      Hi Becky. My mum and I both watch and thoroughly enjoy your videos :) quick question about your oven. Do you cook with just standard convection temps? do you ever use fan forced for cooking?

      Thank you for the lovely video. It's great to see your confidence when you cook. I am wondering if you would consider moving to bees wax wrappers and reusable plastic bags. Both can be washed in a dish washer. They are a bit of a costly output but you could build your collection over time, and move away from plastic wrap, which is not good for human health and nor is it good for the earth. (you mentioned not liking teflon) . Anyway, thank you again, and just food for thought.

    A little tip I learned recently! Line your glass baking dishes with foil. Add your meal and freeze it. Once it's frozen you can remove the frozen meal in one big block and wrap it up and put it back in the freezer. This is so you don't tie up all your casserole dishes in the freezer. When you're ready to cook, unwrap the meal and pop it into your baking dish. Great tip when making several casseroles for the freezer! Always enjoy your videos Becky. Greetings from Canada 🇨🇦

    Dear Becky, may I make a friendly observation and suggestion? I cringe with concern for your safety when you place your left bare hand directly on the point end of your knife and push down! My husband is a retired Executive Chef. He has had to send several cooks to emergency because their hand slipped off of the end of the knife and sliced their palms open! He taught me to place a pot holder or a folded bar towel over the end of the knife to protect my hand. May I humbly encourage you to do the same. I sincerely do not want to see you get hurt.

    That food all looked amazing!!! Quick tip, you can add a splash of water to the pan when cooking eggs and it will get under them and help them to release without sticking. Just a tip I was taught that we use all the time :)

    A fun little add in for the waffles is little pieces of apple or even apple sauce instead of the eggs for a stronger apple flavor. No applesauce needed on top and they are absolutely delicious.

    Hot tip! Add a cooling rack on the cookie sheet when you cook the bacon. It helps drain the grease from the bacon and the bacon still tastes great!

      @@damaxpowerway I mean there’s always a portion of grease that’s going to end up being waste from the cooking process. Using the cookie sheet helps collect it, and then use it for whatever else you’d like!

      ​@@damaxpowerwaymy dad uses his cast iron to cook bacon, then he drains the grease into an empty can from soup or whatever. He uses that grease to cook with. You can store it in the fridge. It keeps his cast iron seasoned how he likes it. Also, some people might be trying to cut back or not like as much fat. Nothing wrong with that. We all eat and cook differently.

      @@damaxpowerway Just means that the bacon isn't sitting in the grease...but I always save that liquid gold!! Also, my bacon doesn't shrink up like it does when cooked in the grease, so my bacon pieces are larger!

    When making eggs for english muffin or bagel sandwiches you can use wide mouth canning rings. Take ring and grease really well. Place rings in a pan and heat with the pan. When pan reaches temp. Crack egg into ring, pop yolk, and cover pan with a lid. Can also do this on a griddle and use a lids to "steam" eggs to done. Also works in oven.

      I line with aluminum foil for easier removal and the ability to use older rings. I butter the bottom (let it melt well), season, crack egg, light season top, cover pan. maintain a water level.

      I use an egg ring and break the yolks then use a chopstick to stir the top so it cooks faster.

    I just started making egg cups for my elderly mom. She has a little fridge/freezer and microwave in her room. She can get a few of these out of the freezer and heat them up whenever she’s hungry. I make them with and without hash browns, with turkey sausage, veggies and cheese. She loves them!!!!

    My favourite thing to make for breakfasts are egg bites. This is going to sound weird, but I crush up some garlic croutons, shred some cheese and herbs, and mix it all up with eggs. You can add various fine chopped veg, bacon or ham or whatever.
    Pour into a muffin pan and bake. They are easy and filling, they freeze well, and you can even microwave them. Way cheaper than store bought, too!

