- Mama Put also known as a Buka in Nigeria means a food shack where Mama Put Stew, the local version of Nigerian tomato stew is sold and served with boiled white rice, boiled yam, boiled beans, fried plantains and fried potatoes.
Buka stew comes with assorted meat: beef and offals and fried mackerel.
You will find Mama Put restaurants close to offices because they are a favourite with workes who want to have lunch on the cheap, a buka is not a fancy restaurant hence their meals are usually cheap.

Ingredients for Authentic Buka Stew:
1kg tomatoes (see video for state of the tomatoes)
1 kg assorted meat: beef cuts and offals, cow skin
vegetable oil
1 mackerel
2 onions
4 small seasoning cubes
1 teaspoon thyme or to your taste
1 tablespoon curry powder
Salt to taste

Yes, people buy awalawa because it is cheaper but then it makes better stews. Don't buy last grade awalawa o. 😂😂😂 Perfectly fresh tomatoes make bland stews, gbam! You need lots more seasonings than you would need for stew made with mildly awalawa tomatoes. Awalawa is less tangy that's why.

This is how I was taught to make stew, but with fresh red hard tomatoes, it still comes out like the “mama put” you just need lots of red bell pepper and chilli pepper (tatashe and chombo” to that’s to make it red. I know about 4 methods of cooking stew

Wow I knew the rotten tomatoes as esha because I used to follow my grandmother to the market and she will buy them in baskets in those days. She owned her own food restaurant popular joint in Agege- i didn't pay much attention to how she was cooking up a storm and wish there were recipes. Flo I had Vine Tomatoes in my fridge until they started to spoiled. I roasted them with red peppers and made Peanut Butter Stew, I was licking the pot before washing it and days later it was over the top with flavor.
