I LOVE your hummus, it's a game changer!!!! I hate the Beyond beef because when I try to cook with it it has such a strong cat food smell and it lingers long after cooking! When I bought a Beyond burger in a restaurant didn't smell bad at all, so I have no idea what I'm doing wrong!
Please, feature your family more, they are so funny! I've only been vegan for 4 months but I have to agree with your parents already, I'll choose a lentil bolognese over beyond beef every time. Plus, they are much more healthy!
Okay no joke, I made this tonight with components from both recipes. One of them being the addition of cashew cream. At the end of the recipe I go to grab the cashew cream from the fridge that I had made that morning. As I am measuring it out I'm wondering why it is so much thicker than it was when I made it in the morning. I figure it must be what it does when refrigerated, so I proceed to add it to the sauce. I mix it in and go to put the the container back in the fridge only to get some "cream" on my finger. I lick it and realize to my heart dropping horror that it was the hummus I had also made that morning. :( so anyways I just continue on, I taste it to see what the hummus did to my poor sauce. To my surprise it was still pretty tasty! Nisha, you have a bullet proof recipe the even when I'm on edibles I can still make a mean bolognese. Thank you!

Yeah it's interesting. Having lived in Asia 10 years and come back to the US 3 years go, what stands out to me is how heavily we productize lifestyles in the US. Being Vegan has almost become a product - or maybe it's associated with expensive products in bougie stores or the special aisles of whole foods. A nation of Indians has a vegan population who never needed "beyond" anything, for example. (for the record, I'm not vegan, but it frustrates me that non-vegans understanding of cooking vegan is influenced so much by what they see in products and marketing).
I ate plain legumes and grains for years. Saved a fortune. Specially cooked recipes taste all the more better when you learn to enjoy plain food for a while
that's so funny because I'm white and I had people that I called aunties and uncles that weren't blood so I guess it doesn't just stop with brown people, stop anti white racism.

I’ve made the lentil bolognese many times since you first shared the recipe with us, and made it for guests twice, and it’s proven to be a true “go to” recipe that is quick, easy, and always delicious. My husband makes the fettuccine from scratch, using good quality semolina wheat, and I had already, on my own, experimented with using Beyond Beef instead of lentils (I cook with Beyond Beef all the time, I usually have a pound or two in the freezer, it’s a direct substitute for most any recipe that calls for ground beef) but, like your parents said, for this recipe the lentils are the right answer. I’m going to try red wine instead of vegetable broth the next time I make it, see how that changes it. Thank you for all the great recipes, and thank you for the wonderfully upbeat and encouraging videos on how to make them. Tomorrow night I’m going to make your tomato and white bean casserole, trying it for the first time.

I live in Italy, and while my bolognese is probably not authentic at all (being from UK and vegetarian), I've been taught to start with soffritto, which is finally chopped onion, carrot and celery. I do feel quite lucky to have fancy pants pasta waaay cheaper here, but honestly I'd swap it for Indian food any day (shhhh!)

First off... I love the family panel. Your parents are so cute!!! I use the beyond burger meat for Boglanais sauce.(My husband is a meat eater fyi and doesn't even know.) Learned from an Italian women when we lived in Italy for 2 years. She tought me to take canned tomatoes, drain the liquid into a pan and simmer with seasoning, and roast the tomatoes in the oven to carmilize them. OMG !! The umamai overload is huge pay off. She used red wine in the sauce, we were drinking with the meal.
Ooh i love that tip! I’ve done that before for marinara sauce (separate the liquids boil it down, cook with oregano and chili flakes, and then cooked the tomatoes down separately...but never tried roasting the tomatoes). I am so excited to try that!