    Hey Becky if you don’t want to reheat in the microwave (sometimes reheated microwave stuff can be rubbery) try wrapping your burrito or muffin in a small sheet of tinfoil and put in your air fryer for 10 minutes at 350 or 400 depending on how your fryer cooks. The tinfoil isn’t actually necessary but it does help to keep clean up to a minimum 😁

    You have such great ideas for meals. We are empty nester now so it's hard to down size our cooking. With you it gives us lots of ideas. We have three freezers so we have lots of room. Your excitement is so great to see. Young ppl these days want it quick and convenient. Thank you for being so good at keeping home and garden traditions alive.

      Even young people find it very hard to cook just for 2 people. Most foods are packaged for a family size meal. We used to regularly cook for 2 or 3 days at a time just because a normal package of meat makes sooo much chili or spaghetti.
      Lots of younger people choose quick foods because they just are stretch thin. Working 60 hours a week plus traveling time to and from work leaves little time for normal household work like cooking and cleaning. I used to leave before 7 am and get home after 7 pm. It doesn't leave much time for the rest of life unfortunately.

      Yes the young adults spend a lot of time in McDonald's and other fast food outlets.
      They can't be bothered with cooking, but with a bit of forethought you can do stuff quite quickly.

      @@michellezevenaar I was raised in a home where we always cooked large meals and all of my mom's recipes are for big family meals. It is sometimes hard to downsize those.
      I'm older now and it's still hard to make some of those. I make my favorites and, yes, eat it for a few days.
      One thing she did teach me though was to bulk purchase things like meat (we only shopped once a month), take it home and repackage in the size I need before putting it in the freezer. After I moved out on my own I just made the packages smaller. You can do that with almost anything. 😊

      @@diannamc367 that's a very good idea indeed! What works well for freezing meats? Plastic bags? Tupperware type boxes? I'm guessing I'll need to label everything clearly of course.
      How did she plan meals for a month 🤔 that's a daunting idea.

      @@michellezevenaar we always repackaged in zip lock bags. They aren't good for long term but great for a couple months or so. I have a food saver now and that will keep it from freezer burn for over 2 years if you ever wanted to take it that far (or lost something in the bottom of the freezer for a while 😅). I can alot of meats now so they're ready to go when I want them.
      We had a regular rotation of meals with some different things thrown in for extra variety or based on the time of the year and availability of some ingredients.
      I wouldn't start with an entire month if you're not used to it and buying that much at once will feel like a fortune if you're not used to it.
      Also, if you can get things in bulk, you can get a little extra each time and have some put up for later.
      And, I forgot to say, if you do freezer meals like Becky you can cook a larger pack at once and put in in different meals for later. I just found some glass dishes on clearance yesterday so I can try that too!😊

I've tried the no knead bread, the baked Oatmeal, made couple of the freezer meals, the whole family LOVED the chicken fajitas, just made up a batch of the pickled red Onions and today I ordered a chest freezer just so I can start storing all these yummy meals! 😋 🙏 breakfasts are going to be a game changer!

    I make a breakfast casserole by lining the bottom of my pan with hash brown patties, laying a bunch of veggies (usually onions and peppers) and shredded cheese, then pouring (scrambled) eggs on top. My 3 kids are vegetarians now, but in the past I also added cubed ham. I did add browned veggie sausage once, and they liked it, too. :D

In case you are interested Becky uses garlic and onion powder in a lot of her recipes and I manages get it, along with some other bulk spices and 25kg oats, from Wilton Wholefoods online. I use the garlic and onion powder in loads of recipes and am so pleased with them

    Here's a quick tip from working in a Mexican restaurant for years. Heat a skillet and cook your tortillas in both sides until they puff up and brown a little. Wrap in a clean towel. They taste better and are more flexible to wrap up. Everything looks great! I'm hungry now

    You've gotten me hooked on baked oatmeal! I made a 9x13 this morning and created four different types in the same pan: dried cherry, banana-walnut, strawberry, and fresh peach. I've been adding flax and chia seeds to it for a little boost of omegas, too. I'll make pancakes and waffles ahead of time and freeze them, hard-boiled eggs, and I'll cook bacon ahead for the week, too. Muffins or a fruit bread (banana, etc), prep fruit, etc. You've inspired me in another video to try a quiche, too. I LOVE your channel!

