    ▪ Spinach (about 24 ounces)
    ▪ Garlic (3 cloves)
    ▪ Scallion (2 stalks)
    ▪ Soy Sauce (1 tablespoon)
    ▪ Sesame Oil (3 tablespoon)
    ▪ Sesame Seed (1 tablespoon)
    ▪ Miso (1 tablespoon)

    I like yellow miso for everyday cooking and when I'm looking for a Nutty flavor I choose the red. Thank you for posting such a lovely recipe my mother and I are going to enjoy this every night next week. :-)

    I do the same thing with fermented foods. I eat them daily but I eat more when constipated because I take a lot of medication and have a real problem with it.

      Anj darker miso is more richer in flavor and lighter one is more mild in flavor 😀❤

      Yin & Yang Living Well I've been back from the shops and I bought the white miso anyway. Also you used 700g (about 24 oz you said) of spinach. Was that just for one person, because we're 5 in the family and buying 3 1/2 kg spinach seems a pretty big handful!

      white miso is fine. My recipe is like for 3-4. When you cook it the spinach shrinks a lot.

    I have some free blanched spinach sealed in my freezer. Can I use that or do I need to start with fresh spinach?

    Thanks for the receipt. I like miso, in fact I am the kind of person who goes to a sushi pace at least as much for the miso soup as the fish.
    I was also surprised when I found white miso in the local supermarket. You see I am Swedish and remember a time when you couldn’t even find tofu. I am just not sure if that miso could be pasteurized?
    Now when commenting and we talk about fermented food I might as well add I have made kimchi. The receipt was from two Korean sister owning a restaurant. The problem was it was daikon kimchi. Kimchi is like a national symbol for Korea, right? And “daikon” is a Japanese word, right? So if I say “daikon kimchi” to a person who actually is from Korea, he/she will punch me in my face, right? :)

    I can't believe I've never tried to use my hands to drain out the water from my cooked spinach. It seems so obvious. Not sure about the miso with spinach - I like to just use garlic, olive oil, and feta cheese on my spinach and reserve the miso for tofu/tempeh. It's probably tasty though.

      use whatever you have -- I have been using gluten free organic soy sauce, but use what you have.

      yes, that is a good point as pasteurization can kill some microbes.

      I bought spinach at Asian market, but I am not sure what the difference is. I did not use baby spinach if that's what you mean.

      no hummus is made with chick peas. Miso is fermented soy beans

      They take a bite of rice and then take a bite of one of the side dishes or soup or stew, That is how to eat. If you can eat all of the food, then just eat what you can and like
