Welcome back to KY Jeremy and fam! Love watching your content, I've been trying to learn good BBQ while in Kansas City, and your expertise has really helped! Hope all is well.
Jeremy so now I don't feel bad owning a think oklahoma joe highland. Been making wonderful bbq with it!
Charcoal and wood mix is always the best flavor IMO. There's something about the charcoal that brings an extra kick to the BBQ flavor. I always mix the two with my offset and never go pure wood.
Horn BBQ is killing it you should go check it out.
The age old BBQ rule holds true. A cheap smoker is always 1000 times better than no smoker at all
Well, in my country the saying is: you only need fire, salt and beef...everything else is to cover up the fact you dont know how to make an asado ☻

My daughter and I rolled into a small local BBQ comp with a COS smoker. The looks we got were not good. But the looks we got when we took 1st in ribs and 2nd overall were priceless! A memory she and I still talk about years later.
You are 100% on point about equipment is nice, but its all about the Pit Master!
What was your recipe/process
@@Halfwaked I used a modified version of the 3-2-1 method. The wrapped part was based on what was needed for the meat and the final part was just to set the sauce, maybe 30 min.
Recipe is my own. Turbinado sugar, salt, pepper, granulated onion, granulated garlic, chili powder and ground oregano for the rub. Wrapped was butter, brown sugar, agave syrup, tiger sauce. Final glaze was drippings from the wrapped step, sweet baby rays and apple cider vinegar.

Just amazes me how some people think that just because you arent using a high end super expensive smoker or grill you can't make great delicious food. It's all about the love and time you put into it.
Because that's what people are sold on. Buy this bike you'll be Lance Armstrong. Buy these golf clubs you'll be Tiger Woods. I watching a bbq competition yrs ago. The guy that won did it with a smoker he made from a trash can. Some of those guys that trailered in their smoker were not happy.

Amazing!!! I'm 62 and I have been smoking and barbecuing meets all of my life. My father was a pitmaster and I learned everything from him. I literally went out and bought the exact same barbecue pit from home Depot. After driving semi trucks for 30 years I retired and now I've returned to my passion of cooking and catering. But it's just like you said, I had to use every bit of my skills and experience to manage that damn offset smoker box to keep the smoke clean and the temperature steady. My first brisket cooked on it came out just like yours, but I mean I had to watch it like a hawk like every 35 to 45 minutes. Hey my friend, mine came with the tray with the handles attached on both ends so you could raise it or lower it two different settings for just straight grilling. I appreciate your video because I actually felt guilty for buying such a cheap grill 🫵😂👌 I subscribed and hope to see more...God Bless and much success. Amen!

Hahaha, true.
I've made some epic ribs and other good stuff on the same level BBQ setup. I think the brand was Char-Griller from Lowes. It worked just fine for many many years before it rusted away.
@RedKing "You mean I don't have to have baffles, a water tray, and a spray bottle?!" Just wait till he finds out that removing the membrane and wrapping ribs really don't have much of an affect on the final product.
That flimsy smoker won't last though

This cheap grill is a smoker/grill and does a very good job for a small family. Your choice :$249.00 at Tractor Supply or $199.00 at Home Depot
I started out on an inexpensive ($150) Home Depot smoker 12 years ago. That smoker was a pain to maintain temp, it was constant babysitting. That being said I almost always got great results in the end. The hardest part was avoiding huge temp swings. Although I feel like learning on something like that where it’s such a challenge made me better for when I upgraded to a better quality smoker.
Yes!
That's where I'm at with mine. Gonna let this one run it's course. At that point I'll sit the wife down and start explaining why there's a delivery team in the backyard
When you realize he's using your smoker 💀💀
That’s the smoker I own. I smoke some awesome ribs, butt extra in it. No shame.
Haha same here
same lol
For those who have that smoker how does it look now is it super rusty ? I have a offset smoker char-grilled (cheap) and with the 4 time smoking the paint on the offset is peeling off
Yave, the paint burns right off this one too. It basically a rust bucket after a season or two.
As my grand daddy used to tell me "it ain't the arrow, it's the archer."
This is exactly what I thought. He basically says as much at 16:00.
Yeah but smokers like this dont last and have tons of things that make life even harder for newbs. They ruin a brisket and think its their fault and not the fact that theres no cooling plate stopping fire from going from the pit to the chamber. Thats a cheap design flaw that will ruin a brisket. Cheap smokers like this are no ones friend.
And a dull knife cuts as well in any hand.
amazing words right there
Alton Brown smoked fish in a cardboard box. If a person is willing to put in the effort to get a good product, they will get a good product.
Him: This thing is leaving with me for just over $100.

