Hello from California, Lia! It is extremely difficult to make homemade pasta without any wheat flour in it, because the gluten is what gives the dough elasticity. You can try to substitute the 00 flour with a gluten-free flour blend, but you won't be able to knead the dough as shown in this video. In the US we have a couple of excellent gluten-free flour blends that I could have recommended to you, but I am not familiar with what you have available in Portugal... Hi, I recommend a mix of the garbanzo bean flour (I just get mine at my local bulk place) with a bit of a regular gluten free flour mix (something with rice and xantham gum works well, it gives it just enough elasticity).
So I've made gluten free egg pasta with gluten free flour and it's worked fine so you can use 1:1 gluten free flour or a gluten free blend with xanthan gum added(I used bulk barn blend)

Connie, 00 Flour is a very finely ground flour. It yields a very soft, airy and a bit snappy pizza crust. You can use bread flour instead of 00 flour, as I suggest in the recipe... but if you are an avid baker, it would be fun for you to experiment with both flours. Hope this helps!

Hi Sadia, Unfortunately, you cannot take the taste of chickpea out of this pasta - chickpea does have a distinct flavor. I suggest you use a gluten free flour mix to make your fresh pasta. I haven't experimented with it yet, but I'm sure you can find some good videos on RUclips for it. This would be the best way for you to proceed. Good luck... and thank you for trying out this recipe! I am glad at least it came out well, if not to your taste.
I had the same problem at first when making socca. The trick is not to smell it. Once it is cooked, I promise you that it tastes amazing. I was never a fan of chickpeas having only ever tasted tinned ones, but once I moved over to chickpea flour and dried chickpeas, it has changed my life. I even make cheese sauce using chickpea flour now instead of wheat flour and the flavor is so good that the day we were out of chickpea flour and used regular, it tasted so bland we resolved never to make it that way again. So trust me, a fussy eater, it's going to taste good once cooked.
In Europe flour is categorized by how finely it is ground: 2, 1, 0 and 00. 2 is coarse and 00 is very finely ground. What is Zero/Zero Flour? Is it Wheat Flour, Soy Flower, White Flour? I don't get it... Can it be made with only the Chickpea Flour? I am diabetic, and I eat a lot of Chickpeas usually in the form of soups, or salads. I would be reluctant adding any other type of flour. I am very sensitive to it, and my sugar spikes very easily if I am not careful with what I eat. I have been diabetic for several years, and have never used any medication to control it. I control my A1c, and it has been below normal for several years now. I use exercise and diet to stay healthy. I stopped eating bread, white potatoes, any kind of rice, and obviously any sort of pasta, but I must say, I do miss it. I think I would love that pasta. Thank you.

I created this recipe simply because, like you, I love the flavor of chickpeas. 00 flour is a very finely ground wheat flour used in making pastas. I explain why you need some for making this recipe in my introduction. Do not listen to these people, all grains including rice, spelt, rye and kamut contain gluten!

I'm afraid you need the 00 Flour to give enough elasticity to your dough. Without some 00 Flour, you won't be able to make pasta.

Lentil pasta is good. I cover mine in a good sauce so the flavour is not so prominent. Avocado pesto is amazing.
