- In this part two cheesecake wedding cake tutorial, you will see how to fill, frost and decorate. The design is a purple ombre cake with buttercream rosettes created with tip number 1M Wilton. In the center of the two cheesecake layers is a layer of my yellow cake recipe. Link below. Layered in between each is a generous amount of my Italian meringue buttercream recipe. Thanks Anna. I hadn't seen it before either LOL. I just wanted to cover the rough edges and fill in the bare spots without creating more width and heaviness. It worked well. Thanks for watching and commenting

This looks amazing. Cheesecake is my absolute favorite, and none of the bakers around me makes them, so I have to make my own. I am not a strong baker, but I have made cheesecakes before. Would whipped cream work instead of frosting? I've never had frosting on Cheesecake, but I'd like to dress up the wedding cake to make it pretty.
Hi Yes I believe whipped cream would be a nice alternative. Im not sure however how well it would cover the graham crumbd on the sides of the cake. I guss you'll have to experiment a little and make a small cake as a sample. Good luck with you cheesecake wedding cake.

For me, Cream Cheese icing would be my choice on the "cake" layer to keep with the Cheesecake

Thank you Ange. The one in this video was found at the goodwill. I have a bigger one that i found recently though at Savers. I love thrift shopping.

@@JoyfulinHope It's from an old dining set, I believe. Its only about 12 inches. The recent one I found is 18 inches and it looks like a homemade one. It may be in a more recent video. Good luck. If you have a handy person in the family they could make one for you pretty easily.

Thank you Jo Jo The bride and groom didn't want flowers :-( disappointing as I love adding flowers to cakes. They really add a nice softening and beautifying effect. The cake slice I did at home while sampling and getting ready for the actual wedding cake.
Still a beautiful cake, without the flowers!

@@JoJo-xb9fv I don't know the measurements in ounces. I do have a chart with approximate cups in pans. There are many different scenarios for pan filling. I generally fill my pans 1/3rd full. If it's a shallower pan I fill them about half. the deep ones about 1/3. By deep, I mean 3 inch deep. Shallow would be the 2 inch deep.Hope that helps.

Are the cake and cheesecake both frozen? If so, how much time do you have to give it at room temp so it's ready to slice ?
Yes. I freeze my cakes. This way they are easier to handle 9especially the cheesecake) Part 2 covers that. The layers were put together with filling and frosting a day or two ahead and left to thaw in the fridge. By the time they eat the cake 9 after it sits out for about 6-8 hours, it's perfect and very easy to cut.
Will vanilla American buttercream work ok instead meringue buttercream I don’t feel like making meringue buttercream but I will if you think it’s the only buttercream that would work with this cake
Hi Kim. You can use any buttercream. American will work just fine.

Hi It's Lorelie from my Dance Channel. I just saw your question. It's Italian Meringue Buttercream. I believe the link is in the description beklow the video. I also have recipes at the website and in my book on Buttercream $5.99 and a buttercream course. Also reasonably priced. You can use good old American but the Italian Meringue is top notch!
where did you get the pan for the cheesecake? We cannot seem to find a larger pan than 10 in. The ones that open up.
I used regular cake pans. If you freeze them (which i did) when you are ready to remove them simply put the,m over a burner and move them around on the flame. The butter in the crust melts just enough to release. Then you can turn them out onto cardboard rounds.