I tried out the lentil Bolognese recipe, but I sorta made a hybrid, I added the cashew cream to lentil version, and I didn't have balsamic, so I threw in apple cider instead. Tasted amazing all the same ❤ Thanks for the recipe, simple and scrumdiddlyumptious
You can add some fine soya chunks (almost the size of lentils) to get the meaty texture. I usually fry these chunks in a bit of olive oil and a bit of vinegar till it is just about to burn a bit..it gives that smoky/meaty odour/flavor
I just love your panel videos! Your guests were wonderful, and your parents rock! My vegetarian kid does not like "Beyond Meat". She says that as a vegetarian she doesn't want a meat replacement; it goes against the basic principles she's trying to follow. She says she didn't give up meat to try and find meat substitutes. We buy really expensive dried pasta, and use it with homemade Arrabiata from Marcella Hazan.
Your kid is wise beyond her years; it took me years to figure out that meat substitutes usually just end up being as unhealthy as the meat itself anyway. Also not mention making me kind of nauseous how close they taste to real meat (especially beyond meat)

OMG Nisha, I made this tonight and I bow down to you for such an excellent recipe. I made the first one (without the Beyond meat substitute) and used red wine. Served it over chickpea spaghetti and it was absolutely devine. This will definitely be in my meal rotation from now on. Thank you so much

OK, substitution mania here because I didn't have some ingredients on hand: smashed chickpeas for the lentils and white wine (what???) for the red, and it STILL was amazing!!! I can't wait to make it again. Nisha, you are so wonderful, so creative, and so funny, and I love all your recipes and your videos. Congratulations on your fabulous work.
Those look really good! The other I made some lentil bolognese pretty similar to yours, but I used canned tomatoes and added some carrots for extra veggies, and a tiny pinch of cinnamon, nutmeg and sugar to cut the acidity. Even my picky vegetarian grandpa loved it! Also you should try making bolognese with TVP, my grandma hydrates the soy in soy sauce first, and then adds a full garlic head to the sauce, it's really amazing!

Tried the red lentil version. I was very sceptical about the walnuts but I like experimenting so I gave it a shot. It is AMAZING! Thank you so much for this! This is by far the best meat free bolognese recipe - and I've tried a few, even with meat replacement, crumbled tofu etc. This one is delicious! I can recommend it to everybody :)
First time making this tonight, I made a hybrid version between the budget and fancy version, basically added wine and cashew cream to the budget version. OMG outstanding dish loved it!
Hahahaha! I relate to that. I think that’s every Gujarati mom. 😂 All Italian pasta is too bland for them. We usually add what’s called the garlic dude dust from Gilroy to all pasta dishes and only then it’s edible.
I am not a vegan nor a vegetarian but I do take regular breaks from eating meat. So I’m definitely gonna try the lentil sauce! Looks delicious. Thanks!!
It's okay if you don't go fully vegetarian or vegan - if everyone just did meatless mondays, it would help a lot. Remember that the goal is reduction if you can 💛
i found your lentil bolognese after a google search a little while ago and it’s my favourite dish at the moment i always add some veggies like grated carrot and celery into it as my parents were always trying to get us to eat more veggies when they made a beef bolognese so it reminds me of that and makes it healthier
A note to people with sulfite sensitivity or allergy: citric acid is often made using sulfites as a cleaning agent; Beyond Beef contains potato starch which is also processed using sulfites to prevent oxidation on the potatoes; and of course red wine is full of sulfites (yes, even the « no sulfites added » type). For these reasons I will not be trying the fancier version of this recipe. However I am looking forward to the lentil based one, it’s on my menu list for this week. Thank you for sharing all your experiments.
Your videos are really helpful and I love the taste testers! Any video that features them is a favorite! I took your advice and got the oven thermometer. My oven temp was under by more than 40 degrees at 400!

