      On your sweet and sour meatballs recipe, you don't say what the measurement is for soy sauce (it just says 1/4 soy sauce). I've done it twice using a 1/4 cup and it tastes excellent, so I assume that's correct.

    I have to tell you…my dad lives with me as I care for him since he has dementia. He’s not really interested in a lot of foods. I made your fajitas and asked him to just try it. He loved it!! So much he asked for a second one!! Oh and I thought they were delicious as well!! Thank you so much! I made two bags so we have one in the freezer for another time.

      My mother in law has always asked me the same question answer I don't know it's just never bothered me since childhood. It doesn't matter if I chop up 1 onion or 1 bag of onions.

    This has become my hands down favorite channel. I have a habit of trying to direct other channels I watch to Becky especially when they are starting food preservation & gardening, it's so relaxed & I think her honesty about not getting things perfect & learning together is what we need. There are plenty of other channels that are very "watch a pro" based & even though there's obviously going to be mistakes they don't share them & that can be highly intimidating to newcomers, there is none of that on Becky's channel.

      I love that most of the time she doesn’t measure when she cooks. That’s what caught my attention when I first stumbled on her videos. She just dumps the spices in and it reminds me of how my mom would cook. It allows you to learn that it’s ok to be creative and adventurous when making meals rather than stressing about whether you measured something accurately. I’ve really enjoyed watching Becky and am so grateful that she has generously opened her home to us.

      @@aspen6290 The first thing I learned watching her channel was that I didn't have nearly the variety of cooking I thought I did, I'm unusual from most of my family because I actually season my food & I know how to cook but she helped me understand that you can make really flavorful recipes that by the name sound difficult by are actually quite simple & what you need more than anything else is a good variety of seasonings & EVERYTHING is adaptable you just don't want to push it too much with baking when it comes to base ingredients & leveners. She's definitely been an inspiration to hit goals over the summer as well

    I know you admire Ina Garten so much, but I'm must tell you, you are right up there with her in the quality and content of your video's. But you take your video's into the stratosphere because you teach how to grow, harvest and preserve everything too. It wouldn't surprise me at all, for you to one day to have your own television series and become world known. Your personality definitely is very captivating. Look at much all us followers admire, respect and love you. TV needs what you have to offer because these days, in your age group, most don't have a clue how to do any of what you do. 👏👏👏💞

      Deep Freezer tip: get an upright. chests are very deep and food can get lost, and forgotten about (at least for myself, and everybody I know that has a chest deep freezer. ) Also, uprights have a more vertical footprint rather than a horizontal, so if space is an issue, uprights win for that as well I can put 2 uprights next to each other for not only more freezing space but for the same-ish footprint in my house as a horizontal.

      @@maggiemayhem2355 chest freezers hold the cold. Vertical will let it all out every door opening. I know this was 10 mos ago- but if you shop for one, this is an important consideration. :)

    Becky when processing my tomatoes I’ve learned over the years how to best use every part. I roast tomatoes on a cookie sheet, single layer till skins start to crack and color-approx 15-20 min. Let them cool so you can handle them. Use fingers or a paring knife to cut out core piece and put these in a dish for chickens. Now peel comes right off and I pile these up and dehydrate later and use blender to create tomato powder for cooking with. Next open tomatoes using your hands to clean out pulp and juice into a container. I use this to make tomato juice to can by bringing to a slight boil with seasonings like garlic, celery (or seed), salt then straining-seeds and remaining pulp goes in the chicken dish. Now you have left the meat of the tomato for making salsa, marinara, bbq sauce, catsup or just tomatoes!

      there are apps where you can upload the ingredient list from your different recipes and it will calculate the total qty of each ingredient needed to reduce waste when you are shopping - if that helps - then when you get home, you can prep the veggies, measure out the seasonings, etc.

      As a fellow lover of bulk/freezer cooking, what I find that helps the most is doing a pantry clean out first. Taking out every protein, vegetable, sauce, and starch and group them into potential "recipes". Like Becky, I never follow a recipe lol. So most of the time my main goal is just working with what I already have and substituting as I go. If I do come across recipes I'm interested in, or I think my husband would like, I make a checklist of what I already have, what I can substitute, and then what I need. I also have a magnetic weekly meal pad on my fridge so I can plan what I'm going to make that week from my pantry clean out.

