I'm not the oil police at all. I cooked it with the suggested amount of oil twice but ended up removing a lot of the oil before eating it because the stew wouldn't stick to the rice. So, now, I use half of the amount of oil you suggest and it's perfect. I love it so much and I cook it every now and then.
I cook my AA version of this but it’s identical in technique ❤…! I make this a lot and LOVE the simplicity of your recipe! When I’m in Naija my favorite simple combo is THIS! Red stew with beef rice beans and plantains sooo good! If u can go to Nigeria 🇳🇬 it’s a beautiful place with very nice people and fresh good food! You’ll come back home glowing 💯
