Ingredients
Servings: 2
For the Honey Walnuts:
1½ cup(s) walnut halves (about 30)
½ cup(s) granulated sugar
¼ cup(s) water
3 tbsp honey
For the Shrimp:
1 cup(s) canola oil
1 lb raw shrimp, cleaned and deveined
1 cup(s) cornstarch
For the Sauce:
½ cup(s) mayonnaise
2-3 tbsp Sriracha sauce
2-3 tbsp soy sauce
2 tbsp white vinegar
½ tsp sea salt or kosher salt
¾ cup(s) water chestnuts, see notes 1
bunch of cilantro, for garnish
Directions 8 Steps | 60 Minutes
Instructions:
Step 1
Measure and prep all ingredients for the honey walnut shrimp.
Step 2
Prepare the honey walnuts. In a skillet over medium heat, combine the walnut halves, granulated sugar, water and honey.
Step 3
Cook until the walnuts darken and are completely coated, then put them to drain on a paper towel.
Step 4
Prepare the shrimp. In a medium skillet, heat the canola oil. Prepare the shrimp by dredging each one through the cornstarch.
Step 5
Fry six or seven shrimp at a time in the hot oil until light golden brown. Drain them on paper towels.
Step 6
Make the honey walnut shrimp sauce by combining the mayonnaise, Sriracha sauce, soy sauce, white vinegar and salt.
Step 7
While the shrimp is still hot, add the shrimp, honey walnuts, the sauce and water chestnuts into a bowl and toss together.
Step 8
Serve hot with a sprinkling of cilantro on top. Pair the honey walnut shrimp with brightly colored, steamed vegetables. Enjoy!
Notes:
One 8 oz can of water chestnuts is equivalent to ¾ cup.
