- Can one of those cheap offset smokers cook a good brisket?
That is the answer we are looking for today as I went online and got me the cheapest smoker money can buy. I was as surprised as I could be by finding this thing for this price and now the question is…
Can this cook a perfect brisket?
There are many people out there with no intention on buying a $1000 dollar smoker. That can be because of budget restriction or simple because it is not worth it for the amount of cook they do.
I truly hope you enjoy this video as much as we did. Like and subscribe for more!

A little tip for these cheap smokers, which I learned how to bbq on an old Charbroil Longhorn a long time ago. 1/2 to 3/4 of a chimney of lit charcoal gets you to a solid 250 degree temp. I wouldn't go anything more, there is too much air leakage on these. Even though you use wood chunks for flavor, it still is a heat source. I replenish a 1/2 of a chimney of charcoal of choice every hour or so when temps begin to drop below 250.
Also those cheap smokers seem best when used how my friend uses them.
He just grills with them putting charcoal in the cook chamber, and uses the fire box as a place to keep the food hot as it gets done. Lol
LOL That is a good strategy! 😂😂😂
I would have put the water pan by the fire, to get as much evaporation as possible. That would help with temperature spikes the most, along with adding plenty of moisture.
That trick helped a lot and it is very recommendable but it also made the cook longer... Something to take into consideration! 😀
This was great, the video I always wanted to make but never could pull the trigger on! Questions answered 👍👊👊
Thanks my brother! 😀😀
Lol.... this is the smoker I have. A couple tips:
High temp gasket and silicone to minimize leakage
Charcoal bed to start but cook primarily with logs cut down to fix chamber. (Think a normal logs cut down to 4ths or 5ths)
Cook with door/chimney wide open (burns more fuel but cleanst fuel
Buy fire as far away from Cook chamber to minimize flare ups
Temp manage every 45 minutes (by adding fuel)
I've seen people smoke meat in discarded file cabinets. I'm sure it'll be fine.
Lmao😂
That's how we do it in romania. We have these old file cabinets from the communist era, works like a charm when you smoke meat even for weeks.
Hahaha, the selfie scene!
😂😂😂😂😂
SO FUNNY!
I started with this smoker and still own it. I have a recteq pellet now. I actually miss this thing, but it's not convenient. You have to babysit the fire quite a bit. If you get one, get smoker gasket and high temp silicone before you put it together. Gasket on the main lid at every joint, and on fire box lid. Silicone between fire box and cook chamber, and on the smoke stack. Also get a piece of pipe to increase the length of the stack. Do all this and you will actually have pretty good food that comes off of it.
Lol when youre meat thermometer costs more than your smoker.
🤣👊🏻
Bro! LOL I bought this grill! It was my first time hosting Thanksgiving for my family. The first try, I was smoking a Thanksgiving turkey! OH MY GOD! I pulled it out SORT OF. It took much longer than I anticipated so the whole family was really pissed off and HANGRY! There was SO MUCH ASH that it was smothering my fire and I couldn't get the temp high enough to speed up the cooking. I continue to use it as a regular charcoal grill and it does the job. But when it comes to smoking... The temperature is so difficult to control. What I have been doing is just cooking my barbecue in the crock pot first and then just hitting it with a low temp smoke for 30 minutes at the end. Believe it or not... This produces WONDERFUL results! In fact, I think you should make a video testing this method out vs. a traditional smoke. I love you both SO MUCH!
Oh! I just remembered... This last time I used it, one wheel completely broke off just from moving it outside and back in. No steps! lol
Great video Ninja! So glad you are enjoying the charcoal. I’m impressed with such a beautiful brisket on that smoker. Watch out for the Kamado owners now!🤣🔥
😂😂😂 I love kamado grills too! THAT WAS A JOKE!!! 😂😂😂😂
Wild! It's a great smoker if you follow the instructions.
Preheat the smoker for a CPL hrs before cooking on it.
Never let it get passed 400 degrees.
Add water under the meat prior to cooking.
Patina is natural for the smoker, it will make it last longer if cared for as well.
Glad you made the effort. Good outcome. Tough process. Thanks.
Thanks Floyd! I dont really think it is worth it... But it is a very popular smoker because of the price so now at least we know what we are getting!
I bought one of these smokers 2 years ago because it was the only one I could afford and I really missed smoking. It is one of the worst things I've ever cooked on, but with time and practice, I was able to produce some good food on it. I was so happy to upgrade and give the thing away as soon as I was able.
Thanks Ninja for saving me the trouble of finding out for myself! I will watch your Weber Kettle brisket next since that is what I cook on. Was the taste of that one as good as this one?
