- INGREDIENTS:
1 KG BEEF LIVER
6 TBS VEGETABLE OIL
2 BAY LEAF (TEZ PATA)
2 CINNAMON STICKS (CASIA BARK)
3 CARDIMON
5 CLOVE
1 TSP PUNCH PHORON (BANGLADESHI GARAM MASSALA)
4 GREEN CHILLI
1 TBS FRESH GARLIC
1 TBS FRESH GINGER
2 SLICED MEDIUM ONION
2 TSP SALT
1 CUP WATER (TO SOFTEN THE ONION AND PREVENT GARLIC AND ONION BURNING)
SPICES:
1 HEAPED TSP CHILLI POWDER
1 TSP TURMERIC POWDER
1 TSP GARAM MASSALA
1 TSP CUMIN POWDER
2 HEAPED TSP CURRY POWDER
3 CUPS WATER
CORIANDER TO GARNISH
I USE EAST END BRAND CURRY POWDER.

BTW, my supermarket always removes that grey-looking skin, which toughens the liver, and then I learned a wonderful, highly recommended tip that makes a HUGE difference. 👉 Soak your diced liver pieces in FRESH MILK at room temp. for at least 30mins to an hour before draining and cooking. 👌😍
Milk kills all the iron in the liver.

The other way is to boil the liver with turmeric powder and then remove the layer. That's how my mom does it!

Yeah you're right you got to add the Bailey's you got to add a parsley or cilantro at the end I usually had one Bailey can of Old Bay or something like it but that's all you got to do I use the Old Bay of blackening it works good on pork and pig and liver and all that other stuff pig liver is really cheap so is chicken liver so is turkey liver cheaper you can get it the better you off like chicken necks like turkey necks nobody uses the parts that are really good I can't waste the good part like a chicken back or a turkey back drumsticks all the way down to ham Hall it's a southern thing yes I had hot dogs or sausage at the end usually have some okra at the end of that it helps thicken in it so does cornmeal about a half a cup mix it up slowly and the crock pot it helps thicken it in it using cornbread or taco shells or chips I put out on it corn chips

I don't understand why more people don't cook with offal. I think we've lost the folk memory of all the wonderful dishes. If you visit Lyon there's a great selection of offal-based dishes in the local cuisine.

What kind of rice do you serve it with?
I would fry the liver in a separate pan and then add to the curry for 5 mins or so, otherwise it will taste rather rubbery.

Looks great but I have been lead to believe that overcooking liver makes it tough/rubbery and dry. When cooking traditional liver and onions the meat only needs a few minutes just until there is no blood in the meat.
Yes that’s right but this cooking is authentic and how mums been cooking all her life. It’s delicious love her recipe. Give it a try a little tough but I tell ya... yummmMM

Liver is strange meat.
It either has to be flash fried or slow cooked. Anywhere in between its like chalk.

I prefer calves to lamb liver but was wondering if beef liver was a fuller flavour to calves.
If you can get mutton meat, leg, chops etc. its tastier than lamb but I haven't tried sheep liver just lamb and calves but not beef.

1 pound is around 0.5kg. So 1 kg is about 2 lbs.

Does this work with lamb’s liver too?
The recipe I have for lamb's liver suggests cooking for only about 15 minutes.
30 minutes preparation, 3 hours marinating and 15 minutes cooking.
