    Great tip with the baking soda, I tried it my first time making stew and the results were delicious, I just added a little extra oil ...because fat is flavour nah😂. I am not afraid of oil but didn't want the inconvenience of frying the tomatoes. I still get delicious fat from the beef/oxtail/chicken!

    I was just thinking of how to do an oiless Nigerian stew as I was finishing off the last of my oil laden stew and this pops up on my phone...great minds think alike. The stew looks delicious! Will definitely give it a try.

I guess the chicken broth has natural oil/fat hence making it possible. Baking soda magic is very interesting. You see I learn something new from your videos.       Chibuike you are already famous joor. Yes the.chicken oil makes it even possible. That's why I insist on using the hen because its stock is richer and tastier.

      Onyekachi Esther when I uploaded the experiment, some people commented that they use baking powder and it works for them. But I have only tested baking soda.

    Chi Chi, I am happy to come across your channel. I have been having excess gas in my stomach for about a year, all medications proves abortive. Doctors recommended I cut down on gassy foods and oily foods, but nne kedu kwanu ihe mmadu ga eri. Have been looking for a way to cook my stew without oil and frying and I came across your channel, can't wait to try this when next I'm cooking.     Thank you for sharing this receipe my sister,been using oiless stews,sauce and my kids are like,mum!!what's with the oiless stew,even though they enjoy my meals....😂😂😂😂😂.I am an addict with baking soda,mostly Arm & Hammer,it's very healthy,it makes my tomatoes,have this sweet taste,whenever i use it.I even use it to boil my beans too.God bless you my sister.....😁😍😘

      Nathaliya Cortez I use Massel stock cubes. They have less salt, no msg, and tastes wonderful. I buy it from Fresh Thyme in the US.

    Thanks for your inspiring recipes, there is always something to learn in your videos. I have a few questions, how long do you recommend broiling chicken or beef in the oven?my oven has just the low or high setting. Do you recommend boiling the chicken or beef before broiling in the oven? Thanks.

      adebola ogundehin I'm glad you find the videos helpful. This your great question deserves a video but let me answer as much as I can without writing an essay. Yes for hard chicken I always recommend boiling it first till done before broiling/grilling because it is too hard and if it goes into the oven raw, it will dry out before it is well cooked. But soft chicken can go into the oven raw and come out moist because it cooks in no time.
      On the other hand, any chicken that I will use to prepare a meal like stew, rice etc whether it is hard or soft chicken I will boil it first because that's the only way to get the stock/broth that will go into the meal I will prepare. The stock is very important for a tasty meal.
      For this hard chicken, when cooking it with my pressure pot, once the pot is pressurized that is when I hear the shii sound, I turn off the cooker and leave it to sit there for at most 5 minutes then depressurize. With a normal pot it takes at least one and a half hours. When done I just grill/broil in the oven till golden. I turn it around as necessary for an overall golden look. So I do not time it, I go by how it looks because it is already cooked. With the soft chicken, I don't even use a pressure cooker for that one because with an ordinary pot it is done in 20 minutes. If I will just serve the soft chicken as a snack I season and grill straight from raw because I do not need the stock and it will still be moist when done.

      Yes, you can add baking soda even when frying with oil.

      AishaZkitchen lol ... splashing of stews has come to stay with us. 😂 The thicker the stew is, the more that happens. I control mine by reducing the heat when I want to open the pot to stir or to add something.

      LuvMattaz TV ginger does not really have an alternative (in this case) so you can skip it. Same here, I don't like ginger either but it adds one kind nice taste to tomato stews and Nigerian Moi Moi and that taste is not like ginger taste at all.

      Melissa Julie O yes MSG allergy is serious. I'm happy the link between the headaches and MSG was made.
      The truth is that for Nigerian soups you don't need seasoning cubes because the meat, stockfish, dryfish, crayfish, ogiri (okpei and ogiri Igbo) are enough to make the soups tasty. For all other recipes, I have 2 videos for homemade MSG-free seasoning cubes. Here:

    Any substitute for the baking powder? The amount of sodium even in that little bit you put will shock you....plus the salt on top. May not be good for hypertensives.

      Some people use edible potash which has it's own bad name.
      Some use sugar but as an Igbo gal, I won't let my grandma catch me adding sugar to this kind of meal. 😂

    I think this is better. The chicken thighs have fat and the broth actually cab have natural oil from that chicken. I'm going to try this. All that oil was becoming too much.

      Healing Virtue, LLC for real o. 😂😂😂 It was while testing this recipe that I learnt how just frying does such a good job for the taste of the classic tomato stew. Remove frying and the taste goes so bland that the usual seasonings do not work.

      All Nigerian Recipes what if you get the tomatoes in the broth and fat from just chicken thighs?

    I can’t understand how this is oil less as there is a fair amount of oil in the meat stock! The recipe is good and I will follow the steps but leave out the meat stock and use water instead. The seasoning should be enough to flavour the stew. Thanks

    It's not oiless. A lot of oil comes from the chicken.
    It's not healthy.