Your bolognese recipe was my first attempt with red lentils. They definitely cook differently than other lentils but produced a much creamier texture. Family loved it! I’m eager to try it with the red wine to deglaze. As always, “Thank you” for your posts as they’ve made my vegan lifestyle so much more tasty! 😋
I made the first recipe today (with the wine) and ohhhhmyyyyyyyygooooooooodddd it's one of the best things I have ever cooked. I used to love bolognese before I went vegan 4 years ago and this was better than I'd ever remembered!!! thank you so much! I will say it took waaay longer than I was expecting but it was so worth it
Great video- really enjoyed comparison, and will need to try both! Here's a little trick for opening wine. Firmly grasp the foil at the top, twist and pull. It will come right off, and then the cork will come out cleanly no matter what your decorating method is. Easy and elegant.
This was so wonderful and wholesome watching your family's commentary. I have been on and off veggie for over a decade and also have a lot of veg friends. The friends that have been consistently plant-based for a long time all dont like the Beyond and Impossible meat substitutes, but it is great for someone like me who generally wants to eat more plant-based foods. I think it's a great 'transition' food or good to serve with a mixed group with some veg and some carnies
Hi Rainbow - I have cooked this recipe in several different ways now and the hybrid, no meaty stuff, recipe is the beast, I mean the best, no BEAST. Delisioso. One point - i cannot stand adding cream/milk/cashew to the dish (as the so-called traditional method) .It is meant to make it rich and creamy but , to me, makes it slimy. This is worse if you gave up milk because of this slimy feel. May I suggest adding a slack handful of soaked and finely chopped Italian dried mushrooms instead? This boosts the umami and enriches the meal to Michelin Star level. Mille grazie.
OMG - I did the lentil version and it was beyond fabulous. So rich and flavorful. I used mushroom broth as I had some open in the fridge, and canned tomato paste as that is what I had on hand. I have loved every recipe of yours that I have tried and this one was over the top. Thank you so much. And I loved the family panel of taste testers, your Dad is a hoot! I think that the beyond Meat products are very much intended to provide that meat experience for meat eaters who want to try to reduce their meat consumption or try going vegan and I applaud their efforts. However, I agree they are very meaty. I prefer Yves Veggie Cuisine, which I am not sure if you have in the US as it is a Canadian company that has been around for years. I use their veggie ground round in a chilli I make that also has spelt, and that gives it a very rick texture and favour but it does not smell or taste like meat. Thanks again for what you are doing, most gratefully appreciated.
I was taught to 'desour' tinned tomato paste by scraping the middle of the pan clear and frying it of there, with a small sprinkle of fine sugar. That gets rid of the 'tin' taste. I will definitely give this a go, with the sofrito suggestion, the wine (obviously!), and the cashew cream. I might even add a few coarsely chopped sun-dried tomatoes.

I just made the budget friendly version and it turned out great! The whole family loved it. No one missed the meat or cheese which was surprising for non vegans.
We have beyond meat burgers in South Africa but sadly I haven't seen the mince from them yet! I don't know if crumbling up the patties would work as a substitute for the beyond mince itself but your recipe honestly sounds lovely - both do! Thank you for always providing such hearty and fulfilling meals that don't have animal products or meat in them. Sometimes I run out of ideas and just run back to my tofu dishes
Wanted to add, to keep it more budget friendly, we use a port instead of red wine. You need less of it for the intense flavour, it lasts ages once opened (6+ weeks instead of days) and honestly we use it for months ahah. Port where I am (the UK) costs about ~10 for a reasonable bottle and it does us manny recipes :).

I made the lentil walnut one following the recipe on your website and it came out amazing! The one on your website does mention the red wine and I agree it makes a difference. Also one thing you didn’t do that I would recommend is boiling the walnuts in a vegan beef broth or at least soaking. I’ve made walnut taco meat before and usually you either soak or boil the walnuts for a bit to soften them and that makes a difference in the texture. I have plant based ground beef at my house but I figured it was too easy and I wanted something that was less mock-meaty and more whole food. The combination of lentils and walnuts is much more nutrient dense. And the flavor of the sauce at the end was very good. This will definitely be a keeper. I’m Italian American and grew up with meat gravy. Been veg for 12 years and only in the last years started making “meat” gravies again but I typically relied on using these plant-based ground beefs. I actually much prefer this one. The majority of Italian households will have all these ingredients at home.
How did you know I was already craving bolognese tonight? 🤭 I think for best results I’ll meet the two options in the middle (e.g., add wine and vegan cream to the lentil bolognese recipe). I don’t like anything too much like meat anymore, either!
I made the lentil Bolognese, but with a twist. I made it with mushrooms instead lf nuts. Makes it more chewy and remenicent of meat texture. The nuts add crunch but I want chewy

First off... I love the family panel. Your parents are so cute!!! I use the beyond burger meat for Boglanais sauce.(My husband is a meat eater fyi and doesn't even know.) Learned from an Italian women when we lived in Italy for 2 years. She tought me to take canned tomatoes, drain the liquid into a pan and simmer with seasoning, and roast the tomatoes in the oven to carmilize them. OMG !! The umamai overload is huge pay off. She used red wine in the sauce, we were drinking with the meal.
Ooh i love that tip! I’ve done that before for marinara sauce (separate the liquids boil it down, cook with oregano and chili flakes, and then cooked the tomatoes down separately...but never tried roasting the tomatoes). I am so excited to try that!

