Made this but also made some shortcuts as well. Still turned out amazing. That barbecue rub is definitely a game changer. Probably the best Buffalo chicken dip I’ve ever had. I added some red onion also. Yum!

Utilized my regular gas grill to do the smoke. I made a makeshift smoking caddy by hand with folded aluminum foil. I then poked a bunch of holes in the bottom of the caddy. I then placed water soaked mesquite wood chippies into the caddy. Then I placed it into the grill above the flame on one side and kept the grill at 225. I then placed the seasoned cream cheese on the cool side of the grill in a pan. I had a nice smoke going with the make shift setup and it smoked that effing cream cheese to perfection. I did the chicken the same way and it turned out fantastic.
WOW, I just finished this up, still has to go into the oven, but the small sample I tried is fantastic. Don't have a smoker yet so I cooked some chicken breast in my air fryer with the spice blend, de-f*%$ing-lisious. From one Canadian to another, thanks Sam for all the great ideas, you guys are awesome.
Love this recipe and will be making it for a baby shower that we’re hosting for our son and DIL. I’m smoking the chicken and cheese and mixing all of the ingredients on the day before and then just heating it up on the day of the party. Hope that works out! Thanks for the great recipe - it suits our tastes perfectly.
I found a chicken marinating already butterflied for this. It’s in the oven right now. No smoker but still cooking the cream cheese with some special seasoning inspired by Sam. I’ve occasionally called food items and other inanimate objects “kids” lately and my wife has been mocking me and saying “okay Sam.” Yet she never complains about the food and even got me Recipes with Intentional Leftovers for Christmas so I guess we’re all doing something right.

If you turn the rack you put the chicken on, you can adjust it in the smoker as well as remove it easier with the little feet up, it slides on the smoker rack. That F'n stuff looks so delicious! Yum.

Idk if my request would ever be granted but I'd like to ask Sam to post a couple of high protein recipes. Though I love it so much, Sam mostly just makes comfort foods. I've started lifting weights and need some high protein low fat recipes that are as addictive as fried chicken and I think Sam would maybe know.

In a pinch, you could use dried dill. It's better then none at all. Just make the ranch the day before to let it hydrate, brings out the garlic too.