The weber brisket was better than this one for sure... in my opinion.. as the wood used in that video was so incredibly amazing! 😀 Check it out!
@@SaltyTales Just watched it! OK - now I'll have to add a SNS to my Weber and get some of those Barrel Proof wood chunks! Happy Friday!
I have the same Smoker. To get stable temperature, use less coal and one Big piece of wood. And close the shudder to get minimum air in. Water in helps.
Another good trick it to only light the edge of your charcoals and allow it to burn across during the cook!
@@DayRider76 right, thats a way. I have lots of spare wood. So i mainly use one big chunk of it. You have to regulate air intake or the temperature will skyrocket. One piece of wood easy holds temperature for 4 hours.
You two are terrific! Thanks for the video!
Thanks Phil 👊🏻
When you buy a cheap offset before you even season it you do the mods to seal the unit and also replace temp gauge the ones that come with it can be as much as 100 deg out and your fuel use will drop considerably. My first one was a Chargrill which in my opinion is a great starter offset .Great video laughed my ass off.
Ninja, I loved this video!! It was so fun to watch. You had me laugh out loud when you started the selfies! LOL
Great video, informative, and REAL honesty. Love it!
Thanks brother! 😀😀
Great one Ninja! I use the water tray trick when I smoke with my ordinary Weber.
My biggest issue with a smoker like this is not that it can't make a good brisket (when an expert like you runs it). It's that this thing will fall apart after using it for only a year or two.
I agree! that is why I'm skeptical of it lasting more than 2 or 3 cooks. Just the issue with the paint will make the fire box roust really fast and with that metal quality I doubt it would last even a year. But it is also a popular smoker for beginners... Crazy stuff! 😂😂😂
Amazing result for that grill! 2 bags of charcoal? That is craaaaaaaaaaaazy! Nice work Ninja!
Thanks brother! It was a lot of work and the fire chamber is so small that the charcoal burns right away! Crazy stuff! 😀😀😀
Close the side damper to control airflow
More airflow hotter coals and more coals you use.
If he closed the side door the coals went out.
@@jonlavigne3270 when he had it closed he said it was HOTT
lol I took an angle grinder to mine and cut the fire box door off and made it wider.. I was stoking that thing like a train... I now use it for steaks... you did an amazing job.
For $119 the weber original kettle is a no brainer. So versatile. Grill, smoke, bake , plus there's aftermarket attachments for rotisseries... Planchas....pizza oven.. etc. Saves you two bags of FOGO and a broom the first cook
YES! that is one of the points of the video! Glad you got to the same conclusion! 😀
MAKE ME HUNGRY EVERY EPISODE!! SO GLAD I FOUND YOUR CHANNEL!!! LOVE YALL
great info, gracias!
Thank you so much! 😀😀
Wanting a reasonable smoker myself to start out with I really appreciate this video. I sincerely hope Ninja does more smoker reviews and settles on one to recommend for beginners! Good info from a skilled yet humble source, what's not to love?
Weber smokey mountain, watch some you tube videos on it and you will be expert on smoking. Buy one on Craigslist and save some money.
I couldn't quite tell how the charcoal basket in the main chamber looked, but some of those are mode to be flipped over to sit flush to the smoking chamber and it helps distribute the heat and smoke.
That was just a piece of metal with borders and a few holes at the bottom... Nothing sophisticated.
@@SaltyTales if you flip it upside down would it work to cover the fire hole and redirect the smoke and spread out the heat?
Upside down bring other problems… you want the fat cap to be always towards the heat so it renders on the meat. That is why i flipped but never upside down. Hope it makes sense
@@SaltyTales I meant the charcoal basket upside down. Thx!
Cook or 2 and forget about it😆 I agree brotha. Good save on the brisket Ninja!
You can modify the grill if you want to put the time and money into it. Saw a video on RUclips where a guy modded his so he wouldn't lose so much smoke
So I actually bought this grill at Home Depot last fall for $59. It was on clearance. It was a low end grill obviously, but I looked online and there are videos of people who bought that exact grill and made some upgrades. The ones I put in were gaskets around every opening so that the smoke carries to the chimney. As well, I bought some food-safe silicone sealant to put around the chimney and all of the screws. For about $25 more it really made a difference!
Where did you find the silicone? Is it heat resistant?
@@davidw7531 it’s called Lava Lock Premium Silicone Sealant for BBQ, Smoker, and Wood Stoves. Found it On Amazon.
Ok, ffs, I damn near pissed myself during the selfies. 🤣🤣 Thank God someone else remembered that classic song. Great food and good laughs.... I'm too high for this shit right now.