I've been using this smoker for the past 2 years. It has taught me a lot about fire/heat management. So far it's worked great.
What do you do about the grease not draining?
Thank you. I just made my 1st Brisket yesterday. I Just bought a Oklahoma Joe offset about 7 months ago. I'm still a novice. However following your advice, I made the best Brisket I've ever eaten yesterday. Multiple compliments from those who partook of it on Thanksgiving. While I didn't give mine a 10 of 10, it was the best I've had so far to date.

I love the end of this video. For father's day, my wife bought me a cheap 16 inch Char-Broil bullet smoker. I've never had one and have been wanting a nicer pellet smoker. However, just not in the budget for now. So far, I've been pretty damn happy with it. Still learning, but that's how we get better, right?
I have a "cheap" king griller by char griller. I added felt gaskets to cut down on the smoke loss and lowered the internal chimney. It smokes meat better than most other grills just out of the box. Cheap isnt always bad. If done properly.
You do not have to spend alot of money on a smoker to have great tasting BBQ you just need to know how to control the temperature cut trim the meat and seasonings and wood
What’s funny is that I keep getting served CharGriller ads on nearly all these videos on this channel. 😂😂
@@Patrick94GSR yep they are tracking your BBQ. .
I just got what sounds like the same model, looked it up and they called it the "Smokin' Ace". Interested in modding it too after using it twice. First time was just smoking tomatoes and peppers for salsa. Out of the gate, couldn't help but notice the lower grate, steel insert can be flipped upside down and propped up, to what makes a pretty efficient reverse smoking device! Keeps the raw fire from going right into the cook chamber, at the very least. I'm thinking of adding a secobd chimney on the RH side just for this purpose, and just close the other one off when doing this. Your thoughts? Anyone else tried this? How much lower did you drop your original chimney to, interested in trying that and felt stripping too.
Opinion: one of my favorite parts of BBQ is the fire management, hovering over the meat, drinking beer, and chatting with friends while we enjoy the smoke and "idea" of BBQing :) This is probably why I have only ever used cheap Char-Broil offsets :)
Good times for sure!!
I 100% agree with you

This is more of a testament to Jeremy’s skill than anything else. I started on a smoker like the one he used and there’s no way I could’ve pulled this off.
Exactly, I this this is a testament to how much he understands wood and fire and his ability to manage a fire. Anyone can trim, season, temp and wrap a brisket, it’s the fire that especially in that type of smoker that makes or breaks it.
Place a 10” metal pan full of water just under grates on firebox side I set mine on red bricks 🧱 this keeps and flames off meat also reduces hot spot on firebox side. Also drill hole in bottom of cook chamber for a grease drain and place large metal coffee can underneath
Love watching this because you showing average joes that even with a low end smoker its all on the skills and experience a person has. Awesome brisket
Except average Joes don't have the skills, talents, and experience, so they won't be able to dominate their smokers like Mr Yoder does. I'm proof of that. lol. Wait. No. That's sad. lol

