I agree. I am disabled (have been for 25+ years) and my parents who are mid 70s are my caregivers. I give them (asked for) ideas all the time. They often ask me what I want or what we could do. Currently we are on a monthly rotating meal plan. I love getting fresh ideas!
You are right about this. I make freezer meals for my family and also make some for my elderly parents. Amy's freezer meal videos give me more ideas to choose from as coming up with more meals is sometimes a challenge. I am sure your family appreciates it, Linda.
Amy...You can cut the tip off a ziplock bag, use it like a pastry bag and fill your aldenti pasta. It saves time and you can do the same in filling shells.
I do this, too! And I use the same technique for deviled eggs when I take them to potluck family meals. I bring the egg white(cups) separate from the filling, and then pipe them on a platter when we arrive. That way they're not squished in the transport.

Her and her husband and 2 younger children were returning from an early Valentines dinner on Feb 13. They were hit by a drunk driver. Her husband was instantly killed. She was severely injured and the children injured. There is a go fund me page started by her older son. Any donation from anyone will be very helpful. She has been in 3 different hospitals. Her sister is caring for the children. Prayers for the whole family.
Thank you so much for these recipes. They all sound wonderful. I don't have a large family to cook for, but my husband and I like to take long RV trips (a month at a time.) Before we leave I like to fill the freezer in our RV with meals like this so I spend very little time cooking.

YAY Part 2!! Love, Love. Love it! That was not only so much fun, it was also a very inspiring and learning experience. Biggest learning point for me is that all of those casserole pans take up too much space in the freezer. So make all of the components and bag them flat instead. Save all of the pasta (except for stuffed shells), rice or even potatoes to add later. Then you can fit a lot more meals in your freezer. That to me is pure Gold! Brilliant- yet again! Thank you so much Amy! 65! WOW. Does that include the few things you made in Part 1? So great. If you can do this, the rest of us can certainly feed our family at home.
Hi Amy, another good, easy, chicken meal to make and freeze is “bruschetta chicken”. Place cut up chicken in bottom of pan, sprinkle with cheese of your choice, mix a box of stuffing with one can of diced tomatoes and put over chicken. Bake for 30-35 minutes at 350. Also your family may like scalloped potatoes. Lots of different versions on the web. We love them!
You could do lasagna noodles that are parcooked to be soft enough to roll up . That way you could roll up your filling in it and avoid the hassle of stuffing manicotti
As far as the manicotti, you can always cook the pasta then cut them in half....also with lasagna pasta, cook them then cut them in half and place your meat mixture on them and roll them, then lay them in a casserole pan, like small burritos, and put sauce & cheese on top and bake.... both pastas are great that way! Also meatballs work great with the cut lasagna pasta wrapped around them.
I like how you use what you have and it works. I started doing the same thing and I like just going to the freezer and grabbing something for dinner. I love when you do these freezer meals it gives me great ideas. Thank you for sharing. Many blessings for you.

That was SO much work to do in one day! Amy, it hurts my frugal heart to see you throw out the tops of all your bell peppers. If you don't like to chop them, make a gallon freezer bag of veggie scraps and cook up your own veggie stock for soups!
ANOTHER GREAT TIP I'VE SEEN . Instead of those aluminum pans freeze the uncooked food by first putting plastic wrap in the bottom of the aluminum pan, once its frozen, take it out of the alumunium pan put in a gal or 2 gal freezer bag👍
I just did gr.turkey meatloaf and uncased hot Italian sausages smooshed it together and added all the other meatloaf ingredients and it came out great...slow cooker....SO GOOD
Oh I love this set up so much so easy to follow and do, I kind of always thought freezer meals and large prepping was for larger family's but its finely hit me that anyone can do this, I have 4 in my family and I am going to do this, I want to have meals ready in the freezer for quick meals. Good morning Amy did you know that you should use a plastic cutting board for meat and save your wood one for veggies and the reason being is meat juices will seep into the wood and no matter how much you wash it or will not come out just a little fact I learned from taking a cooking class 😃😃

Amy a way you can stuff the manicotti easier with that filling. Use some more of the gravy in your mixture. Put it in a gallon size bag. Then clip off a corner and squeeze it in the manicotti. You can also buy a piping bag with a good tip thats washable. Not expensive and you can use it over and over. Thank you for the great meal options. God bless you. ✝️
Amy.... For the manicotti, my Sicilian mother in law, she uses a baby spoon, not a teaspoon but a spoon used to feed babies. The spoon is smaller and longer so you can get more in the shell.

If you don’t have a press and seal machine when freezing your food 🍱 just stick a straw in the corner of your freezer bag zip bag closed up to straw has tight has possible then press down on bag while sucking out the air from the straw then quickly remove straw and seal up the corner of your bag done ! . I thought wow save time ! save money ! . Because those machines cost so much to buy . The lady says it works great 👍 . I’am trying it . Why not ? . Didn’t know if you knew . I printed all of the recipes for my binder 😊❤ I do my grocery pickup every 2 weeks and I have added what I don't already have to make these recipes. I will be doing it on a smaller scale but I know my husband will love them all 😊❤

I hate filling pasta tubes too, or I did until our local italian restaurant told me their secret - use a pastry bag with a wide nozzle. Make sure there are no big lumps of filling, fill the bag and use that to fill the tubes. Total game changer! :)
My grandma used to say, "these kids, they'll eat me out of house and home." ;) Came to mind when you talked about the kids taking the pierogi's for snacks.
@@gailcroslin1647 Yes the hunger, particularly in teenage years is no joke. I am 48 now and (perhaps TMI) going through menopause. I have to, for about the first time in my life, snack between meals to keep my pants from falling down. LOL. I am losing weight rather than putting it on. Odd how we're all different.
For the first recipe, I recommend that if your family isn't familiar with the flavor of sesame seed oil, you go very lightly with it the first time you make this recipe! It is a very strong flavor and to me it seems to get stronger when it is frozen! Just a suggestion!

When I'm filling manicotti I use a piping bag. I don't pre-cook it. Just use extra liquid.

I printed all of the recipes for my binder 😊❤ I do my grocery pickup every 2 weeks and I have added what I don't already have to make these recipes. I will be doing it on a smaller scale but I know my husband will love them all 😊❤

Amy I woke up at 6: 40 today. I got my package I'm so relieved. UPS was finally able to deliver it. I'm waiting for my dad to pick me up to go to lunch, a drive up diner type thing. I took a shower, I'm feeling good.

I hate filling pasta tubes too, or I did until our local italian restaurant told me their secret - use a pastry bag with a wide nozzle. Make sure there are no big lumps of filling, fill the bag and use that to fill the tubes. Total game changer! :)
My grandma used to say, "these kids, they'll eat me out of house and home." ;) Came to mind when you talked about the kids taking the pierogi's for snacks.
I am the grandma of 8 and I say the same thing! I have a 15 and 17 yr old boy that manages to eat more than the other 6 together!
@@gailcroslin1647 Yes the hunger, particularly in teenage years is no joke. I am 48 now and (perhaps TMI) going through menopause. I have to, for about the first time in my life, snack between meals to keep my pants from falling down. LOL. I am losing weight rather than putting it on. Odd how we're all different.
Homemade chicken and rice soup is one of favorites. Great use when you have a surplus of chicken
For the first recipe, I recommend that if your family isn't familiar with the flavor of sesame seed oil, you go very lightly with it the first time you make this recipe! It is a very strong flavor and to me it seems to get stronger when it is frozen! Just a suggestion!
