- It's hard to believe that it's been 10 years since I first shared the love and flavors of Ezo Gelin / Hearty Spicy Lentil Soup on Turkish Food Travel (Back then it was "Turkish Food Recipes"). To celebrate this incredible journey, I'm bringing you a special anniversary edition of the recipe that started it all.
Join me as I reflect on the past decade of culinary adventures, sharing stories, laughter, and of course, delicious food! Whether you've been with me from the beginning or you're a recent subscriber, I am grateful for each and every one of you.
Ingredients:
1+1/2 cup red lentils
1/4 cup fine bulgur
1/4 cup rice
1 onion
2 tbsp tomato paste or use 1 tbsp red pepper paste (optional)
1 tsp dried mint
1 tsp ground cumin (I forgot but add if you have)
1 tsp paprika or chili flakes (pulbiber)
6 cups vegetable, meat or chicken broth or water
3 tbsp olive oil
1 tbsp butter
Salt and pepper, to taste
Lemon wedge to boil the lentils and more to serve

Turkish cuisine doesn't really have anything to offer. The worst part of travelling to turkey is its bland cuisine😞

@@saadatjafari3683 Well. As we all know, taste is debatable. The fact is, that Turkish cuisine is counted among the 3 high cuisines: French, Chinese, Turkish. So it can't be quite that bland.
*Sorry sister, but this is not how it's properly done.*
*The VERY FIRST step of cooking ANY KIND of lentil is to soak it over night, and wash away with fresh water in the next morning. THEN, fully boil the lentil in A LOT of water, and after fully boiled, wash the water away.*
*This will take a good chunk of cruciferous gases out of Lentil - and you must use some ginger during cooking.*
*If you don't do that with Lentils, then you become a gas bomb and all day long, you fart like hell*

I found pepper paste in LIDL grocery store here in Latvia. The brand is KULJANKA. They had both mild and spicy variety. It is in a tube.

Congratulations and Happy 10th Anniversary, Aysenur! Lentil soup has become one of my favorites. I found the Turkish hot pepper paste on US Amazon as well as dried mint leaves. My local stores don’t seem to carry dried mint. I found your channel either in late 2019 or early 2020. I enjoy it so much. I started to study Turkish on a language app because of you. We live in Belgium and once or twice a month I go to a Turkish food store to buy pepper paste, sucuk, a big bag of rice, sumak, dried mint etc... I haven't found these key ingredients anywhere else than in Turkish stores (except for the rice ofcourse, but Tosya rice is really the best in my opinion to cook Turkish dishes). Congratulations on your 10 years of sharing delicious recipes.

Salaams Aysenur. Ive been watching since 2019. I live in New Jersey. We have Turkish markets so getting ingredients isnt an issue. For those that need, Amazon is the best option. I can also substitute from Indian groceries. They are actually the best for purchasing spices.
The poor quality (old and bland)of spices is my biggest complaint in cooking. Where you add 1 tsp, i need to add double or triple the amount.
The repeats I'd like to see are breakfast savory pastries such as Pogaca.

I'm looking forward to making this. I'm glad it's inherently vegetarian; I think I might use homemade vegetable stock. I'm fortunate that where I live there are plenty of grocery stores - including specifically Turkish ones - which have things like pul biber and pepper paste.