Jeremy the paint will come off of the se smokers but only in spots. Take a wire brush. Clears the paint where it bubbled. It will be bare metal. Hit it with canola oil and it will season just like your 500 gallon smoker's firebox. Also, you should have use a drip pan.
The part about the musicians is incredibly spot on. It’s the same thing with any profession or hobby. You can do some pretty awesome things on beginner items as long as you have the dedication and experience.
I actually love a cheap ass grill, I throw them away every 3 years and the cost per use is like 1 dollar. I bought a mini charcoal grill at Walmart for $14 and I’ve used it probably 50 times camping, you don’t have to be rich to grill great meat.
So, in the words of Harry Soo, it isn't the pit but the pitmaster :)
was just about to say this lol.
Just like anything you cook, it comes down to quality ingredients, technique and heat management.
I think it's definitely the skills you bring to the tools... Granted some tools are nice, but it's the experience, knowledge and understanding of what is required to produce a wicked brisket. The only thing to note, is this smoker will probably only last 3 or 4 more cooks without maintenance. Also not to mention the amount of time spent managing that fire.
Have you ever made Harrys ribs that use V8 mango peach? Kind of pricey when you initially buy everything but well worth it!
Only a bad mechanic blames his tools. Tool is only as good as the person using it.
I just bought that exact offset a few weeks ago and after watching a ton of your videos for the first time successfully smoked ribs. I had tried before low and slow on a charcoal grill, but never knew to get them to pull away from the bone to kick up the heat towards the end. This smoker def does require a lot more attention to the fire box and more fire management, but when you enjoy it itndoesnt matter :) thanks for all of thebvery informative videos you've helped me raise my cooking level alot! My wife actually said she never liked brisket...one day I will follow your guides and see if I can change her mind
That $199 chargriller you showed very briefly, I used one of those probably twice a week for almost 6 years. Always stored uncovered and cleaned out once a year. I loved that thing. It made bbq so good my family quit buying bbq eating out.
My mom has had one since I was a little kid and it always impressed me and last week for my 20th birthday she gave me my own! It's such a great grill for the price. Especially with the cast iron grates.
@@aidanmakinster922 it really is a great piece. I had to replace the wheels with a pair from harbor freight, but I moved it a lot. I took it camping and to friends houses for parties and stuff. I bet if it didn’t travel so often the wheels would last years on end.
@@aidanmakinster922 I have pretty much the same thing made by Oklahoma joes now and honestly, I like the $199 char griller better.

That part
Suprisingly, he has some very informative and easy to follow videos covering this process for small and large smokers. I learned from him and can guarantee that you do not have to be a pro to get these results!
underrated . source: have experience on this thing. It's not easy.
Gotta start somewhere! Or just buy a traeger
I will tell you first hand, I bought a cheaper packer (still Choice, but cheap) from Costco and put it in a $400 cabinet pellet smoker, following instructions he's provided in other videos and modified slightly for my own smoker type. I'd cooked on indirect heat before, but never an actual smoker, and I turned out a pretty damned good brisket. So yeah, even with cheaper equipment, if you can follow the experts and their instructional videos, you can still turn out some good quality as an amateur.
My wife bought me the same one in June and I'm honestly impressed. Fire management is a constant job with it though. Mine came with a drip pan however.
Had a similar offset form HD for about 3 years. Leaked like a sieve and burned charcoal by the bag for a 4 hour cook. Did a bunch of mods that helped. Finally dumped it for a weber kettle. Much better. Also now have a camp chef sg. Love them both.

