my grandma used to do something similar with pie crust scraps! we'd call them pinwheels, she would take whatever scraps were leftover, roll it out in one solid piece, sprinkle with cinnamon and sugar, roll it up like a log, and then cut it into 'cookies'. they're nice and crispy and sweet, perfect little snacks.

As for the story behind it, I don't know it but it sounds correct as France used to suffer often from famines, which is where we got dishes such as "Gigot d'agneau" or "Blanquette de veau"and other big family recipes that can be left in the pot for days and stay good.

Actually it's a dutch dish based on the french beignets somewhere arround the 16th century the dutch started making the beignets which where apple slices covered in batter and then fried. Down the line a dutch bakker started what is now know as apple turnovers (appelflap) how ever there was a division in the languages which caused a part of europe to call this version either an apple turnover(appelflap) or an beignet(appelbeignet) trough this confusion many people believe it is a french pastry cause even here a big part of the country mostly the south is still calling it a beignet.
Growing up on a farm in Ohio, our menu was extremely seasonal but Apples were a daily treat. My grandmother made turnovers all year and my favorite was Loganberry with cream cheese custard. You should try them... WHOLE DIFFERENT LEVEL lol..
I love this recipe. They are easy and really good. One suggestion though... Add some walnuts and raisins to the apples while they're heating on the stove, probably a half cup each. It makes the turnovers so much more scrumptious.

I did this recipe with puff pastry with all butter from M&S and let me tell you, it came out perfect ! I chose Bramley apples which turned super soft, the end result was delicious ! Preppy kitchen never fails me
John, thanks for this very informative video! I have always been stumped about how long to cook puff pastries when I’m using cooked apples. My wife made delicious apple pies, but she has since gone to be with Jesus…and puff pastry is just the ticket for me, I have her pie recipe. 😅

Now c'mon man, no need to trim off the extra phyllo dough! Why you may ask? Well ya c, it's simple, it is very simple actually, the reason is, by NOT trimming off the extra dough there is more surface area for all that oh so goodness sugar to cling! No need to measure out the apples either, a good chef/pastry-chef measures by eye whenever measurements are not important!!!
The beauty of these is that they actually have apple all over. When you buy these from supermarket bakeries they have more pastry and air, compared to filling. This is excellent.

I taught a three year old how to make scrambled eggs. He learned to watch the hot pan. He stirred the eggs with a super long handle. I blocked his arms from the pan the whole time. He crushed the egg shells with his hands. I say let them cut the apple with a kid knife (no blade) - a crispy apple is easy to do this with - and let them watch the butter melt and stir the bits. Not for all three year olds, but some, for sure! He also like to help me with coffee. He would do the cutest thing: he'd smell the grounds and throw his head back and go "Mmmm!" So cute! Watch a lot of your content. Amazing food! Thank you!

Thank you this recipe. I tried it and sadly just about burnt them. I am at high altitude and I think that 14-16 min for baking would work better for high altitude. I will try again though!
John, you have never failed to amaze me and the fine result does look a whole lot better than those made in commercial settings (en masse) or even at your local bakery. Like apple pie, strudel or galettes; no one single variety of apples are best suited for these applications, it's best to use a variety of apples for their differences in texture and flavour (a blend if you will).
wasn't sure where to ask this. I am type2 and just am not wanting to cook. What do you know about pan sauces. I love large flavor and have heard of pan sauces and have seen some made but can you teach about them? just some method. I know it's not the norm for your channel but I do like watching your show so I thought I'd ask.

Brush the dough edges with egg wash (for sealing edges) Before you put the filling on. Much easier and neater and no skipped spots. Just saying!
Be warned folks...cut gently on your pastry mat. They aren't self-healing like the ones for quilting.

I always flambe some Calvados (a French brandy made with apples-not grapes). It makes everything pop with flavor.

I tried this with apple and blackberries rendered down.. went reasonably well for a 38 year old attempting to make something from a cook book
