I think Theres specific gluten free flour - you can use corn flour and rice flour for example. Potato flour is also gluten free I think. I am not gluten intolerant but had to cut all wheat gluten out of my diet for a while and those are what I remember. If you use organic flour that’s also apparently different? And there’s wheat alternatives such as rye and spelt flour (popular where I live) which may not be that accessible depending on your region - those may not be gluten free though, not sure.
as a baker who formerly had to eat gluten free and is familiar with specialty diets, the gluten free flour you substitute for typical wheat flours heavily depends on what you're using it in. this all has to do with the differing ratios of protein, fat, moisture, and fineness of the flour. when it comes to baking, i've found that it's best to use a mixture of different gluten-free flours. rice, tapioca, and potato flours are going to be substitutes better suited for baking. i'd recommend doing some research and finding some pre-mixed flour combinations to experiment with (look into Bob's Red Mill). hope this helps!
my fav egg substitute for chocolate chip cookies is cream cheese. i followed this recipe once because we didn't have any eggs and i wanted cookies, and they were SMACK. even better than with eggs tbh. plus, you can eat the dough 😋

I’ve used heavy whipping cream in a pinch and the texture was AMAZING, I whipped it in my mixer to introduce air into it, almost to stiff peaks. It spread perfectly and was soft and gooey on the inside

A really good egg substitute is ground flax seeds, or chia seeds. I did alot of vegan baking for a while and they were my go too. Ground chia seeds are my personal favorite. Its 1Tbs chia to 3Tbs water per egg in a recipe
I used to have s sensitive allergy to egg so we used the applesauce substitute and istg the cookies were the best, I just realised that the reason why I can’t get good cookies anymore might be bc I used applesauce back then :)
So, it's not the raw egg in the dough that you should worry about, I don't really worry about raw egg either. It's the raw, uncooked flour. It can cause a lot of problems.

I use whipped aquafaba as an egg substitute, 3tbsp per "egg". Its how you make eggless meringue. Thank you for these comparisons they are spectacular

I always use apple sauce as a substitute if i need it, its just something i always have on hands and it doesnt affect the baked taste imo

You could try bread flour vs all purpose flour (and other flours too)

I use Greek yogurt when I need extra liquid bc of the brown butter, but I've never subed it for eggs, so this is pretty cool!

You must try using a flax egg, I think it works best for cookie doughs :)

Make sure you’re softening the butter and not actually melting it. The butter should be soft but hold its shape