A suggestion on avoiding the paint bubbling is doing seasoning burns before you start cooking. Do 3-4 small low temperature burns that last 30-45 mins. This allows the paint to cure and bond with the metal better.
Also a good idea if you don't want a smoked paint flavored brisket.....
how low of temperature , under 250 degree? With charcoals?
Fuck all that, I bought a can of grill paint from home depot and sprayed the whole can of it on the grill. Did a high temp burn in the day after the paint dried and the rest is history. I've had about 5 smokes on it and the paint I'd barely bubbled
I own an inexpensive off set smoker very similar to the one used in this video. It sits outside year round, has quite a bit of exterior rust, most of the paint is gone and it makes some of the best smoked BBQ I've ever tasted. I never use charcoal. Use Hard wood chunks and get a good fire going and let it burn down to mostly coals. Use the vent on the fire box to control the air/fuel ratio and add wood as needed to maintain smoke and temperature. These smokers are labor intensive and require frequent checking but the labor is worth it in the end if you do it right.
But seeing the paint was bubbling on its first go it’s practically a disposable smoker 😂
This is why you start the 1st fire without any food in it. You want to burn any of the chemicals off.
@@carlhall2563 Plus all the paint apparently.
I own that grill/smoker, 5 cooks no paint bubbling or discolor.
I love this dude he just drags the smoker off the display and puts it in his truck.
I knew even before the conclusion, it would all come down to your knowledge and understanding. Attentiveness etc. That looked awesome, we don't get bbq places here in the UK like you guys do in the US. I am so jealous.
I bought the same grill and my first time smoking a brisket. It turned out way better than I thought. Thanks for the vids
A lot of people make great brisket on a $80 Weber kettle, and it is damn durable.
Mine cost 80 and my picky eater mother in law raves about my brisket and turkey that I smoke on it. I'm a disabled Vet that can't afford an expensive smoker, if I can smoke a goat in the middle east then I can use a cheap smoker in the U.S
I didn't even pay that for my kettle. Got it used for $25, it's the upgraded one with the enclosed ash tray and nothing was wrong with it at all. I still see them all over in great used condition for 20-50 bucks.
@@fmfdocbotl4358 how do you set up the coals? I have the same and have been working my way up to a brisket. Do you do a snake around the outer edge, with wood on top every so often or do you split it with charcoal/wood on one side and meat on the other?
@@jco1966 I do the split (the only split i can do). I keep the meat on one side and heat on the other. Its a pain in the ass but it always turns out great. Next year I'm going to upgrade to a 55 gal drum cooker because I'm planning on having some troops from the base over for thanksgiving.
I use my kettle more than my home built offset. It's so damn easy.
Hey Mad Scientist! I just wanted to let you know that I followed your recommendations on smoking a turkey and the results were amazing. I had very good BBQ skills before I started watching youtube...but you seemed to have the right blend of presentation and quality information that rang true to my experience. I followed your suggestions, to the letter, for smoking a turkey yesterday for Thanksgiving and my followers are still raving about the smoke, flavor, coloring and have pronounced my BBQ legacy intact and secure!!! Please keep doing what you are doing....and I will keep an eye on you, my BBQ brother!
I really think it comes down to your talent. I mean you took the time you adjusted on the size of the wood. You made the magic happen.!! It looks so good!!
Love it, but the problem with buying a cheap smoker is that, as he mentioned, the paint burns away immediately and 2 weeks later you have rust holes throughout the smoker. It then becomes a large paperweight in your backyard lol

