I used to own a coffeehouse, and I absolutely needed at least one more staff member to cover me while I went to the bank or store or to a government office. What does he do when he has no time to even check for messages that require his response?
This is impressive on so many levels that I don't even know where to start. - The work ethic and labour involved with the detailed, grueling prepwork. - The culinary skills. - The way japanese society allows this to work (He can leave his stuff and have trust thar noone will steal it). - The energy, the vibe. That black metal and glass case on his food prep countertop IS A REFRIGERATED DELI CASE. He has plenty of cold storage that are electrified, and insulated chests to keep his foods cold, and probably a lot of ice or cold packs in his coolers. He can disinfect his hands with alcohol throughout the night too, which he probably does. Mind you, these carts are only open for about 5-6 (6pm-11 or Midnight) hours serving customers, and not all day, and then part of the night. Also remember, we’re seeing an extremely edited and condensed Cliff’s Notes version of his night, and I’ll bet you he does wash his hands throughout his business hours. Consider that.

I have the utmost respect for this chef, for his ability to prepare food but, much more respect for his willpower in making the journey with the trolley many times. If I think that this work has to be done twice a day, every day, then this young man and all those who carry out this activity deserve the first place among workers.

I can't believe that he manages to move and assembly all those furniture along with gas pipe and electricity and ingredients in place for just only 2 hours 😰😰😰what an incredible man. Then he has to disassembly them and repeating the work daily. Man, I salute you. Such an incredible job and super strength are you!
What I love about this is that he can reasonably set up his yatai and the supporting items without a ton of fear of people messing with his stuff. This would simply be impossible in America. Beautiful video and food culture.

Wow...an incredible amount of work to make several trips from home and then put it all together....make lots of different dishes for his customers, then dis-assemble everything at the end of the day and make several trips back to his home. Repeat every day. This is what a young, strong man with lots of endurance can do. but this is also what makes a strong young man into a worn out old man...lol..!! I love the atmosphere that he created with the partitions and the hanging curtains...very cozy and intimate. I noticed that is was at night so I assume that this when he is open. The young people were really enjoying themselves: good food & drinks, good company...nice atmosphere..!! I send good fortune to this young man. Yesterday I was in a bad mood most all of the day, because I felt overwhelmed with work. After watching this man, and what he has to do just to set up his stall to even prepare the food people come for...I can only say I have nothing to complain about with my job. I have to wonder what happens when the weather is not as good as it appeared on the day this was filmed. His tasks to set up and take down are already intense enough, but what about when the wind is strong and/or the rain is coming down? Not to mention what is the business like on such days.
Not only is he a hard worker and apparently an excellent cook, but he also serves everything on real plates and bowls and what appears to be rock slabs. There are no paper plates or cups and no styrofoam bowls.
I have always been astounded by the Japanese people and coulter. The amount of work this man does every day and night is staggering and yet he truly is joyful, full of pride, and determined. I really do love how no matter what people do in Japan they take the pride in what they do and dont complain about it.

@Hooly Dooly As long as I'm not seeing the chef handling food or kitchen utensils after touching cash (which is unlikely in Japan in that setting, everybody will be paying digitally) or scratching his ass, I won't give a flying fuck.
Gloves are just an illusion of a higher hygiene standard, since gloved hands can also scratch asscracks and touch cash.

Wow it's so amazing, i think it takes more than 1 hour just for the preparation, and he does it everyday, carrying all those stuff by himself, preparing, pulling, walking, arranging, and cooking, amazing hardworker, may he got so many loyal customers

Wow...an incredible amount of work to make several trips from home and then put it all together....make lots of different dishes for his customers, then dis-assemble everything at the end of the day and make several trips back to his home. Repeat every day.
This is what a young, strong man with lots of endurance can do. but this is also what makes a strong young man into a worn out old man...lol..!!
I love the atmosphere that he created with the partitions and the hanging curtains...very cozy and intimate. I noticed that is was at night so I assume that this when he is open. The young people were really enjoying themselves: good food & drinks, good company...nice atmosphere..!!

Yesterday I was in a bad mood most all of the day, because I felt overwhelmed with work. After watching this man, and what he has to do just to set up his stall to even prepare the food people come for...I can only say I have nothing to complain about with my job.
I have to wonder what happens when the weather is not as good as it appeared on the day this was filmed. His tasks to set up and take down are already intense enough, but what about when the wind is strong and/or the rain is coming down? Not to mention what is the business like on such days.
Not only is he a hard worker and apparently an excellent cook, but he also serves everything on real plates and bowls and what appears to be rock slabs. There are no paper plates or cups and no styrofoam bowls.
Those are shale/slate slabs.
I have always been astounded by the Japanese people and coulter. The amount of work this man does every day and night is staggering and yet he truly is joyful, full of pride, and determined. I really do love how no matter what people do in Japan they take the pride in what they do and dont complain about it.

Firstly, we need to congratulate and a big applause (through likes) for this gentleman for his extreme effort & planning, innovative menu, design aesthetics, cleanliness and the prime service rendered to his customers on top of showcasing & expressing the hidden cultural values.
Well, simply to put in plain words 'This is absolutely not easy thing to do everyday'.
My grandfather always used to say. Work hard & work smart consistently without worrying about the prize. I'm pretty sure he'll be managing people at his own shop, doing fantastic in another 6-10 years down the line. People like this superman are a true inspiration to all the generations where he showcases his hardwork and passion in the purest form.
