- Sometimes you just want something classic. Nothing screams pasta like bolognese and I've made it my mission over the last few months to come up with a fool proof vegan bolognese that's better than the original. You read that right - "better" than the original. This bolognese has everything, salty, umami, crunchy, you name it. Believe me when I say you will not be disappointed with this recipe.

Best vegan bolognese I've come across. Thank you so much for sharing this recipe. Substituting the ground beef with ground mushrooms and walnuts works extremely well in other recipes too. So thanks for that tip as well!

I made this but without the oil and replaced the sugar with date paste. I added a few bay leaves too. Delicious! No need to add salt at all. Thank you👍👍👍

loved it, used as a pasta sauce and next day as the bolognese sauce for a scrumptious lasgne My advice is double the recipe and freeze any leftovers as it is a bit of work and a lot of ingredients but well worth it.
Love this recipe! I think at the end you added Basil not parsley? Also I added sun-dried tomatoes with some of its oil to my veggie sweating. Adds some additional flavour

I love the recipe. I made it for the first time and my son who never likes eaten vegan Bolognese not even notice that wasn't ground meat.
I also used the same mixture of walnuts and mushrooms to make my chile con carne. It was also very good.

Loved you recipe! Actually I think it's one of the best Vegan Bolognese recipes that there is.
One thing though, the recipe on your blog is different from the one you do in the video - in the blog the recipe doesn't include lentils.
And I love lentils!
This recipe looks SO GOOD. My husband has decided to go vegetarian as of today, but, he doesn't care for vegetables. I've been scouring the internet looking for recipes that he would enjoy and wouldn't make him miss meat and I think this will do nicely.

Although I've always been skeptical of nuts in my cooked food, I must say, this recipe is making me reconsider it. This looks amazing. I think I will try it.
The walnuts are really key to making the "mince" texture. Don't worry you won't be able to taste some strange "cooked nuts" flavour. They really just add texture. Try it, you won't be disappointed

I m italian no vegan and can tell you after have made this I am not going back to the traditional recipe. It's amazing the process and ingredients are exactly the one I've used all my life just switched the beef tor mushrooms and lentils....I am happily shocked the taste the texture the way sticks to the spaghetti omg amazing. Now if I can have some help for meatballs I will give up beef. I've tried so many recipes but failed any suggestions?

This looks very good! Thing is, I have somebody over for dinner who's allergic to nuts. Do you have any suggestions as to what I might replace the Walnuts with? Or do I just leave them out altogether?
Hmm, this is a tricky one as the walnuts are kinda key for the meatless meat mince. I think you could substitute them for ground tempeh or seitan ( use the same weight). I haven't tried this though so not sure how it would turn out. If you leave out the walnuts the dish will still taste great but the texture won't really be a bolognese. It will more resemble a vegetable ragu e.t.c... So its up to you what you want to try. Hope this helps!

As the (unofficial) Chinese celery evangelist, if you can find it and you like celery it's like "super celery" and not otherwise weird-tasting
oh also there's some SE Asian stuff called "mushroom seasoning", it comes in bags about a half-kilo or so, it's a little salty but not too much, and also the mushroom flavor is not weird and not overpowering, it's great as a late-stage seasoning adjustment for a dish like this.

I just made it and it came out delicious!The only additional ingredient I used was chicken seasoning (herbs and spices so still vegan). And because I only had 1 can of chopped tomatoes, I also added freshly chopped tomato. And since there's no crystal sugar in my kitchen, I used tbsp of honey.
I don't have food processor so I grated mushrooms, carrots, celery and chopped onion and garlic.
I looked up the recipe on your website and there’s no mention of lentils or stock whatsoever. Maybe you should correct that.
Hey Sebastien, the site recipe has been updated quite a few times since this video went up. Now I don’t use lentils in the recipe as I wanted to make it a bit more simple. Thanks for the heads up anyway, let me know if you have any other questions.

Haha yeah, you can throw everything in the processor, but you'll end up with uneven chunks. If you want a consistent fine crumb I recommend chopping first.
