    Ingredients:
    1 1/2 cups red lentils
    1 large onion, finely chopped
    2 cloves garlic, minced
    2 carrots, finely chopped
    2 celery stalks, finely chopped
    1 red bell pepper, diced
    2 cups crushed tomatoes
    2 tablespoon Nutritional Yeast Bolognese Seasoning Mix (optional): Below
    1 tablespoon tomato paste
    1 teaspoon dried oregano
    1 teaspoon dried basil
    1/2 teaspoon red pepper flakes (optional)
    Salt and black pepper to taste
    3 cups vegetable broth or water
    2 tablespoons olive oil
    Fresh basil for garnish
    Pasta of your choice (for serving)
    Nutritional Yeast Bolognese Seasoning Mix
    Ingredients:
    1/4 cup nutritional yeast
    1 tablespoon dried basil
    1 tablespoon dried oregano
    1 teaspoon garlic powder
    1 teaspoon onion powder
    1/2 teaspoon dried thyme
    1/2 teaspoon black pepper
    1/2 teaspoon sea salt

    I'm a vegetarian so I'm thankful you post the occasional meat free dishes. Please make your version of a vegetarian sausage or meatball or burger. I've tried, but failed every time. I don't want quorn or other processed foods. Nothing ultra processed. I'd be glad of your tutorial on such meals. Thanks. Xxxx

    Pancakes for breakfast, minestrone and sour dough for lunch, this for dinner = perfect veg day. You might miss your lamb chops, but I doubt it :) This is a fantastic recipe. Not all good things have to have an animal in it. Thanks Rik.

    I like the odd meat free meal and this will be one to try for sure. Just to note: As I watch your videos daily. I'm always surprised by one or two of your previous ones that I've missed. Today it was Massaman Curry Pie. A Rik original with a great tip on Thai cooking and coconut milk.

    Another great recipe for my grandaughter. She use to love spaghetti Bolognese when she was a mest eater, but trying to find a decent veggie Bolognese is difficult, so this is something my daughter can make for her thank you! Xx

    I add brown lentils to ground beef.... Not to stretch it, though it does...but for nutrition. Lentil Tacos rock too!

    As usual very good meal,and also very healthy, as you know i used to be a chef I actually went on a vegetarian cooking course at vegetarian cooking school in Stockport uk, I thoroughly enjoyed it I made a lot of vegetarian dishes after that, cheers Rik excellent dish as normal.

    I've been making sauces like this for over 45 years, and one tip I'd like to share is this: When serving (on pasta) sprinkle fresh herbs on top and immediately cover with grated cheese. This prevents the volatile oils in the herbs evaporating from the heat. Fragrant and flavourful. I learned this from cooking for two little girls who both declared the result delicious! 😁

    Here in the US, it's well known that "vegetarian" is an old Algonquin word meaning "lousy hunter". That said, having tried a number of your recipes and not been disappointed, I'll probably give this one a try too. 👍

    That looks delicious! Word of the day "Bolognese". I looked it up because I never knew the difference between it and regular spaghetti sauce. I'm trying to lose weight and cut back on carbs so I think I can prepare the red lentil Bolognese without pasta. Question: what is the purpose of adding yeast? What does it add to the dish?       Yeast adds additional protein and it adds a yummy taste similar to Parmesan cheese.

    Did you by any chance replace the knob on your pan lid?! I have two pans that were spoiled by broken knobs where the lids had been dropped or otherwise damaged. I a few knobs like that for pennies from Amazon and hey presto, smart pans again! PS The meal looks great.

    Hi Rick ! Loving your channel and the recipes you demonstrate are great ! One problem though. I can't print the recipes without the completely black back ground. Also, when I do print the recipe the font is so small that I can barely read it. Any solutions would be GREATLY appreciated !!!

    Rik, this looks good but can non-red lentils be used? Where I live, in Northumberland County Virginia, I have not been able to find the red. We are 90 minutes away from a city big enough to find them.

    That "miniature cleaver" looks excellent! I Use a full cleaver as my daily as its tall and saves my fingers! {I'm a clumsy cook!} It's tall and not grooved though so things like Potato "stick" to it... 😤.... That "little cleaver" though looks like it negates most of those issues. Great Thai thinking right there!
