good luck and try this recipe! It’s so good!
Hello, Master Terada! Your explanation of "chicken yakitori" is what I like about your videos - it's not about cooking per se, but also some interesting facts about language, culture and history. Thank you! And, boy, that Yakitori looks sooo delicious!
I have made this hundreds of times. Usually grilled over coal, but also baked/broiled and on the stove top. However, I have never cooked this without marinating the chicken first in the sauce. Usually overnight which makes it so flavourful. This is an interesting twist. Thank you for sharing 👍
Looks really good and he's the very nice Japanese chef I have ever seen, patient and full of smiles. If he were to be my yakitori chef, I would definitely buy him a glass of sake as my thanks.
Chef hiro it's look like american kitchen . I'm a pilipino working with japanese chef for over 5 yrs. Now Happy in the philippines for good. normally I don't subscribe to any channel but I love Japanese food and I love the way the chef explains and the presentation Good work guys and thank you
My boys would love this since they loved eating chicken.. Esp every time I make crunchy teriyaki chicken with steam rice and steam asian veggie on the side. For Teriyaki sauce you need; 3 tbsp Light soy sauce, 4 tbsp cooking sake, 4 tbsp mirin seasoning, half tsp sesame oil, 1 1/2 tbsp sugar and half tsp mince ginger. Mix the ingredients well in together and heated over a medium heat saucepan until sauce is a little thicken. For that extra flavour I always add 1 tsp of Knorr liquid seasoning. Abit like soy sauce but more flavour.
This looks so easy. I’ll make it . I’m making a seafood buffet for family. Sushi, egg rolls, these Yakitori skewers. Shrimp cocktail, fried rice.beef n Broccoli. TY

Thank for this recipe. Sooo I used boneless chicken thigh meat and I cut them into medium squares then I let it all marinate in some sour apple sake with grinned ginger. Instead of scallion I used a white onion cut into medium squares then I grilled mine with charcoal and hickory wood chips. Once its done, I brushed a mix of %50 hoisen sauce and %50 teriyaki sauce and sprinkled crushed dry roasted peanuts.
What's the recipe for the teriyaki glaze Hiro uses? I've always used mirin, sake, and soy sauce but I'm curious as to what Hiro himself uses. I looked for a video for it on your channel but never managed to find one.
Chicken Yakitori is sooooo good! When my family and I were in Okinawa, just outside of Kadena AFB, an old lady made these. She cooked them on her small barbeque grill. All I can say is, "heaven for the taste bud's." Thank you for sharing. :)

Legend has it that there is no camera man.. Hiro is just a ventriloquist, a magician and a master sushi chef.
The cameraman needs to shut the fuck up and let Hiro do his thing. He talks over him too much and doesn't listen.
The cameraman is so dumb haha
