can confirm that this works really well. it's very easy as the only way you can mess it up is by letting it run out of water and burning on the bottom, but even then it turn out pretty good

I made this a few times using the recipe in the vid and it was awesome. But the one on the web and in your book is different (vege stock not bone broth, no soy and add in chilli). Any reason you changed it?
Just made it and loved it. Had it the same as you did in a wrap with dry coleslaw and Siriacha. I need to work out how to make the sauce thicker tho so it isn’t so watery. Any ideas?
Before you diss gas too much :) I have found this a great recipe that adapts well to locked down sydney apartment living where the gas stove is my only option. Will compare it to the fire version in due course. Also worth mentioning that a 2kg boneless pork shoulder makes a sh*t ton of pulled pork but it does freeze really well. And can be a good idea to reduce the excess cooking liquid (by half) which makes an awesome gravy for the mandatory cast iron corn bread accompaniment.
A1 sound, A1 recipe, A1 presentation. Can't ask for more than that. Don't know why you guys went up there in the heat though. not bad when the rains come but just a bit hard to get around, even on the black stuff :)

I've recently learned how to make my own tortillas too. It's not hard at all! Make them up ahead of time and bring along to camp. Taste so good!

Thanks mate, I haven't tried gravy powder, but that or some flour would work well. I usually have it in a soft wrap or a brioche bun

do you ever have issues with using the spun steel for low and slow cooks, having to check constantly for correct heat vs a cast iron?
Nope. Makes no difference for long cooks. They get to the same temperature, one just gets there a bit faster
