He's not tuning, he's getting the idle worked out which you can pretty much do by ear. You can't tune by ear.
I guarantee that they use the same tools for a tune up as any one else. You can't "tune up" a vehicle by ear. Yes you can smell when it's way too rich or crank idle screw if idle is slow.

427 side oiler, Standard bore, HTC 428 crank, hemi journals, Venola rods, Arias blower pistons, blower by Gary Roushkolb, Precision oil pump roller rockers, Shiefer magneto.
There's some big horsepower right there those are really good Motors