    We kept spending SO much on frozen sandwiches as an Easy breakfast for my fiancé but I started making breakfast burritos and freezing those instead, its still an easy meal for him and helps me improve my cooking/bulk cooking skills✨

      That's a great project for building your make ahead skills and saving some money! I don't know what you put in yours but when I made a lot of breakfast burritos I kept tator tots around (store brand is fine too). Let them thaw and scramble them up a bit in a skillet, then add in with any other combo...great with eggs and peppers. You can use any frozen potato side or cube up fresh taters and roast them.

    Becky I wish you would have asked about the best waffle maker. The Waring Pro is by far the best waffle maker on the market. Makes beautiful waffles. I got my double Waring waffle maker on Facebook market place for $15.00. My daughter always makes waffles and freezes them for the kids. I gave her my grandmothers recipe for waffles and she never tried it until two years ago. She tried it finally and said she would never use any other recipe. It takes 12 eggs. And you whip your egg whites separately and fold them in. Worth the extra little work. I have had many brands of waffle iron over the years and even the American test kitchen says the Waring Pro is the best. Since 6our going to get a different iron I thought I’d give you my experience.

      Homemade Waffles
      3 cups Flour
      4 tsp. Baking Powder
      2/3 cup melted butter
      2 cups milk
      4 eggs separated
      1 tsp. Salt
      Beat egg yolks for 1 minute. Add milk and beat another minute.Add sifted dry ingredients and beat 1 more minute.
      Add melted butter and beat for 15 seconds. Beat egg whites until stiff. Fold egg whites into batter.
      Makes approx. 10 waffles.
      If you prefer a sweeter waffle add 1/2 tsp. Vanilla.
      I cut the recipe down. Enjoy!

    A great tip for tortillas, warming them through on a pan on med/low heat really helps to get a little more flavor and pliability when making a burrito. It really makes a difference!
    Edit: a bit like toasting your bread, it gives you more flavor that way. Heat on both sides until you see little golden brown spots, and you can feel it's heated through.

      @@nantravis1978 hey Ms. Nan, good question! Usually done before filling and rolling, heated flat on a skillet or cast iron pan. Usually takes about 30 seconds to 1 minute on each side, depending on your heat. Transfer to a plate and heat the rest of your tortillas through. Then fill and wrap as usual!

    I bulk prep breakfast sandwiches for my family and I have found the easiest way to bulk cook eggs for them is to scramble however many you need and pour onto a nonstick cookie sheet. Bake at 376 for 12 minuets or until done :)
    You can add whatever spices or veggies before you pour on the pan if wanted

    I’m a breakfast smoothie kind of gal so having freeze-dried kale powder and freeze dried bananas in jars and frozen fruit at the ready is vital, especially during the bleakest garden times. :)

      In my last years at school, my mum and I would make a huge portion of our favourite smoothie and freeze it in plastic bottles (we always crumpled the bottles a bit so they wouldn’t explode when the water expands while freeing) and I’d grab one as I was leaving the house and had a nice cold smoothie by the time it was lunch time at school. I plan on doing this again once I stop working from home.

    My hubby's favorite is low carb breakfast burritos. I use 12 eggs beat with a little water instead of milk. It really makes the eggs fluffy. One lb sausage, 2 heaping tablespoons of fresh salsa and cheese and put in a bowl in the fridge. Then every morning hubby gets a carb balance tortilla and makes a burrito and heats it up in microwave. He don't like them frozen. So this works out great.

