Stuffed Salmon

  • Stuffed Salmon is a wonderful and healthy dish! It is quick to make and very filling! We use Atlantic Salmon, but I'm sure other varieties would be tasty as well.
    Recipe:
    Cut salmon not quite in half, making a “deep pocket” on the side.
    Pat dry. Rub with salt and Cajun seasoning.
    Stuffing to go in the pocket of the salmon:
    4 oz cream cheese
    Parmesan cheese
    Cooked bacon in pieces
    Salt
    2 T of canned spinach (squeeze out water)
    Cajun seasoning
    Fry each side about 3 minutes. Then, cook in oven 350 degrees for 10-15 minutes. Add butter and lemon before serving.

    We love salmon. I usually marinate with melted butter, dill, and vinegar and bake, but this looks delicious. I'm definitely going to try it. Thanks for the recipe. You did good, Jordan! I love your jingle at the end, Mrs. Joan!

      LOL! I call you Mrs. Joan, but I'm older than you. I'm the one that keeps our high school class together, too. We had a big shindig for our 50th in 2015. but now we just do lunch every 3 months. We decided it was too much trouble to have a big reunion. We have a lunch next Tuesday and we have a ball.     This is an excellent recipe! I have 3 salmon blocks in my freezer right now! I need spinach though. I am out of freash spinach now!
    The keep my family healthy i put a little spinach in many things to add iron to my diet. I put it in meat loaf, and really anything with ground beef. I chopp it so fine it looks like parsley😅. It doesnt add any flavor...

      Love the tips for using spinach. She used canned spinach in that recipe. Either works.

    I'm with you miss Joan no fishy fish for me. This dish looks delicious I may just try it, I thought it was a hard dish to make too.

      We love it at our house! My daughter started making it and it's ready in minutes! A family fav!