Thank you, Jeremy for giving me hope that I can cook a tasty brisket on an affordable smoker. And I’ve learned and will continue to learn by being subscribed to your channel.
The greatest thing about your videos,is the 100% honesty in the way you are keep it up.
I received that smoker for Xmas in 2020 and it's always produced great smoked meats. I'm glad to see your surprise on how great it tasted.
Drinking game: take a shot every time he says, “500 gallon offset”
nahhhh....funnel beer the entire time he leaves the door open on the smoker.
@I Hate You All this is the first video of his I ever watched so idk if he says it in other videos. I made an original joke, so dunno how it became not funny 20 years ago. But what I do know, is that you can blow me.
I'm drunk, hehe, 🔥
😂 lol
Thanks for making this video and letting me know I’m not crazy. I have a cheap POS char-broiler smoker ($199 Home Depot). And I have the hardest time managing the fire. It leaks heat everywhere and I’m constantly playing with the fire and adding wood and charcoals every 20-30 minutes, just like you did... but the brisket always tastes amazing. At first I just thought I was doing something wrong, but realized it’s just the cheap smoker.
Lately , I’ve just been smoking it 4-6 hours on the smoker, then wrapping it and finishing it in my kitchen oven. Partly because I’m lazy, but mostly because the inconsistent heat and all the fire fiddling takes all the fun out of the cook. After 4-5 hours I’m just over it.
This was my first experience with offset smoking and I’m looking forward to upgrading. I’m getting ready to build my own offset, since I’m pretty decent at welding. Thanks for the video. It was really helpful.
I love this video. My smoker is a little larger than this and your fire management tips on getting clean smoke has really improved my bbq
I recently switched from Qstoves to Asmoke and I must say, I'm thrilled with my decision! The precise temperature control and the incredible smokey flavor that the Asmoke grill imparts to the food is unparalleled. I love the fact that it uses wood pellets, which not only is an eco-friendly option but also comes in a variety of flavors, enhancing the taste and aroma of the food. The convenience of automated temperature control and pellet feeding is a game changer. Plus, the portable design makes it perfect for outings. The Asmoke Essential has truly transformed my grilling experience, making it more efficient and enjoyable. Highly recommended to all grilling enthusiasts out there! #Asmoke
Oh my god, I'm only 2 mins into this so far and I just laughed so hard when he tosses it in the truck like a sack of potatoes. lol
I love how he went from looking like an over grown teenager too looking like a full grown man after his Huntring Trip haha.
Before I married his daughter, my father in law asked one of his friends, the grill master at a fancy bbq place, to teach me how to do a proper Brazilian bbq. The grill we used was a literal hole in the ground that he dug before putting the wood in. The real trick was in the preparation of the meat, and in knowing how to handle it while on the heat, just like what is demonstrated in this video. I haven’t met a grill since that I can’t get good stuff off of. Though Brazilian bbq is a different technique than offset smoking, I’m not at all surprised that the cheapest thing out there will work handsomely. Found this vid because I’m looking to try offset smoking. Gonna go pick up something similar to what you used, tomorrow 😄
I don't have an offset smoker but I run a gas BBQ and a charcoal BBQ in my back garden. I've had so many models over the years. The food tastes the same regardless of how much the gear costs but the more expensive stuff just makes life easier. You get to spend a little more time enjoying a beer with friends over having to "manage" the cooking process.
Please do more with the smoker I believe a lot of people have backyard smokers like the one you bought and need help using those rather than the big competition size smokers
This was my first smoker. I made a lot of briskets and ribs on that thing and, although fire management was a full time job.. It always made pretty good meat. That said, I don't miss it.
😆😅
I just bought a cheapo offset to try and learn smoking, see if it's for me. And your video has given me so much heart to keep trying. Learning a lot heh thanks
I just picked up an offset smoker from a guy on fb marketplace for $40. Watching this makes me glad I got it used. The burning paint smell is definitely something I don't like. I had no idea how to use a smoker until I watched this. Thanks.
Really enjoyed watching your surprise! Kudos to your BBQing skills Jeremy!!
2:34 woah, Home Depot really is the manly place to be. You arrive bare-faced and leave with a full blown mustache.
🤣🤣
I just got this exact set up from my wife as a birthday gift..lol.
I smoked a pork butt for the first time ever, and while its not up to par with you, I followed some of your steps and it turned out ok. Definitely going to keep doing and trying more.. Everyone says I'm a natural..lol.
Thanks for the inspiration.
Out of all the videos I have watched this is by FAR the most informative! Great work!
Cook on it another 10 times, leave it in the rain a bit. Then do another test. Make sure you've had your tetanus shot.
You can easily burn off any impurities before use I'm sure. Haha
You can get a cheap cover on ebay or amazon that's probably a third the cost of this smoker that will prolong it for quite some time - if you take proper care of even this one, it's probably the firebox that will die first. I think that's the weakest point on this, for longevity.
I love the negotiation with your pup 😂
As Newby I've learned so much from you. Wreck my first brisket using my Webber charcoal grill and too much wood, but I think I can get it done better this go 'round. Thanks for the videos!!
You're an expert that is why you can make an astounding brisket for cheap equipment.
Like my grandpa use to tell me “it’s not the size of the boat that matters, but the motion of the ocean”
14:56 he questions his entire existence
Great vid thanks for this 👍🏾
My wife bought me that same smoker a couple years back when my old barrel smoker rusted out. Cooked on it twice and gave up on it. I’m gonna have to give it another go!
Hahaha in Afghanistan I managed to cobble together a little offset smoker out of two metal garbage cans and bribed the cooks for a point, couldn’t even get a whole brisket. And no shit, it was one of the best damn briskets I’ve ever had. It wasn’t objectively good by ANY means! But in the middle of the desert between mortar attacks, it was incredible. Doesn’t take a whole lot, besides a whole lot of attention, to make good BBQ!
The fact that you can pick that up alone tells you everything you need to know about it.
That's the juiciest brisket I've seen on the BBQ vids I watch, good job!
i think if this was 20 years ago the answer would be no but now the quality of inexpensive equipment is so good it gets the job done.
This is hella motivating me and my buddies are doing our first full size brisket on my buddies grandpa's 30 year old offset