    Something that’s really good too, and good for using up apples if you have an apple tree? If you chop a few apples really small and add them to your waffle mix and then cook them as usual. Makes for some really juicy, fruity waffles without any toppings needed to be really flavourful! My family now actually prefers them to regular waffles. It tastes best if your apples are sour rather than sweet! Thought you’d like it :)

    Becky the best is when you make the burritos wrap them in Aluminum foil then saran wrap. Freeze them and then take them camping. They defrost slowly in your cooler and then You remove the saran wrap and place the foil wrapped burritos on the fire grate and they come out so yummy and sometimes a little charred but the good kind of char.

    I love making egg muffins (what I call the). Basically its an omelet all mixed up and put in a muffin pan, sprayed with an oil, and baked. I put them in baggies after cooled and freeze. They heat up in microwave in a minute ready to eat.

    Try putting a small bowl of water close to where you are cutting your onions. The gases well be attracted to the water instead of your eyes.

    I feel like I've achieve something for my family today!!! I made 12 breakfast sausage sandwiches for breakfast to freeze. Of course I tried one ... and I'm sure my hubby and grandson will sample the taste before freezing. I feel good to know they can just reach in and grab one whenever they are heading out. Thank you for sharing this video. I even bought ingredients today to make the casserole (maybe wraps - not sure) and baked oatmeal. I think this will be the new norm! Bravo

    I bought a silicone Whoopie pie mold off Amazon. It’s wide and shallow and it’s the perfect size for making eggs for breakfast sandwiches it’s easier than making a bunch on the stove (homesteading mom of 6) You shared another great video. Thanks for sharing your life with us.

    I think you can never have too many onions. For breakfast, sauté a large onion, chop potatoes already cooked, mushrooms and then crack two eggs over all this and leave them runny. This is for 1 serving and it lasts me until I eat again around two. You are such an inspiration to many.❤

    Easy way to make muffin eggs is to crack them in a cupcake tin and bake them perfect fit to go on a round bread.

    I love overnight oats. I prep 4 servings in a bowl at a time, then I decide that morning what I want to add for flavor, I.e. peanut butter banana, berries and walnuts, or mango and coconut.

      Why did I never think of that? 😂 in the recipes they always tell me to put everything in when I make the oats, so I then ended up not craving that specific flavour the next morning! Why did I not think of leaving the stuff out and adding them fresh? 😂thanks for the tip!

      @@MISNM0 I have hated oatmeal my entire life, too slimy, lol. My mom stopped trying to make me eat them when I was 7.
      But, I have also wanted to eat a healthier breakfast.
      I started doing the overnight oats a couple of months ago and I love it. They soak up the milk over night but don't get slimy and I can add what ever I want when I make them (I make them 2 at a time) or add just before I eat it.
      It also means I have it to grab and go on my way out the door to work.😊

    I make 36 “Egg McMuffins” at a time for my kids. I bake my meat eggs and cheese in the oven, cool and then cut. It makes it so much easier. The kids love them

      @@sunniertimer598 I use a jelly roll pan, half sheet. I layer deli ham, poor over scrambled eggs (usually 30 or so) and then sprinkle freshly shredded cheddar cheese over it. I baked it at 375 for about 20 min or until the egg is set. Once it is cooled, I cut it and freeze between each English muffin. I don’t toast the muffins until they are going to be eaten. I heat the egg stuff in the microwave.

    I love making breakfast wraps. (Bacon, scrambled eggs, red peppers or piquante peppers and cheese). Mini spinach quiches (muffin size) Then put those in lunch boxes for myself and my boys. Delicious! Making big batches and freezing it. Other things i make for breakfast and lunch boxes are banana bread "cupcakes", cheeze muffins, mini pizzas, chicken wraps and mini pies. Makes my life so much easier. Pack lunchboxes the night before with frozen goodies and they are perfect the next day.