    Becky, just a thought for a wonderful show for you to consider... when you're ready to do another live show, why not advertise ahead of time that it's coming and post a recipe that we can all make together while you're live? Posting the date at least a week ahead of time would give us enough time to gather the ingredients before the show. Maybe when we meet for the first time in your new kitchen? By the way, my name is Chrystal and I'm watching from Oklahoma. Love to watch you working in the garden and canning... I grew up working in mom and dad's garden and have very fond memories of being frisked for the salt shaker before we went outside to pick the tomatoes, lol. Not to mention, you're also helping to make common again the art of canning and preserving your own natural food. I just finished helping my mother, who is 77 years old, prepare her crock for making some homemade sauerkraut for canning this year. We're also planning to add some homemade hominy to the canning list this season. Sending best wishes that your new home is filled with health and happiness and that your harvest is more than bountiful this year.

    I am a chef and my freezer meals I use a piece of parchment on top of the food then I put the aluminum foil on top of that, it protects the food from contact with the aluminum foil. In commercial kitchens we usually use the parchment next to the food for cooking.

    I stumbled upon your fabulous videos about two weeks ago. Kudos to you both for sharing and showing us following your channel how to can foods, freezer meals , Garden 🪴 etc. You two are a great team and such hard workers.

    Hi Becky. I would love a video on proper storage of produce. Or even just show us how you plan to store your non canned produce. I have some garlic, carrots, and onions coming in and am revamping my food storage. I’ve only ever grown peppers, tomatoes, and zucchini so I’m a little lost when it comes to squash, alliums, and roots…

    You need to make a trip to Dollar Tree and stock up on aluminum pans for these big freezer days! They can usually be used a couple of times before they have to be thrown away/recycled and it helps keep your glass pans available. And also ready in case you need to take something to a potluck or to a friend.

    I adore how in min 35, she realizes that she left the zucchini in the microwave and forgot to put it in the recipe.
    And the still left it in the microwave!!! 😂
    I'm dying to see if they make it into the Italian stuffed peppers. But, shhh! No spoilers! 😂😂😂

    This brings me to 40 years ago when I was raising 3 hungry kids & going to college at the same time. On a Saturday I would prepare about 10 meals & freeze most of them. It made single parenting easier.

    Out of the blue, I got your channel recommended ... I fell in love instantly! I've been watching multiple videos a day now. I'm walking around the house cleaning, or doing some cooking whilest listening to your guidance! Your cooking is absolutely amazing!     Been watching an Italian who has some info for Americans: salt the pasta water with like 2 handfuls, put a LOT of water when boiling the pasta, don’t rinse the pasta off when el dente, finish cooking the pasta in the sauce, keep the pasta water for the sauce if needed. Changed my way of cooking pasta! 👍

      yes, I learned that on the Netflix 4-part series - Salt, Fat, Heat, Acid (could be in a different order)- she said that the shorter the cooking time, the more salt is needed as it has less time to absorb the seasoning.

    On the peaches save the seeds and start them. You just have to put them in a pot outside for the winter and when they sprout you can put them in a larger pot until you decide where to plant them.

    Love the way you multi task in the kitchen. One suggestion is you stick yellow post it stickers with reminders so you don't forget things in microwaves, freezer bags etc.

    Josh is VERY lucky to have a young wife like you that can cook a mean meal! There are soo many people your age that eat out a lot and or have just like ramen or microwave meals. My daughter when she decides to cook she does a great job too. I know I need to get cracking on some freezer meals my self. It seems like its just soo easy to pull out and get done! Thanks for some great ideas!

    I'm truly amazed at the amount of food you grow and process. You mention your husband and being pregnant yet, I feel you top everyone I know in being self-sufficient with your food. It's like you're feeding 10! I'm twice your age and have that much gardening experience. You've motivated me and I've planted so much since I started watching your videos. I live in Florida (9B) and it's still very warm here. Like you, I 'rebel garden' all the time.

    great episode Becky, going to try a couple of those recipes here! On the RECYCLING ideas for those disposable kitchen items... I save my used plastic ziplocks. Anything that held non-meat frozen items or produce get wiped out and reused for things like bread for going back into the freezer. The less trustworthy things like bags that held frozen meats for example, those get rinsed and let to dry, then when I have to throw something that I know will smell bad before I take out the trash, already smell bad, or might attract animals to our garbage can, thats what I use those for. So many times Iv been super grateful I thought to save bags for things like a greasy bit of hamburger fat, or that old smelly pizza we pushed to the back of the fridge, or the tuna can that I dont want to smell for the next 24 hours before garbage goes out lol.