🤣 thank you! 🤟🏻
I’ve never used a charcoal grill or a smoker. What should I get as a beginner?
Thank you. I was thinking about getting a smoker / grill. I would like to see what you consider to be a good choice for beginners.vdomething the temperature can be held well.
Good video. Opened my eyes to the cheaper stuff
Really liking the channel, you're killing it Ninja!
lol I bought this grill about a year ago for $99. I never bothered trying the smoker because it always leaked so much smoke. Props to you for making it work. Maybe I'll try now, wish me luck.
The B-roll of that brisket, omg 😱!!!
It’s been decided, heading over to my nearest BBQ joint for lunch!
NICE! send a few photos! 😀😀😀
I know I'm late ,but I'm pretty sure you could probably knab an electric smoker with temp control and all for around 200$ and a buck fifty at times on sale and be set for most cases.
Glad I saw this - thank you! to anyone that downvoted this video - you have a gaping hole in your heart
😆 I have an outdoor gourmet smoker but I seasoned it before using it and it’s held up ok 🤷🏻♂️ but it’s definitely more work
Thank you brother for the info.
Glad you liked it!
Mr. Ninja a savage with that Kamado joke 😂 love it brotha!
I have an Oklahoma Joes for a first smoker and the paint peeled on the fire box too. A little paint peel is minor.
Clean the Firebox and use Rust-Oleum 2000 degree paint and get you some firebricks and cut them on a wet saw 1/2 to 3/4 in thick and line the bottom of your Firebox and that will protect it. That's what happened to mine and I did that and it looks brand- new months and months later
@@bz7427 - nice! Well thanks for the tip. But I store my smoker in the shed under its cover. I’m not overly concerned about paint peel on the fire box. The sheet metal is of respectable thickness. I can see me having this smoker for years to come as it is right now.
Plus when the Oklahoma Joe dies it’s just gonna give me a good reason to upgrade to a better unit.
Though the Oklahoma joe Highlander model in my opinion is a very good smoker for a beginner.
Ok, now I need some more breakdowns of what is a good smoker design, and what is a good 'bang for the buck' choice out there.
Cheap electric smokers are great. I've had three, one ruined from leaving it out in the rain, one borrowed from a friend, and my current one with a glass door. They were ALL excellent. Combined with a $30 meat thermometer they can't be beat for taste and price. Got a nice cover for my current one. Won't let the rain and sun take another!
Great video! You should do a review of an electric smoker.
Thanks for your advise I was seriously going to buy but I’m not experienced I’m hoping to find one that I don’t have to babysit any other suggestions? FYI your very cute and great speaker thanks so much ☺️🥩
Nice and informative video man!
Thanks brother!
You should try the smoke vault 24 runs on propane for heat source & can use whatever wood you want. The tempature control is outstanding on those. I was thinking of getting one of those or just to smoke fish a Little Cheif
This is really another great experiment and in the end the brisket looks great👍👍👍
The brisket was great but it was also the most demanding one I've ever done! 😂😂😂 crazy lil grill!
Amazing video Ninja, wow that smoker would be a nice giveaway for the channel 🤣🤣🤣 you know I only had brisket like two times in my life and was just a little piece and tasted amazing, sooooo... I'll let you know as soon as I get to Miami 🤣
LOL You know what's up! 😀😀😀
Looks great but did you do a burn out to get rid of the paint and chemicals on the inside?
100k subs congratulations I subbed I'm going g to try to make that beef jerky looks amazing
i own this smoker and turn out great food on it , it is a little bit of baby sitting but its always been some of the best food i have cooked.
Can you compare cost of smoking in cheapest smoker ( like in this video ) vs medium or pro/proper one ? I mean charcoal usage/wood usage/time/manual effort ? Thx Ninja for this video :)
Let me see what I can do! 😀😀
the metal will buckle on the lid. respect to the cook making the smoker look good
Thank you Lennard!
I started smoking with a cheap Lowe’s off-set smoker. A newbie should start somewhere right? I recommend getting an offset smoker for your first smoking meats. One advantage of having one is… Learning and understanding temperatures, whether it be meat temperature, your temp on your smoker, or even the temperature on your digital monitor. And how much of a smoke you’re producing and what type of smoke as well, a thick cloudy smoke is not good, you have to have the “thin blue smoke” look it up. Again Temperature is key for sure when you’re starting out but once you get a hang of it, it’s actually really fun smoking on a offset.
If that doesn’t convince you… check out all the bbq pit masters they use offset smokers. Yea they’re professional grade and huge that can smoke to 12-25 pieces of meats. The principal, and the techniques are the same with the backyard offset smokers. They DO NOT use pellet smokers. Prove me wrong then I’ll give you 1 dollar.
