Peanut Chicken Lettuce Wrap and Peanut Rice

This is just another way to fix Chicken, We Love Chicken and Eat it several times a this is a quick and easy flavorful and healthy way to serve give it a try and I'm sure it will become a favorite at your house too.
Recipe
1 pkg. Roman noodles and flavor because you only need the noodles not the seasoning pkt,
2 small carrots
1 8 ounce can water chestnuts chopped
2 tablespoons oil
1 pound ground chicken I just put my boneless skinless chicken breasts in the food processor with a chop blade and it works wonderfully.)
1/2 cup roasted salted peanuts
lettuce for wrap, I use roman because the shape of each leaf make like a little shell that can be folded.

pepper
sesame seeds
In a dry skillet add crushed up roman noodles, peanuts, and sesame seeds
Cook over med heat until seeds and noodles are toasted.
Peel and Julienne carotts
Drain, rinse, and chop the water chestnuts
Add oil to large skillet over med high heat. Add chicken and cook until lightly browned. Add carrots, water chestnuts, salt, and pepper.
Cook until carrots are slightly tender
Make sauce
1/4 cup oil
1/4 cup soy sauce
1/4 cup creamy peanut butter
3 Tablespoons honey
1 clove minced garlic
Mix all together with an emersion blender.
Pour sauce over chicken mixture and serve with toasted noodles and sesame seeds to garnish.
I also make extra sauce and add to plain cooked rice to make peanut rice with complements the wraps wonderfully.