    If you really want to use foil pans, go to the Dollar Tree around Thanksgiving and stock up. You can get all kinds/sizes and sometimes multi packs for $1 or $1.25

    Becky, bone in anything always cooks through without drying out by slow cooking half time in oven, then transfer to grill and coat in marinade.
    Just use a tray and paper at 325 while you work on the house before quickly grilling.
    Thanks for the idea's.

    HARVEST PRO SAUCE MAKER is what I use to make tomato puree apple sauce etc. Its a huge time saver! After par-boiling your produce for 10 mins, the machine removes the skin & seeds from the puree! TRUST ME !! YOU WILL LOVE THIS MACHINE WORTH ITS WEIGHT IN GOLD ❤ from a 20+ year canning veteran 🥰🌻

    I'm a teacher in AZ and we are headed back to school this week. I used to live in WA and came across your channel. I've watched alot of your videos over my summer break and you have inspired me to make some freezer meals. I just got done with a lasagna, stuffed pepper and breakfast sandwiches. Im also going to make some meat loaves and the sweet and sour meatballs in a bit. Taking a break for a little bit right now lol.
    These will be so great to pull out when im home from school and the gym. Absolutely love your channel and love seeing my home state. Thank u for all your inspiration.

    Tip for fresh ginger… wash and store in the freezer, then grate on a microplane grater from frozen. No peeling!

    Becky- I use parchment on top of the food- then the foil. I find tomato, lemon, acid product disolves the foil. Plus it keeps you from not having to loosen your foil before baking.

    I just made 22 freezer meals today. Chicken. Beef. Pork. Vegetarian. Quiches. Lasagna. Yummy. We both work 40 plus hours a week. So anyway we can get help is great for us. Thank you for the inperations

    This is soooooo inspiring!! Everything looks so delicious. Love that it’s all REAL ingredients, most frozen meal preppers just fill plastic bags with store bought canned stuff like cream of chicken soup and call it a meal prep.     Hi, I forgot about grilled corn in your bbq video. I like to pull back the leaves and silk without tearing it off. Then lift it back up to cover the corn. I soak the ears in a container of water for a while and then grill. The leaves and floss protects the delicate corn. 🌸

    I’m trying to explain to my mom how you make 20+ dinners, equaling around 50 meals, making it look so easy, practical and fun. I need a bigger freezer, garden, kitchen…. we need to move. 😩 I need to figure out how to start small. You are an inspiration! ??? Can you refreeze the lasagna after it’s been baked?

    I just had an epiphany because I’m low on meats at the moment but I want to make the marinades…. That you could just freeze the marinade in a bag or in a jar(which could help reduce plastic!!) and then I can just add them to the meat as I get them!!! So excited to try these marinades!

    Can't wait. I love freezer meals, but I only have a small freezer. Boiling chicken right now so that I have chicken broth and chicken for salads and sandwiches, so there won't be much space left in the freezer after I do that.

    Tip for making any homemade tomato recipe that needs to cook down and thicken. After I blanch my tomatoes I cut them in half horizontally so to cut thru all the cells and squeeze the seeds out and let them sit in a strainer to drip off a bit. Then after I run them thru my mill I pour the sauce in a honey strainer to get even more water off. I know it is more steps but it has cut my cooking time more than in half when I make my marinara, pasta sauce and my tomato paste.

    So much fun! I love when you make “happy little mistakes” and roll with it. Some of my favorite meals were those “happy mistakes”. When I make soup my grown children want to know what kind of “crazy a$$ soup” I made this time. It is a family joke, and they love it!

      We have sad vegetable soup. Whatever veggies are looking a bit sad in the bottom of the fridge get turned into soup. a handful of lentils of whatever colour we have in the cupboard adds protein.

    I’m excited for this!!! I really need to take some time to restock our freezer. We haven’t had any for months. Im a stay at home parent to a 1 and 3 year old and I notice I get more overwhelmed when I dont have any meals to all back on.