Oh yes… It’s also inexpensive… if you don’t want to “babysit” your awesome cheap smoker and you just suck at smoking meats. You can just throw it away and it won’t hurt your pockets.
What would be the recommended smokers be for a budget? I’m looking to start to try to get into grilling/smoking cause that’s my favorite type of cooking but I’m on a big budget.
Craigslist and look for weber smokey mountain it's just for smoking. Weber kettle can do both less cooking area when smoking.
Holy crap.....you went for the nuts with that Kamado joke!!!!
🤣🤣🤣🤣 i had to clarify that right away! 🤣🤣🤣
For about a $130 you can buy a vertical electric smoker that is sturdier and much easier to use, specially for first time meat smokers
Def stick to the weber kettle for the price as a first smoker. I modded my kettle with a pizza pan underneath the grill grate to act as a heat deflector so you can use the whole cooking surface. It is a pain when you have to add fuel or wood but it's not that difficult to move everything out of the way to add fuel then put back. Either way, thanks for biting the bullet on this one to let us know not to get it lol.
mmm I may have the solution for you! Video coming up! 😂😂😂
Do like to see you try the Burch Barrel.
Should you soak the wood before putting it in? Been seeing aloting of videos where people say its a must?
Yes
I bought that grill. It is a lil flimsy and u have to do some work, but it's really not that bad. I mean not everybody wants to spend the money on an expensive smoker. I smoked ribs on it, and I've never even used a offset smoker and it did well for me. I couldnt imagine using 2 bags of charcoal tho. I used maybe half a bag and almost a full bag of wood chunks, so it does eat alot. But I'm no pro, just love bbq
Did my second ever brisket in one like this, came out great. Have a pellet grill now, and I have to put a few smoking bits of charcoal in there with it or it don’t taste right
(By in there i mean on the grill not in the hopper)
AWESOME! I most say... you are brave to make your 2nd brisket in this kind of grills! 😀 Good job!
@@SaltyTales first one was on a car wheel Hobo style.
Let’s just say its an upgrade from there 😅
Pit Boss makes Charcoal Blend Hardwood Pellets. Never tried them since I don't have a pellet smoker but according to their claim:
"Pit Boss Charcoal Blend Hardwood Pellets offer the bold aroma of oak hardwood with the robust, classic taste of smoky charcoal."
Wouldn't hurt to give 'em a try.
@@valvenator no one ever stocks the good pellets in my area, considering getting a pellet machine and just doing it myself at this rate.
E.g. local store advertised wine infused pellets, they didn’t stock bbq goods at all, basically told me if it existed they’d know about it 😂
I’m looking into buying a 300-400 dollar pellet smoker is that a smart idea?? Any recommendations for that price??
That is a good price for a decent pellet smoker. Walmart sells those vertical ones with good reviews
I've been looking into smoking any advice on a good price for entry level for a beginner? Really would love to make briskets for the summer for the family
I will recommend a pellet smoker, they are reliable and you don't need a lot of practice to pull a great cook. Check the links in the description. 😀
I've got a cheap electric smoker that works really well, easy to use. One downside of it is that i have to run mine at least 250 or higher or it doesn't smoke
My charbroil offset smoker was bought at walmart 15 years ago, shortly after I got it, it was discontinued? It's the heavy steel one with the side pipe not in the lid. All of my friends and family have been trying to find a grill as good as mine ever since. I guess I got lucky. It's the only grill I use to this day and feel I could out cook anybody with it! I had my eye on it for a while, but couldn't afford the $450 price tag. So my mom got it for me as a wedding gift. Love ya mom.
450$ for a smoker? For 450$ you can have one custom made with better materials.
@@verdele Oh no, it's worth it. It's 15 years old and I wouldn't sell it for that. It's not anything like the ones you can buy today. It's made out of heavy steel.
Besides the pedal grill what kind of side burner do you recommend
WOW Now that took a lot of work just to keep this brisket going. Nice job with what you had.
I agree wholeheartedly that this type of inexpensive smoker is not for the novice people with more experience smoking meats would only be able to get the results you did because of your experience. It did look really good I can’t wait for smell of vision to be a real deal. Miss ninja we need more singing from you.
LOL it came out very good but again, that smoker is not the best thing for anyone starting into this world... Thank you Johnny! 😀😀
Can you smoke something over an open fire on a spit?
I am also struggling to keep the temp on my cheap smoke high enough. I am burning lots of coal and wood. I already installed some gaskets but it is still the same. Can you help me?
do you recommend a better smoker around the 1k?