    Hi Becky. I have a tip for eggs for your muffin sandwiches. You can try either of these methods to make it go faster and easier. 1) you can grease up and/or line a cookie sheet with parchment paper and break your eggs directly onto the cookie sheet and bake them. It generally works better if you have enough eggs to fill up the sheet. Bake them at 325-350 until desired doneness. For me it takes about 15 minutes or so. Then you can use a cookie cutter to cut the eggs to size and slip them right onto your sandwiches. OR 2) You can bake them in a muffin tin. Either way they are faster and easier to deal with for me. When I use the cookie sheet method I like to use up the leftover cooked egg white in things like potato or macaroni salad. I'm grateful for all these videos you put out here for us. Blessings to you and yours.

    Overnight oats with chia seeds, almond milk and hemp seeds. I usually eat with yoghurt and blueberries. I make enough for a few days at a time and it takes 2 minutes to prep and get into the fridge. Good go to when there is no time to cook or reheat in the mornings

    I keep my onions in my refrigerator. I don't have to worry about onion eyes while chopping them now. Been doing that for years. Love all your video's.

      I'm always kept my onions in the fridge! They seem to keep longer that way for me, but I never though about my eyes not watering. I've usually never had that problem.

      Why do we get stuck doing the same thing over and over again just because that’s the way we grew up? I never thought to put my onions in the fridge because my mom always kept them in the pantry. Of course they would last longer! Thanks for the idea! My onions will now be living in the fridge.

    Hi! I precook my pork sausage and put it in snack size baggies and freeze it. It makes 3-4 baggies per pound. So nice to add to eggs or make sausage gravy etc. I make pancakes, like, ALL the pancakes. I bake 10 lbs of chicken pieces at a time and make multiple dishes from them during the week. I like to pre-make steel cut oats with fruit in the instant pot, and there's always overnight oats. yummy

    My teenage son is obsessed with breakfast burritos before school. I make huge batches and keep them in the freezer. He would always forget to pull one out the night before and like you mentioned, the microwave doesn't even warm them when they are frozen. I started using the auto defrost button on my microwave and it warmed them perfectly! So if you ever forget like him, just defrost if your microwave has that option.

      Check out a recipe for lactation cookies. Batch making those is also very useful. Considering the current formula crisis in the US it is a good idea to prepare to breastfeed if you can. Unfortunately not all women can even if they want to so definitely spend some time before delivery reading and preparing to give yourself the best chance for success. And definitely don't stress if it doesn't work, a feed health baby is all that matters.

    One of my FAVORITE meal prep hacks is to get some dinner rolls from the store and slice the whole set in half. Since they're stuck to each other, you can get a slab for the top and slab for the bottom, and then you can basically make one big sandwich in a 9x13 pan and cut out the individual sandwiches you want during the week. I have made breakfast sandwiches like this and some chickpea mash sandwiches. Since the rolls are small, I find 2 of the sandwiches makes a good lunch along with some veggies and chips.

      Put in a bowl drained & rinsed canned chickpeas (I try to rub off as many of the skins as I can but it's tedious), mayonnaise, mustard, salt, & pepper. Mash together in a bowl. Add other spices and ingredients as desired. This is a "clean out the fridge" recipe for me - if I have a random unused carrot or half a cucumber, it gets diced very fine and mixed in. I've also put in minced onion, minced pickled jalapeños, etc. Treat it like a chicken salad sandwich if you like. Ratios of all the ingredients are to desired taste and texture. I like things to be about egg salad consistency.

    For Belgian waffles, I add a little spoonful of dry yeast, really helps them «fill out»! Also I add a little plastic foil on the counter, which catches spill, if I overfill it a little… THANKS for great videos from Norway 🇳🇴🇺🇸🤗

    Becky, can you try the tip where you put a wet paper towel out when you cut onions to see if it helps you not cry? The tip is you’re supposed to put a wet paper towel on the cutting board and the chemicals from the onions are drawn to the water in that, rather than your eyes. I’ve seen this claim before, but I always wondered if it really worked. If it works for you I would TOTALLY trust it!! Thanks for these recipes - can’t wait to try them - the baked oatmeal is a huge favorite in our house now!!!

