Hi Divine...
Such kind words. Thank you. The black thing is a hi-hat mute. It gives hi-hat a dry sound and adds some sound qualities to it.
I am using an audio interface. I connect the mics to the audio interface then I connect the audio interface to the computer. That way, I get all the individual mics on separate channels in the computer. So I can modify and enhance the sound of each drum

It depends on a lot of factors. You might not get the exact same sound. But you'll get good sound if you record with mics and an audio interface
Edit. You don't need to connect a mixer to an interface. The interface IS the mixer. If the interface cannot do the mixing, the audio software (DAW) would allow you to do any kind of mixing you want.