I bought a $99.00, offset smoker from Wal*Mart and knew so little about smoking meat that I did not even know it was cheap. It lasted me over a year until it turned to rust. My first few attempts to cook on it were okay. However once I got the hang of it, all it took was the aroma of my cooking to bring all my neighbors over with sides and beer. you see it's not really the grill, but the cook that matters.
Legend
What. Smoker would you recommend then i just subscribed can you make a beginner video
Turn the grill away from the wind. Easy way for your issues.
put less coal when you do the smoking part and keep the "doors" closed so wood doesn't ignite, it will slow burn and produce more smoke. No airflow = no oxyjen= less fire = temperature drops! When u keep both doors open the flow is higher an the coal burns faster.....
Not to mention the wind direction, was pushing air right into the box igniting the charcoal which eat all his fuel. The one redflag is that the fire is leaking into the smoker.
Hahaha I bought this grill, have cooked a good amount of wagyu on it. Just cooked some A5 picanha today on it 😂😂🤤🥩
I have added smoke to like steaks but never put coals in the side one, always the main part just only half and put meat far opposite from the fire, add some chips to smoke and close the whole thing up. Since it leaks smoke anyway it works surprisingly well .
and have already drilled through the ash catch plate to use the hooks instead of grabbing the grate, it started separating after like 4 cooks
Dude, stay away from the clickbait titles. we love you no matter what. :)
My brother-in-law has that same exact smoker and it sucks lmao I tried my hardest to make some ribs on it and it wouldn’t keep the temp so I just put it on my Pitt boss pellet smoker and called it a day lol
LOL it is a very popular little smoker... But as you said it is crap! 😀😀😀
All those meat juices. I like to save it sometimes and add it to dishes like when i'm making ramen, ill put a scoop into the broth to make the flavor more ultimate lmao
Yum, that’s the way to go!
You mentioned how much charcoal and wood it took and I took it to mean it wasn't very efficient. Out of curiosity how much wood and charcoal would you normally need to do this cook using a different smoker?
In the weber, which it is not the best machine for smoking, I will normally use 1/2 a bag or less for this cook. It is all about air control and that is what makes the charcoal and fuel in general go fast. The odd thing is that even using that amount of coals it was very difficult to keep the temp inside constant.
@@SaltyTales Thanks for the reply! I've only done a little smoking on a Komado Jr so thanks for the comparisons!
You guys are awesome very entertaining 👏😀
thanks David! 😀😀
I use my webber to smoke. It works just fine
Oh man! You got that right baby! 😀😀
Found the same smoker for $94. Saw a vertical one for $89 and a stove top smoker for $54.
If you only have Walmart near you, you can get a cheap pelet smoker from them too. Will be looking out for you tomorrow at Broward Meats ;-)
Awesome! I'll be there! 😀
@@SaltyTales I couldn't wait I'm here now picking up a load of skirt steak for my son's birthday on Sunday.
I'd buy that, and bolt it to my vw dunebuggy for when we do our yearly Long Lake trip, we stop every five minutes for a beer, so I could babysit it. LOL! Now, as a Ninja in training, I can say, yes, you are a master and every video, you prove it. I trust your review, only a master could make that tin bucket produce that result. 🤣🤣🤣 that is definitely a great idea! I’ll check it out and give you my honest opinion for sure! Thanks my brother! Your comments and support always make all my work worth it! 😀
How long is it gonna last until it starts to rust
Thank you for spending your money so we don't have to! 😂😂
I took this one for the team! 😀😀
It work good Tale you could cook pizza bake a cake smoke a gator fan the possibilities are maddening. Keep using it you hear me?…the water pan it’s good idea too…
The only real difference between high price and low prices on grills is the space inside and your ability to control temperatures atleast that’s what I’ve noticed when using them the outcome will be the same if you know what you’re doing.
Can’t get a more fair review than that. Well done Ninja!
- You CAN make a good brisket with it...IF you know what you’re doing.
-Temp impossible to control without ‘aftermarket’ add-ons.
-Plan on using an inefficiently stupid amount of fuel.
-The ash blowing all over the meat was particularly disturbing. (maybe install a fine mesh screen. Again, aftermarket add-on.)
-The inferior paint will turn it into a backyard pile of rust in no time that the wife will NOT tolerate...no matter how good the brisket turns out.
🤣🤣🤣 that was the first complaint i got! “Would that become rusted?” 🤣🤣🤣
I found this guy today and I already trust him
I paid 35$ for my smokin ace it cooks like a champ...after some work tho. When people ask me for a good cheap grill i say weber kettle.
Weber is the answer all the time! 😂😂😂
