OMG! I was his part timer about 20 years ago, when I was in secondary school. That’s how long he has been in this business! I see he still likes to share his personal experiences and stories.
He was the only boss whom I worked for provided me with lunch pocket money. He would casually instruct me to get money from the cashier, and to dabao from nearby hawker centre for him and myself.

Mr Lee is one of the most experienced tea guy in Singapore. His high-end Autumn Pu Er teas are in thousands of dollars per piece. Absolutely fantastic...

I chance upon this shop and bought jasmine tea bubs from uncle before. Was pleasantly surprised that their tea is very affordable. Much cheaper than the one opposite Hong Lim. Uncle also very nice, came to the hawker centre beside this shop since young and never noticed this shop until last year. 😂

Brew how long it depends on individual taste I guess. Shorter for lighter taste etc. this uncle I like. Very honest and cool.

Nice place for tea. Very good place to start your tea journey! No judgement and very educational. A good place to start your tea journey and enjoy tea cause they drink what they sell. Impressive range of tea all the way to the high end range and they really demonstrate that good tea doesn’t need to be expensive.

@@HongisBored that’s what’s nice about this place. Like you I also went to some tea appreciation course and I was so afraid of the 90 degree water and all the steeping and pouring rules 😅 I only hope people start off at the right place.

Aiya you want perfect temp no need thermometer one la, just pour a cup of boiling water into an empty cup then repeat exactly 5 times. My grandma owned a 茶餐廳 in Hong Kong for 25 years, pulling tea(拉茶) is to lower it to the specific temperature fast and key to get that taste you get from the aeration, it's also why Teh Tarik taste very different from normal kopitiam Teh without any pulling.

其实，不同温度的水给不同的茶是有原因的。例如，普洱茶一定是需要 100度的水。绿茶 （如龙井茶）就大概 80 到 90度的水。另外，不要让茶叶泡在水里面太久。第一次的是洗茶，这水是不喝的。第二次泡是 15秒左右就好了。茶叶在水里面越久，茶就越涩。
I like to patronise the shop for tea leaves and stuff like tea cups. Also have many nice tea pots. A very nice and friendly uncle who does not overcharge you.

其实，Uncle 说的对。不同的水会影响到茶的口感。水龙头的水最差。矿泉的水 （fountain water in the mountain) 最好。

@@janie7242 口味很主观 我们本身是喜欢糯米普洱 “霉”味儿会比一般普洱少。但你也可以尝试其它种茶 或许 普洱不适合你的口味
普洱茶有生和熟的。吃点心，餐馆里的都是熟的。你会反感应该是没喝过好的熟普。大多数对茶不太了解的，都只喝过或认识熟普，从没试过生普。普洱茶本身很讲究收纳方式。太年轻的熟普有时还有些渥堆味，应为发酵工艺。但是好的熟普不应该有很大的异味。慢慢研究吧。。。

普洱茶是属于温性的茶，可以每天喝。 但是，其他的茶如 绿茶、铁观音就不行。
