I see a lot of Daikon pickled radish for sale online, it looks more yellowish, , is that the sane as you're using? The stuff you were using looked more orange/red.... What is a good pickled radish brand? and dried shrimp brand?
The radish I'm using is a preserved sweet radish. The pickled yellow Daikon/radish isn't the same as the one I'm using. The yellowish one you are referring to is sour and turmeric has been added. The one I use is sweet. Here's one I found on Amazon. www.amazon.com/dp/B07GBGDX3D/ref=cm_sw_r_apan_i_QF6TH09VV4E04V6V7XR7 Any Asian brand of dried shrimp will work. Your local Asian grocery store will carry them in the refrigerated section.

Hi, thank you for watching. You can boil the noodles first but it might give you a mushier texture when you go to stir fry. Maybe parboil it instead? The bulk sauce requires 1.5 cups of tamarind sauce. You can adjust the flavors to your liking. Also, omitting the pickled radish won't break the dish, so you can leave it out. Thank you
I haven’t seen any warnings about this on the tamarind pulp I buy. Please proceed with caution if you’re concerned. Switch to a different brand or use 100% tamarind

I fell for pad thai the very first time it touched my taste buds in a NYC restaurant whose white gloved waiters also wear white aprons. The dedicated parking of international diplomatic plated vehicles seemed bullet proofed (it was pointed out to me). I had rose ice cream too. Eversince, that taste of Pad Thai eludes me , driving me frustrated. Genuinely fresh ingredients made the difference I think.

Every channel that shows you how to make Pad Thai sauce seems to be all the same but it doesn't taste close to any of the good Thai restaurants I've been to. Just another basic sauce nothing special
Restaurants use high fire to make their pad Thai, giving it deeper smokier flavor. So sometimes the different flavor comes from the cooking technique. Some restaurants also use different ingredients in their pad Thai sauce, like lemon, sriracha, white sugar, oyster sauce, etc. It might taste good but does not mean it’s authentic. Authentic pad Thai sauce uses only 3 ingredients. That’s why you’ll find many channels making it similar. The distinction comes down to the ratio of these 3 ingredients. Have you even tried making the sauce before you commented?

I made this tonight . Ugh. It was so terrible. How can I make pad Thai sauce better ? I used the tamarind fruit , 2 cups boiled water, drained with no pulp. Used palm sugar and red boat fish sauce. Exactly as you described .
Sorry that you didn't enjoy it. Did you try using the sauce with the noodles? There are other ingredients that follow, such as garlic, shallots, shrimp, chili, etc. that make up the traditional taste of pad Thai.

Can I use All purpose noodles didn't find rice noodles here , please suggest
It won’t be the same unfortunately but you can try. You might need to add more sauce for those kind of noodles.

If you can't find palm sugar, will brown sugar substitute?
I've never tried with brown sugar but I'm sure it will taste fine. You might need to adjust the amounts of brown sugar though.
