HAM FOR BANH MI SANDWICHES | Chả lụa หมูยอ

Vietnamese Ham is bouncy, savory, and aromatic. It goes great in Banh Mi Sandwiches, spicy salads, soup noodles, and so much more.
💡*TIP*
Use a good food processor to blend the pork mixture into a uniform pink puree. It should not be chunky or have bits of ground pork visible, like the one in the video. That's how you'll get a smoother texture for your Vietnamese ham. My blender was not powerful enough too blend all the small bits.

INGREDIENTS
Chilled Ground pork - 2 lb (907 g)
Icy Cold Water - 1 cup + 1/4 cup
Baking powder - 2.5 tsp
Garlic - 1.5 tbsp about 7 cloves
Crushed Ice Cubes -1 cup (150 g)
Fresh Crushed Black Pepper - 1 tbsp
Sugar - 2 tbsp
Fish sauce - 1.5 tbsp to 2 tbsp (depends on saltiness of the brand you use)
Chicken flavor - 1 tbsp
Sugar - 1.5 tbsp
Corn starch - 3 tbsp

Wow, this is something I have never even considered making but it looks very easy! This would allow me to buy pork from a local organic source, which appeals to me. I will try to remember this recipe when my hardy (Musa basjoo) banana trees are flourishing again in the summer - right now they are just winter stumps.
