Hi, Amy. I just love watching your videos. My grandparents had 14 children, and luckily, I grew up with them. They were still making babies after I was born. Now I am 50, my children are all out on their own and I am now cooking for only 2, It is horrible. Your prepping videos warm my heart.

back story- we were 10 at our largest. down to just 4 now. 6ft 2 14 yr old (#3 son)and little man. little man is cp/Autistic. I became disabled 4 yrs ago after a deadly infection and a severe allergic reaction to medications. today- I still cook this way. but it lasts us months now. it saves us so much money and on the many days I am physically unable to move daddy and #3 son can fix good meals quickly with prep we were able to do on a my good day. learning to cook this way has been a Godsend in our lives. takes so much stress out of our daily lives and out of our meager food budget. love your vids. gives me great ideas and reminds me of the lovely chaos our world was before.

Thank u, thank u, thank u, for showing me how to make homemade cream of chicken and cream of mushroom soups!! I love adding the soups to many recipes but all the preservatives always drove me nuts, now I can relax knowing it's fresh with only natural ingredients!! I am an empty nester but my adult children still come over for a home cooked meal occasionally, now i have a few nee recipes to try on them!! I love watching u and Jamerrill Stewart, in fact, it's because of a collaboration u did together with her for breakfast freezer meals that I found u in the first place!! Thank u Ms. Jamerrill!! My fav videos are when u cook with ur children and the one on ones u have with ur girls are priceless!! Thank u for also sharing ur faith, it comes from goodness and kindness and in appreciate that!! Take care of u and ur family and I'll keep watching!! (P.S. Urs and Greg's marriage is goals!! As i watched this episode, i got a bit distracted with the interruptions (dog barking, close the window, someone comes in, more barking, phone rings, and either the microwave went off or a backhoe was backing up outside, someone else comes in...). I’m sure you can buy one somewhere. Another hint. If you need a bigger mixing container, use a Sterilite storage container. We make our big batches of potato salad for events in one. Probably not optimal for hot food though. Thanks for sharing!

Hi Amy, Dee from Kentucky here, I have another Recipe to share.
Make homemade bone broth chicken stock, cook overnight in your turkey roaster.
Use 2 whole chickens, or chicken with bones. First chop the hidden veggies, pulverized in food processor- 3 onions- 2 carrots- 5 ribs celery, 1/4 cup garlic, 3 tbsp. parsely. Place chickens and pulverized veggies in the roaster. Add water to cover, add salt and pepper, bring to a boil, reduce heat to 250 and cook overnight. Next day, de-bone and shred the chicken and strain the broth. Store in freezer bags or containers and use in recipes, That seasoned stock is the difference between night and day, what a wonderful taste.
You may do the same process with beef bones and Browned beef stew meat or 2 browned chuck roasts for beef stock.
Try the homemade stock in soups, or freeze stock in ice cube trays and add to stir frys. We often shred the chicken, add broth, cook some Amish egg noodles in some of the broth, serve the chicken and noodles with mixed vegetables and a salad. Absolutely delicious.
p.s. I try and make a different flavor homemade soup and big huge tossed salad weekly and serve that before the main meal entree. I serve a canned fruit salad, ( I also add in apples, oranges, bananas) after the meal, as a dessert.
Helps to control the food budget and satisfy empty tummies. ❤️

you could use the bacon grease for your cream of mushroom soup (or something like it - chowder, mac'n'cheese, what have you) if you're using butter anyway. adds flavour without costing extra. i'm a big fan of letting nothing go to waste, as i'm certain you are too. the beacon grease also refrigartes well for any other time.

I can relate to your life style. I also have a large family. I also prepare lots of food in advance but i try to be more health concious. I am a chef and did catering for many years. I just wanted to tell you that i think your food would really taste just as nice if you reduced the amout of sour cream and cheese you use. Also i wanted to give you a tip. I make tones of meat balls. Just mixing ground beef, bread crumbs, eggs and spices. Then i boil them and freeze in ziplock bags. Then you can pair them with tomato sauce and spaghetti, mushroom sauce with rice and a side of broccoli or onion sauce with mashed potatoes and green beans. Or any sauce you like really.
Countinue your good work. It's nice to see that I'm not the only one with a crazy lifestyle; )

DLR Young. Saffron is much more expensive versus turmeric. That's why ppl use turmeric over saffron. But be careful not to use too much Bec it can overpower the dish. also, it stains ur fingers if touching w hands.

The yellow rice is saffron. There is lots of recipes that you can do. ou need to sit down and organized your plans so you can create a menu plan for the week. You can do ground beef enchiladas, refried beans and tossed salad, Buttermilk fried chicken, mash potatoes and country gravy, chicken strips with twice bake potatoes, barbecue chicken, corn casserole and broccoli, honey mustard chicken tenders and parmesan potato wedges, grilled chicken and panzanella salad, chicken breast and pasta carbonara.

Do you guys ever make sloppy joes? Thats one of our favorites. You can make a tortilla strip soup and use those taco shells crushed up in it along with cheese. Something we made growing up was what my grandma callled a tostada stack casserole. You could use taco shells broken up on the bottom instead of tortilla chips, then spread out warmed up/thinned out with a bit of water beans, tip with some browned ground beef, cheese and olives, and bake @ 350 for 30 minutes or until everything is heated through and the cheese is melted. Then pull it out and spread a layer of cream cheese, sprinkle with diced tomatoes and green onion and cilantro if you like it. Then we also liked to put slices of avocado and you just serve up a square, and its sooo good!

Amy, if you put your seasoning in at the beginning with your butter and flour before you add the onion/mushrooms you will find that 1. You cook out the flour quicker and 2. Your seasonings intensify with the heat of the pan which will reduce cook time and a lot of excess salt ( which all store brought seasonings have).
    Just a helpful hint 😉

Yay, ran out to Aldis, they had the smaller pan with a lid and a large saute pan with a lid. Moment of truth was it really the thin pan or the bad cook? We will see. I made pinto beans, chili, yogurt and granola bars. Then it dawned on me, four adults and three children moved out two weeks ago, cooking is going to be EASY. I don't really have to do a whole lot of prep work. Made a Walmart order went from 400-600 a month to 200.00. I only have me, my grandson and 5 little kids to feed now. Yay life is getting easier, God heard my weary prayer and answered. Love you and all of your wonderful family. Thanks for motivating me to realize my great blessings of not having such a full plate. I am truely thankful. Praying it was thin pans not bad a bad cook.

I learned how to make pizza dough a new way and it's absolutely awesome makes the best pizza dough cinnamon rolls Bagels all is one. It's only two ingredients 2 cups of self rising flour to 1 cup of Greek yogurt mix it until it gets Shaggy and then knead until it's smooth using a sparing amount of extra flour so it's not sticky. You can let it sit for just a little bit and then roll it out out and make whatever you want.