I tried out the lentil Bolognese recipe, but I sorta made a hybrid,
I added the cashew cream to lentil version, and I didn't have balsamic, so I threw in apple cider instead.
Tasted amazing all the same ❤

You can add some fine soya chunks (almost the size of lentils) to get the meaty texture. I usually fry these chunks in a bit of olive oil and a bit of vinegar till it is just about to burn a bit..it gives that smoky/meaty odour/flavor
I just love your panel videos! Your guests were wonderful, and your parents rock! My vegetarian kid does not like "Beyond Meat". She says that as a vegetarian she doesn't want a meat replacement; it goes against the basic principles she's trying to follow. She says she didn't give up meat to try and find meat substitutes. We buy really expensive dried pasta, and use it with homemade Arrabiata from Marcella Hazan.
Your kid is wise beyond her years; it took me years to figure out that meat substitutes usually just end up being as unhealthy as the meat itself anyway. Also not mention making me kind of nauseous how close they taste to real meat (especially beyond meat)

The tomato paste tube is also metal. In Middle Eastern food markets you can get tomato paste in a jar.

OK, substitution mania here because I didn't have some ingredients on hand: smashed chickpeas for the lentils and white wine (what???) for the red, and it STILL was amazing!!! Those look really good! The other I made some lentil bolognese pretty similar to yours, but I used canned tomatoes and added some carrots for extra veggies, and a tiny pinch of cinnamon, nutmeg and sugar to cut the acidity. Even my picky vegetarian grandpa loved it!
Also you should try making bolognese with TVP, my grandma hydrates the soy in soy sauce first, and then adds a full garlic head to the sauce, it's really amazing!
I am so intrigued by the TVP option - I just bought some TVP without any ideas for how to use it. Does your grandma roast the garlic in the oven?

Tried the red lentil version. I was very sceptical about the walnuts but I like experimenting so I gave it a shot. It is AMAZING! Thank you so much for this! This is by far the best meat free bolognese recipe - and I've tried a few, even with meat replacement, crumbled tofu etc. This one is delicious! I can recommend it to everybody :)
First time making this tonight, I made a hybrid version between the budget and fancy version, basically added wine and cashew cream to the budget version. OMG outstanding dish loved it!

Hahahaha! I relate to that. I think that’s every Gujarati mom. 😂 All Italian pasta is too bland for them. We usually add what’s called the garlic dude dust from Gilroy to all pasta dishes and only then it’s edible.

i found your lentil bolognese after a google search a little while ago and it’s my favourite dish at the moment i always add some veggies like grated carrot and celery into it as my parents were always trying to get us to eat more veggies when they made a beef bolognese so it reminds me of that and makes it healthier

A note to people with sulfite sensitivity or allergy: citric acid is often made using sulfites as a cleaning agent; Beyond Beef contains potato starch which is also processed using sulfites to prevent oxidation on the potatoes; and of course red wine is full of sulfites (yes, even the « no sulfites added » type). For these reasons I will not be trying the fancier version of this recipe. However I am looking forward to the lentil based one, it’s on my menu list for this week. Thank you for sharing all your experiments.

Also wishing I'd watched this before I made the lentil bolognese pasta yesterday - though I did deglaze the pan (and burn up the van LOL) with wine. Gonna try this recipe again until I get it to look as dreamy as in this video :)
Both look great but I would use a soffito (carrot celery onion) to make it that closer to traditional. Definitely would go the lentil one !

Your bolognese recipe was my first attempt with red lentils.
They definitely cook differently than other lentils but produced a much creamier texture.

