    I'm a trained chef, did 4 years at catering college in the North of England and worked in the kitchen at a very busy hotel in Leeds UK..
    This young man deserves so much respect for the back breaking work he's doing. Catering/cooking or being a chef is bloody hard work never mind carting your work and setting everything up, massive respect.

    I will definitely come here one day! Praying that he gets tons of hungry customers lining up for his food! He can set up a stall from scratch (including moving them with his own hands and legs) AND cook!! I've got so much respect for him! I should stop complaining about work now!

    It's amazing he leaves things all over the place moving from one spot to the next and nothing is stolen. Can't do that in America, he would be shot, robbed, rapped, and everything stolen.     Imagine waking up in the morning getting all the preparation ready and thousands of set-up once you reach the location. Then after you're the chef, the waiter, the bartender, the host & the cashier. You work your ass out for 8 to 9 hours..finally end of the day cleaning up and YOU HAVE TO UNDO and pack up all the thousands set up all over again..omg the man is a legend..salute bro!! My respect to his dedication and hard work...

      If you go to the QR code in his shirt the online page of the stall pops ups, there the owner offers “ramen, dumplings, beer” free of charge to those people who helped clean up the stall in the next visit, those can be for you or you can left them for “someone else” ☺️

      Ive been there and i only lasted for 8 months. Being an entrepreneur is such a hard work, youll work atleast double than salary men without warranty thay your hard work would be paid in the end. Thats why businessman is the toughest and smartest people in this planet.

      Many people have been doing this kind of job. As long as your food meet the standard, you would survive and most of them usually get higher payday than standard job. Try to do job like this in Indonesia where roads are busy and moving your cart would be massive headache.

      @@richard35791 idk if you understand what he meant, but plating food you prepare is usually chefs thing, and even though he's doing food cart he still gave his best and do that to his customers. That is why it's work of art. Food stalls in Indonesia usually won't bother with plating, just put the food on the plate and serve.

    Definitely the best Yatai I've seen so far. From the 1 man job of setting his shop, the food and the cleanliness, all are top notch. One thing that impressed me the most is that I noticed how clean his disposable bbq grill was. Unlike all the other Yatai I've seen. Great job.

    He’s got to build up his shop every day, then taken it all apart and pack it up every night after a long day’s work and what we saw was him setting up on a good day. Just imagine how hard it is on rainy days… lots of respect to this man, most of us would very likely quit after the first day.

Having said that, I have so much respect for this man, he has to do that twice a day 6 times a week given that he has 1 day off. Also, it's ok to eat there just order the food that's on fire the most. Cheers and stay safe.

      @@andypandy7769 People wearing gloves touch all sorts of things besides food and continue to use the gloves. Technically they should change gloves after they've touched anything that isn't food related, and most health standards say you should also wash your hands before putting on new gloves. But that takes so much time.
      Most consumers, and most entry level food workers have this belief for some reason that gloves mean clean. But proper hand washing techniques negate the transmission of illness. How many times have you seen someone take their gloves off nearby or over your food? Ever think about how powdery and sweaty their hands are? Ever think about how that glove snapping off is probably spraying micro bits of that person's sweat and glove powder into your food? If you haven't you will now.
      People need to wash their hands. Gloves are NOT a food safety measure if the hands wearing them aren't washed, and if they touch lots of stuff in the process of your food being created. They have their place but really... they have created a belief in food service that just by wearing gloves everything will be clean, it is creating a culture of uncleanliness because the average person thinks gloves actually replace hand washing!

      @@andypandy7769 leads to weak immune systems (proven, just check on the real effects of all that anti this and that gel... -now if there is a "Typhoid Mary" then, yes we have to lock her up and prevent her from preparing food, but other than that "hands" are not all that bad compared to "gloves" after all, those gloves are going to be touching all the same things the hands were touching in the past.

    This guy has some dedication. He looks like an honest young man aside from being a hard worker. People complain so much for what they have to do for their job even minimal stuff. This guy sets up an entire restaurant and he looks at peace and calm with it. I'm sure it can be stressful but, this will pay off in the long run. Keep up the good work.

    Half of the male individuals in my country at his age wouldn’t even walk from his house to his cooking location.... let alone transport everything, set it all up by himself, cook all that wonderful food and then break down the stall and transport it back home!     This is only one of the eight million reasons why I crave returning to Japan. Hard, honest work, devotion, humility, ingenuity, resourcefulness...the list of glowing virtues is indeed long. And then there is The FOOD Itself, not to mention the convivial atmosphere surrounding these "yatai," even among "strangers."

    It's amazing that he can leave his food and gear unattended while he leaves to get the cart... I can't imagine that happening in the majority of US cities without it being either vandalised or stolen. Wonderful thing about Japan and the people. A great respect for not touching or taking what isn't theirs. I've been told you can leave your laptop on a cafe table while you take a bathroom break without worrying about someone taking it. Incredible what that young man does and how hard he works to make his living, very insightful video.

      Japanese are the best but if you have the opportunity do visit Korea, Taiwan, China and Singapore. They too are VERY different from USA or Europe.

    Wow! THIS is amazing!!! Not only can he cook, but he's an engineer too, setting up his kitchen, bar and restaurant ALL BY HIMSELF! He's also the chef, bartender and waiter at the same time. And he only charges 500 yen for a bowl of Hakata Ramen??? What?! Unbelievable. Respect! Why did you not show his signature dish, the Hakata Ramen though? I was looking forward to it. lol

    Other than the set up, food preparation, washing, ingredients, stocks and beverage purchasing and more....This is a very taught job and the pay out isn't all that good but the culture value is priceless. I suppose passion is driving him. Good luck and if I ever visit Fukuoka, will sure drop by and have a meal.

      crying because once
      a respected man due to his position, suits, and fancy car, dropped all those status, and dragged the food cart, and cooked. But it is his passion, and finally his wife could understand, that now he's happier and enjoys life even more..

    Man, I’m pretty sure when he’s done for the day and he heads home that he stills has a ton of work to do. He probably has a lot of prep work that he has to do for the next day. Much respect to this young man. If I’m ever in Japan and see him I will definitely grab a bite to eat there.

    My favorite part is when he aided the rigidity of the rear panels by locking a shelf into two of them. These stands have such creative ways of providing structural integrity for themselves.

    Man, I am not through the whole video and I'm blown away at his portable restaurant AND bar. First the craftsmanship of getting this into two carts, then setting it up efficiently. Note in the sidewalk the dark track where he has walked back and forth day to day too! His food isn't basic, grilled scallops that look like fine dining. I was thinking at first he was saving for a brick and mortar place but, nah. His patrons would miss something special. Stay strong young Chef, may your kind increase.

    What I applaud so much is his ability to set up the entire thing every single time. I myself am the kind of person that I will go out of my way to do the effort once and for alll. I absolutely hate having to redo something that has several steps many times, especially if I don't have help.

    What we watch is just the setup for the day, and give him a ton of respect, which is rightly due. We are missing a bigger picture as cooks and chefs, he is doing a ton of work behind the video with the prep. His food was already portioned and ready to rock and roll for the day, he is not playing games in his life at all. Lots of respect to him.
