Temptation Alert: Delicious Mini Chocolate Cupcakes

Welcome to the SimpleCookingChannel. Things might get pretty simple sometimes but sometimes that's just what a person needs. I hope you like my recipe for mini chocolate cupcakes.
Ingredients
1 Cup of water
100 Grams of dark chocolate
125 Grams of softened butter
1 & 1/4 Cups of packed brown sugar
3 Eggs
1/4 Cup of cocoa powder
1/2 Cup of plain flour
1.5 Cups of self-raising flour
Ganache
100 Grams of dark chocolate
100 Grams of sour cream

Oh my goodness ,, I used to watch your videos all day as a little kid. I used to be obsessed with all your videos and recently a friend of mine mentioned themselves watching baking videos when they were younger and that brought back so much nostalgia for me, so I went back and found your Channel again. I wonder if there is a suitable substitute for eggs for a recipe like this.

Here's some options
1 egg = 2 tablespoons water + 2 teaspoons baking powder + 1 teaspoon vegetable oil.
1 egg = 1/4 cup unsweetened applesauce or mashed banana.
1 egg = 1 tablespoon of ground flax seeds and 3 tablespoons of water.
1 egg = 3 tablespoons aquafaba.