I made the first recipe today (with the wine) and ohhhhmyyyyyyyygooooooooodddd it's one of the best things I have ever cooked. I used to love bolognese before I went vegan 4 years ago and this was better than I'd ever remembered!!! thank you so much! I will say it took waaay longer than I was expecting but it was so worth it
Great video- really enjoyed comparison, and will need to try both! Here's a little trick for opening wine. Firmly grasp the foil at the top, twist and pull. It will come right off, and then the cork will come out cleanly no matter what your decorating method is. Easy and elegant.

This was so wonderful and wholesome watching your family's commentary. I have been on and off veggie for over a decade and also have a lot of veg friends. The friends that have been consistently plant-based for a long time all dont like the Beyond and Impossible meat substitutes, but it is great for someone like me who generally wants to eat more plant-based foods. I think it's a great 'transition' food or good to serve with a mixed group with some veg and some carnies
Hi Rainbow - I have cooked this recipe in several different ways now and the hybrid, no meaty stuff, recipe is the beast, I mean the best, no BEAST. Delisioso. One point - i cannot stand adding cream/milk/cashew to the dish (as the so-called traditional method) .It is meant to make it rich and creamy but , to me, makes it slimy. This is worse if you gave up milk because of this slimy feel. May I suggest adding a slack handful of soaked and finely chopped Italian dried mushrooms instead? This boosts the umami and enriches the meal to Michelin Star level. Mille grazie.

OMG - I did the lentil version and it was beyond fabulous. So rich and flavorful. I used mushroom broth as I had some open in the fridge, and canned tomato paste as that is what I had on hand. I think that the beyond Meat products are very much intended to provide that meat experience for meat eaters who want to try to reduce their meat consumption or try going vegan and I applaud their efforts. However, I agree they are very meaty. I prefer Yves Veggie Cuisine, which I am not sure if you have in the US as it is a Canadian company that has been around for years. I use their veggie ground round in a chilli I make that also has spelt, and that gives it a very rick texture and favour but it does not smell or taste like meat. Thanks again for what you are doing, most gratefully appreciated.

I was taught to 'desour' tinned tomato paste by scraping the middle of the pan clear and frying it of there, with a small sprinkle of fine sugar. That gets rid of the 'tin' taste. I will definitely give this a go, with the sofrito suggestion, the wine (obviously!), and the cashew cream. I might even add a few coarsely chopped sun-dried tomatoes.
I'm not vegan but am trying different dishes, my daughter is vegan and has introduced me to different dishes. Can I say I adore your parents. Keep bringing this content!

I just made the budget friendly version and it turned out great! The whole family loved it. No one missed the meat or cheese which was surprising for non vegans.
We have beyond meat burgers in South Africa but sadly I haven't seen the mince from them yet! I don't know if crumbling up the patties would work as a substitute for the beyond mince itself but your recipe honestly sounds lovely - both do!
Thank you for always providing such hearty and fulfilling meals that don't have animal products or meat in them. Sometimes I run out of ideas and just run back to my tofu dishes

Wanted to add, to keep it more budget friendly, we use a port instead of red wine. You need less of it for the intense flavour, it lasts ages once opened (6+ weeks instead of days) and honestly we use it for months ahah. Port where I am (the UK) costs about ~10 for a reasonable bottle and it does us manny recipes :).

Im usually suspicious of vegan meals that try to replace traditional dishes with vegan substitutions (we have all seen the nachos cheese made with a carrot and a potato 🤮) but let me say, this was soooo good! I made the lentil walnut one following the recipe on your website and it came out amazing! The one on your website does mention the red wine and I agree it makes a difference.
Also one thing you didn’t do that I would recommend is boiling the walnuts in a vegan beef broth or at least soaking.
I’ve made walnut taco meat before and usually you either soak or boil the walnuts for a bit to soften them and that makes a difference in the texture.
I have plant based ground beef at my house but I figured it was too easy and I wanted something that was less mock-meaty and more whole food. The combination of lentils and walnuts is much more nutrient dense. And the flavor of the sauce at the end was very good. This will definitely be a keeper.
I’m Italian American and grew up with meat gravy. Been veg for 12 years and only in the last years started making “meat” gravies again but I typically relied on using these plant-based ground beefs. I actually much prefer this one. The majority of Italian households will have all these ingredients at home.