    Fry eggs in your seasoned cast iron skillets and the won't stick. Heat up the cast iron a liitle, then add oil and then the egg. No sticking.

    Regarding waffle makers - I saw on a food show one time where they took leftover Thanksgiving stuffing and put it in the waffle maker to make 4 crispy squares of stuffing, then put on plates and topped each with mashed potatoes and gravy, and turkey pieces, and maybe a dollop of cranberry relish. Another idea is to put shredded hash browns in the maker for crispy potato squares.

    I have the Cuisinart Double Belgian Waffle Maker and it’s AMAZING. It’s not small. You mentioned you got the one you did because it’s small. The Double makes two at once, you can customize how light or dark they get and the waffles are nice and thick with deep waffle print. Making two at once when trying to feed a crowd really comes in handy. I have never gotten uneven cooking and it comes with a scoop so you get just the right amount in each waffle. Highly recommend!

      I use my cast iron skillet to prepare eggs. Whether fried or scrambled, they turn out great. Make sure your pan is warm, not hot, and let your eggs set before you try to turn them. Comes out every time.

    You will enjoy that waffle maker for quickie breakfasts. You can use them to cook scrambled eggs as well, and you can use it for cake and brownie snacks...pour it thin for brownie brittle. Try sweet potato in your next waffle batter and serve it with dinner.

      @@nadiacruel99I'm a lot like Becky and I'm experimental and I don't follow recipes. Let's see...I would start with a bit thinner/quicker moving batter. Maybe with a typical brownie batter as a baseline...go less flour and add some coconut milk or even a little coke or root beer. If you added soda pop or la croix...the bubbles would reduce the need for any sort of leavening (baking soda or powder). I would experiment with a sheet pan in the oven before you adapt it for waffle iron. Pour it thin in the pan. Bake it lower temp and longer time so it comes out dry and crunchy. You could also try that recipe in a crepe pan. I don't know how picky you are to try new things and expect certain results. If you have a house full of teenagers you can get away with more creative pursuits 😜. Chocolate charcoal? Yes please! Hahahah

    Co-incidence… I recently bought a waffle maker for making breakfasts in advance and freezing them. Unfortunately for me the delivery got messed up and a week later the delivery agents have an investigation underway. That’s another week to wait, then a replacement delivery. Patience is a virtue apparently, one I seemingly lack! You can cook eggs on your waffle maker by the way, they appear to cook up really nicely

We have a small kitchen and the only freezer space we have is the compartment above the fridge, but I made space so I could try some of your recipes and have some meals to last us through the heatwave that was coming here to the PNW (we have no air conditioning). I made the breakfast sandwiches, breakfast burritos, Amish casserole and I also made your tortellini salad and Cowboy caviar (from one of your other meal prep videos) the same day. Having meals prepped before that heatwave was just such a blessing. Our favorites are the tortellini salad and the breakfast burritos, but we like all of them and I will definitely make them all again. Thank you for being so real. You feel like family - you’re awesome. ❤️

    Pre-made breakfasts? We love your oatmeal casserole. I also like to have homemade frozen waffles or pancakes that I can just pop in the toaster. I also like making a bunch of breakfast burritos in the freezer

    When I made freezer breakfast sandwiches I beat and seasoned a bunch of eggs and cooked them on a baking pan/ cookie sheet that had raised edges and baked them, then I cut the pan into squares for the amount of sandwiches I wanted to make.

    Best over easy eggs I make in my cast iron. They never stick. I always have it well seasoned.

    Hi Becky, tip with the tortillas: lighty warm the tortillas before you roll them. They will be softer and easier to roll into a burrito, it will also prevent the tortillas from ripping when rolling up. I use a pan and just warm them a few seconds on each side (approx 10-15 sec.) on each side and boom done!
