They're small and packaged in the tin really neat and appetizing and not too fishy or anything. I like to eat em with a couple slices of buttered toast or by themselves with a little hot sauce.

I recently polished off a can of Beach Clif in mustard that I found in the back of my pantry with a best by date of 2006( it’s Oct2023) that looked better than these. They were actually pretty good. On a side note: There was also a can with a best by date of 2009; think I’ll send them to Matthew for review, since I already confirmed their viability.
chef here. looks to me like the liquid split during the canning process so the oil and water separated from each other.. mustard normally has the unique ability to make oil and water combine, thats why salad dressings have mustard but somehow it failed in that can in my opinion. looks ugly but nutritionally just fine.

As a person of partly Nordic heritage I greatly enjoy canned fish. I also enjoy pickled fish. Have you thought of doing pickled fish reviews? There's plenty of great variety. You don't have to go straight for the hard stuff rakvisk, hakarl, or suurstumming. Pickled herrings or matjes are easy to enjoy and deliciously fishy. The mustard sauce in cans is intended to be slightly bland rather than strongly hot and horseradishy. But you can get the stronger flavours if you shop around.
Yeah, i tried a few cans of their Kippers and they all tasted off. Crown prince sent me some coupons when i let them know, maybe will have better luck next time. Btw, I visited rainbowtomatoesgarden in PA and picked up some mackeral. I guess they hear your name quite a bit there 😂
Probably a mustard-oil mixture that ends up looking ugly. If you're going to do your own mustard/sardine-in-olive-oil segment, which I LIKE the idea of, please do the same with wasabi....whatcha think?
It looks like it was frozen and the different fats congealed out into its separate parts? It reminds me of when you make soup and you put it outside in the winter to make it congealed so you can scrape off the extra fat.
Hey Matty-Boi! Try making some Colmans hot mustard from the powder and having that with some kipper snacks or some smoky sardines! You won’t be dissatisfied I assure you.
Wow, just stumbled onto your channel and love it! Big fan of canned fish here. I have a memory of having canned sardines with their heads on when I was a kid but maybe I’m just imagining it. Never been able to find them in adulthood.
I noticed a manufacturer was selling sardines from Spain and Morrocco under the same brand name. We did a look and taste comparison. The Morroccan ones were well below par. Disappointing considering the fish were caught in the same Atlantic. The processing in Morocco is likely not up to standard. I purchased another Morrocan tin much later by mistake (I should have read the label more carefully) and the results were the same. Poor.
Not a fan of soybean oil or cottonseed oil. I'm spoiled by good olive oil. When I was a lad decades ago, I would haul the deens in mustard and deens in hot sauce to scout campouts and eat them. No one would even bother trying to steal them. They were cheap economical deens back then, in the 1970's a boy could get a tin for 50c or less. Don't recall the brand from back then, but they were probably in vegetable oil of some kind. I have enjoyed some Crown Prince deens in the past but I pretty much stick to KO, Nuri, and Brunswick these days. Thanks for the video Matthew!
Colman's mustard might get you where you want. They have a powdered form too that might work better than just bathing them in the prepared version, but I think the good ol' prepared will be good.
I get the Crown Prince One Layer Brisling Sardines in Mustard (no soybean oil and product of Scotland) and they are quite good. I avoid soybean oil like the plague as it generally signals poor quality.
I think you need a pressure cooker and tins and raw fish and MAKE your own Canned Fish :) That or have one of the many companies reviewed give you a "run at doing your own mix". But, I would bet just doing it yourself first would happen sooner. And if you do you own mustard, use brown/black, as heat really damages the flavour of yellow mustard.

I like a little mustard on a sardine when added at the time of eating, I find mustard in the can tends to overpower. That can looked a little suspect!

Well known fact that the rottenest fish gets canned with mustard and secondly tomatoes sauce. Kills the bad taste, sort of.

Try Colman's traditional english mustard on some deenz. It is a spicy mustard that has that "wasabi" like effect.
